    Love love loved this spot. I was on the hunt for a place with great food, great coffee, and a great spot to get some work done. Check, check, and check, It's more of a slightly fancy sit down restaurant than I anticipated, but you know what? Kinda nice to feel fancy every now and again. Not everything has to be in the name of speed. I kicked things off with an espresso tonic which was perfect. Then, to eat. can't tell you how good this casual breakfast sandwich was. I was starving, and it landed perfectly. House made sausage, egg, aioli, brioche. Just so much goodness in one sandwich. Then upstairs, down to business. Beautiful place to take calls, to work quietly, or meet up. They have great, clean, private restrooms. They also have a conference room I saw people popping into. Just perfect for what I needed.. I may even go out of my way to stay at this hotel next time just to be connected to this!

    This restaurant is in the most beautiful building and the inside is gorgeous too. We stopped in for breakfast and really enjoyed our toast and the matcha was great too. Service was quick and attentive. I would come back to try more if I'm ever in the area.

    Bison dinner dish: incredible. The chef/cooks really know what they're doing with this one. My personal preference would have been a little more salt, but it was a good highlight of bison flavor, perfectly medium rare, not too much horseradish (a little more than I like, but my partner prolly would have said not enough), and THE PARSNIP MASH WAS SO GOOD???? It was like a buttery fluffy mashed potato, but just a drizzle when I wanted SCOOPS directly into MY FACE. The only better version of this dish I've had so far is at Owamni in Minneapolis. This dish was an appropriate amount for one person. You could share it with another dish (but you won't want to share it). Butternut squash toast: A bitteen disappointed by this as a follow-up to bison steak. The roasted butternut squash puree was cold, more like pumpkin puree out of the can. Overall pretty mid and mild on flavors. Even the crumble needed more sugar, it almosted tasted like plain flour with some cinnamon. Needed more sugar, more salt, and make it warm (maybe add an egg with chili oil or something... Or just maple syrup?? Or more of a thick and sweet elderberry jam?) Matcha latte was v cute and fine, very mild again, but actually like too much milk to matcha ratio for me personally, but I also really go ham when I make them. Bacon was just okay, pretty standard. Savory beignets: Okay so the outside is like a beignet, then you bite into it and it LOOKS and FEELS almost like a falafel, but then you taste the inside and you think, spanikopita??? Anyway, I liked it. Nice crunch on the outside, soft inside. Definitely shareable, could have just eaten one. The yogurt sauce is flavorful but like highest medium point spicey for me. The cheesiness and yogurt help tame it. Trout dip and chips: yo those housemade chips are p good tho. Not TOO thick or too salty, just perfect. I don't usually just eat chips but I took em hommeeeee to Sacramento they're going in the convection oven babyyyyyy. The trout was also good, not too salty, nice with dill, not too dissimilar from smoked salmon if you've never had smoked trout. It's a little lighter, leaner, more solids/chunkier (tho I've also had whipped trout spreads). Service is very nice, friendly, attentive. Nice outdoor seating too, tho a little dusty outside (also super weird to hear recorded bird sounds in the trees, which highlights the absence of real birds... That is, if you believe birds are real...).

    The eggs benedict was so good! My husband enjoyed the farmers omelette as well. Their coffee is made at the coffee shop in the hotel and it's very good as well.

    I'm not even exaggerating when I say Pasque has the best iced americano I've ever had. Something about the espresso hit the spot just right. This spot was tricky for me to find for some reason as a tourist, but once I found it, I was promptly seated and served. I was in a bit of a rush and they took care of me quickly. The food is freshly prepared, and like I said, don't miss out on those one of a kind espresso beans.

    The interior was a nice spot to hang out and take a breather in if you're ever in the area. Service was very attentive. I believe this is their signature lunch burger, which was very disappointing. The texture was good but the taste was nothing but pure sodium. I wish there was more of dimensional taste with all the topping. It was like the cheese, caramelized onion was all grilled in the same spot. I wasnt sure if the caramelized onion supposed to taste like nothing or pure sodium juice. It came with a nice little arugula salad with champagne vinaigrette I believe. But again, that too was pure salt. Water was the best beverage in this meal.

