Bun Bo Hue I do not eat pork blood or pork loaf, so I substituted them with more tendon and beef meatballs. Because of that, I cannot really comment on how the pork tasted. The broth was okay but a little lacking in flavor. After I asked for shrimp paste, it tasted much better.