    Apparently this whole hotel can do no wrong? Beyond the lovely stay, the restaurants are delightful. I enjoyed Pasque before checking out on a Tuesday afternoon. I was told the restaurant gets its name from the Pasque wildflower, which checks out because this place gives all of the warming, calming, nature-y vibes. Love the seating with the curved booths, the sky high ceilings, the decor, and even the plate ware. All of it is so well done. They have seperate breakfast, lunch, and dinner menus. As we were in mid-day we had the pleasure of enjoying the lunchy options. I opted for the farm salad and can I just say, this was an A+! It's not that often that I order salads when dining out but our sweet server recommended it and she was right. The dill and moon hill asiago cheese were the best of flavors. It had plenty of microgreens too which I love, and I added chicken Very refreshing. Safe to say I didn't leave a single bite behind. Also had a matcha (delish), and my friend enjoyed his chicken salad sandwich on toasted sourdough. I'd probably just come back for the vibes, but would certainly like to try other menu items too!

    Pasque is a type of early spring wildflower, which fits the hotel's theme nicely. The host was very welcoming and seated us immediately. We were a party of four and had a table near the window. Based on the waiter's recommendation, we ordered two small starters, two appetizers, and two entrées to share. Dinner took about two hours, which was refreshing--most Denver restaurants now limit how long you can stay. The service was a bit disjointed. Food and drinks arrived unevenly, and there were stretches where we waited for the next dish to come out. However, this didn't bother us much; overall, it was a good experience. The savory beignets were decent, though I'd consider these more like falafel. I expected a square, light, puffy, deep-fried pastry filled with spinach, artichoke, Fontina cheese, Espelette pepper, and honey. Instead, it was just a deep-fried ball--making it my least favorite dish. After the beignets, we tried the green tomatoes and peas. This dish was perfect for spring, offering bright, fresh, and sweet flavors with a mild, slightly floral undertone. The mostarda added a sweet and spicy element to the plate. I'd never have imagined pairing hamachi with strawberries, but it worked surprisingly well with the gochujang and rhubarb. The beef tartare, with mushrooms and black garlic, was amazing. However, I found the thin slices of sourdough a bit stingy--I've had thicker crackers elsewhere. The pan-roasted salmon was cooked perfectly to a medium temperature. This dish is on my must-eat-again list, especially with asparagus, spring vegetables, and almonds. But my absolute favorite was the Rock River bison loin. It was rich and sweet, with clean flavors that paired beautifully with the chanterelle mushrooms. The blueberries added a sweet and tart component, complemented by the mild onion flavor of the leek. I'd go back!

    Pasque is a new restaurant on the ground floor of the stunning Populus Hotel. It's a beautifully designed space utilizing reclaimed and recycled materials. I met a friend here from out of town and our experience was flawless! They are open for breakfast, lunch, and dinner. The menu has some starters, mains, sandwiches, and salads. For a new hotel restaurant, I couldn't have asked for more from my dining experience. SAVORY BEIGNET // Spinach, Artichoke, Fontina, Espelette Pepper, Honey. These weren't on my 2024 bingo card, but holy shit! The texture of these were impeccable. Ridiculously crispy on the outside and tender on the inside. Definitely order these for the table! PORCHETTA SANDWICH // Griddled Sourdough, Roasted Pork, Provolone, Kale, Aioli, Green Salad. There are lots of great places to eat sandwiches in Denver, and I wouldn't have expected to find a GREAT one here. But damnit, this sandwich was executed to perfection. You won't find porchetta on too many menus, and the meat was delicious. Pair that with PERFECTLY TOASTED sourdough (from Rebel Bread) and I was in heaven. Really really glad I had the pleasure of dining here at Pasque. For a refined lunch with table service in a trendy setting, I can't think of a more ideal place to eat for a weekday lunch. I'm sure dinner service is just as special!

    Ambiance and decor are beautiful, service is great! Food is good, with a seafood and fish forward menu. The lavender latte was delicious, and I highly recommend the lunch trout dish with delicious leek sauce.

    I came here for a Tasting Collective dinner, so it wasn't the typical experience. The restaurant is beautiful. It was a prix fixe menu and overall good. I loved the presentation of my cocktail. I did have to wait a long time for a glass of wine I ordered, but they were very busy.

    Chic, Stylish, Fashionable, Swank, Flamboyant, Ostentatious. There was not a $$$$ spared on Pasque, flooring to the decore in windows; including full glass entrance, winding stairwell to sip coffee from the Barrister while waiting for your dinning seat or time off, relish kick back in more than urbanity. I met, in passing, a very Stylish gentleman, who is a realtor developer and "Part of Pasque," as he stated, he did defined the "Kick-Back Luxury! Aspen and I were escorted to our small low seated marble table, no expense was dispensed with in building and design of Pasque, including the tasty morsels of food. I had the "Savory Beignet" which are normally sweet, these were Crips (as they ought to be) on the outside, with a melting Spinach Artichoke Fontina. Soon as the Beignet touched my watering tongue, the moment was a melting Organism, including the slightly peppered honey sauce! Ingenious to perfection, H/T to the Chefs. (I am French!) My waitress was Charming with a beautiful smile which never left her face, served in appropriate timing, although they were short staffed; cannot complain! Valet parking, if one chooses, or across the street parking lot, one fee $18.00!!!! Denver required a true Fashion Statement for dinning with delicious scrumptious food (building up to NYC/Miami Stylish savour). The Building in itself is representative of what any person will find inside, from the entrance doubled full standing window auto-swing doors, through the sweeping stairwell. Expect a short wait, (have reservations !!!) your pleasurable dinning experience is worth every moment of your time. Perfect before or after a DCPA or any event. And remember, you are paying for all of the "Chi Chi" yet not over scaled! $$-$$$ per person.

    We came here for dinner on a Thursday night, the place was packed. Love seeing new places take off, al though by 8:30 it was quite empty. Valet was complimentary, on a snowy night what a treat. The open space and windows give it a nice atmosphere and great light even on a dark, winter night. The bar is also a great spot, and I would definitely have dinner there. The service was good, but a bit off once the meal got going. It started out fast and then was very slow at some point. Overall, our waitress checked in, the plates were changed for each dish, wine was flowing. I think the kitchen just is figuring things out. The food: SAVORY BEIGNET were more like croquets but were good. The outside crispy, the inside tender and the sauce with kick was a nice surprise. VEGETABLE TARTLET was a disaster and we sent it back. It was served cold but it really didn't come together. The filling was so watery it just ran out when you cut into it, the raw vegetables on top didn't work. Poor concept and execution. STONINGTON MAINE LOBSTER was delicious, light and tender. Great dish and a pretty generous portion for sharing. RYE TAGLIATELLE had great flavour and could be a dinner sized portion for one. It did come out a bit luke warm, and the meat could have been better incorporated, it was too chunky for an elegant dish. ALASKAN HALIBUT fell a little flat for me. The fish was tender and moist, but somehow the dish came out bland and didn't live up to the description. While mushrooms can be a nice pairing, it didn't work. We had cocktails and wine and ended up hanging upstairs in the lounge area for a bit. Would be nice to have a bartender there or service for drinks. Great spot for date nights or small adult groups for dinner. PLEASE UPDATE YOUR DESSERT MENU, IT'S NOT ACCURATE!!!

Location (4 stars) This restaurant is downtown near the convention center. parking is pricy if you valet park at the hotel. Last year it was around $40. Parking in the lot across the street for $25 dollars Easter Sunday. If you use a walker, I would not recommend the parking lot across the street. Food (3 Stars) The Thanksgiving buffet is the best one. I would rate that buffet a (4). The Christmas and Easter buffet are pretty low key. There is a carving station (ham and prime rib). There is an omelet station. Dessert bar is decorative. Cheesecake was delicious. The warming station with potatoes, sausage etc. leaves much to be desired. The charcuterie station is sparse. They offer unlimited mimosas for an additional $25. Service (5 stars) Staff are extremely friendly. Cleanliness (2 stars) My only complaint, I saw a tabletop being cleaned off with a rag used to clean the chairs and then under the table on the floor and on to the next tabletop. I'm just a little picky about that. Especially since folks these days go commando and wear short attire, and you know their parts are on the chair and now spread to tabletops. Wiping up the crumbs off the floor with same rag simply through me over the edge. Atmosphere (4 stars) Spacious uncrowded environment. Nice decor. Bright with large windows.

    During the last few Denver Restaurant Week events, I've tried to take the offerings as an…read moreopportunity to sample restaurants that I haven't tried, or otherwise may not try, and see if I can add to my list of favorites. I saw Former Saint on CBS News, and the menu and food looked incredible. In particular, that white chocolate blueberry cheesecake was something I know my hubby would look forward to all week! I loved the idea of local food and fresh homemade dishes. Sounds healthy, after a week of potential over-indulgence at other restaurant week venues. An additional bonus was that it is located right near the Denver Convention Center and the Performing Arts Center. This has become a dry spot for fine dining, with even the choices on Larimer Square growing more thin, giving rise to the inability to get reservations at favorites like Tamayo and Rioja prior to a show. I go to performances frequently with friends, and despite my rule to avoid hotel restaurants (Former Saint is in the Hyatt Regency), I thought I'd scope out Former Saint as a place to take my friends before the next symphony or Children's Chorale or ballet or broadway performance. I must say, the jury is still out. Former Saint was a Jekyll and Hyde of courses. Parking was not difficult (Yay, maybe I can park here prior to my shows, if I grab a bite first). There is a large garage, and the promise of validation from the restaurant. The ambiance of the restaurant is typical hotel restaurant. Booths, tables, old and a bit drab. Except for the bar. Oh, my! The bar has this BEAUTIFUL copper creation above it, adding so much industrial character to the space! I was in awe looking at it, as it appeared to bring craft suds to the bartender's taps. I didn't ask how it worked, as it wasn't clear how the beer separation and dispensing worked, but it was a great centerpiece and spectacle for the place. I do wish I had investigated more about this architectural marvel, and will do so if I return. For restaurant week, my husband chose the Lobster Ravioli, Ribeye, and blueberry cheesecake (as predicted). I chose the Gotham salad, roasted chicken, and key lime tart. The lobster ravioli was nice; my husband was surprised that it was a toasted ravioli, but enjoyed it. My salad was full of beautiful greens, pears, walnuts, and feta. No scrimping here! The dressing was light and sweet/sour. The pears were a bit unripe and crisp, to the point that I was having trouble identifying exactly what fruit I was eating, but other than that, the salad was beautiful, healthy, and ample. My husband's ribeye steak was a nice cut, done to his liking. Slivered hash browns were underneath with a nice green chimichurri on top and some sliced Fresnos adding a welcome kick to the dish. My chicken was delightful. 1/2 chicken on the bone, seasoned nicely, and with a pan sauce. The breast was super-tender and delicious. It came atop cheesy grits, which was a yummy substitute for a mashed potato. I also was served side salad of curly lettuce and fennel. I probably didn't need more salad, but I was glad to have the healthy side on my plate. I will say that this salad was over-seasoned. The chicken and grits were great, but the salad too salty. My husband ordered a glass of J. Lohr Cabernet, which was a very nice find on the wine list, as far as a pairing for his ribeye. That said, the glass cost $30! A bit much, I might say. The real detractor, unfortunately, was dessert. The blueberry cheesecake looked nothing like the beautiful creamy white cheesecake accented throughout by purple blueberries, which I saw on the CBS News clip. My husband was served a very small solid purple slice, overcome with whipped cream dollops. This cheesecake had been uncovered in the fridge too long, with sort of a skin on it. My husband ate almost none of it. My key lime tart was similarly over-adorned with whipped cream, although I had some nice raspberries on top. The tart also seemed overexposed to the cool air, with the thickening of a skin on top. It was a very disappointing way to end a nice meal, and belied the healthy, homemade, craft theme. High points of this experience include the well-crafted and healthy entrees, the fact that we could see the convention center right outside our window (i.e., the location is perfect for pre-event or -theater), the $3.00 validated parking fee, and that beautiful copper tap system. Will the pros outweigh the cons? Will we be back with friends? Time will tell.

Laid back vibe and welcoming staff. Nothing pretentious at all. The bartenders were knowledgeable and gave great suggestions. Always stayed on top of my drinks. The thing I like most about Death & Co is the way the categorize their drinks: Light and playful, bright and confident, elegant and timeless, boozy and honest, and rich and comforting. I had the aqua profunda (cognac, St. George basil eau di vie, lillet rose, strawberry, lime, and absinthe). I also had the eight limb daiquiri (rum, Canada aguardiente, Thai tea cordial, lime leaf, and Maraschino). The Blood Oath (mezcal, Vecchio del capo, Calabrian chili amaro, St. Germain Elderflower, lavender, honey, lemon). All were complex and delicious. You could pick out every flavor, yet everything melded together so well. They also have some basic bar food and snacks, but somewhat elevated. I had the D&C Burger and it was juicy, rich, and had some great accompanying fries. My go to is the Disco Tiger which I was very happy to find out they had at this location too! Our server was extremely knowledgeable about every single cocktail on the menu and gave us great recommendations. I give this location a 4 star rating because the food didn't live up to standard of their drinks. The steak tartare and oysters were good. The fried chicken was not as good as the one I've had in LA, not even close. The spinach artichoke dip was dry and flavorless.
