The food was mediocre at best. Not a lot of flavor. Some of the dishes had to be sent back due to a lack of kitchen attention. Nice ambiance and friendly staff. One and done, probably won't return.

Pablo's: A Welcome Addition to Heath's Tex-Mex Scene I've had the pleasure of dining at Pablo's twice now, and it's refreshing to finally have quality Tex-Mex in Heath. This spot, although located where another Tex-Mex place used to be, has seen a considerable makeover. On my first visit, I snagged a high-top seat at the bar. Our server was outstanding--prompt and attentive. I tried the biscuit enchiladas, and they were absolutely delicious. This experience was definitely a solid 5 out of 5 stars. However, my second visit (on a Thursday evening around 6 pm) was a mixed bag. Our server seemed overwhelmed and quite forgetful. We waited about 20 minutes for our drinks, which was noticeably long especially since the place was quite warm. When we ordered queso with brisket, the brisket was missing initially and came in later without any chips. I decided to try "the Pablo" dish. It was decent--nothing spectacular but not bad either. On the bright side, I had the chance to meet Pablo in person, and he was genuinely pleasant. All in all, I'm optimistic about Pablo's and look forward to giving it another try soon.

Pablo's Woody Martin cocktail. So delicious!

I definitely recommend this place! It's great for the Heath area. Ambiance is great. Great energy and fun atmosphere. Staff is friendly and attentive. Food is pretty good for Tex Mex. The Woody Martin cocktail is delicious and unique. My husband loves the brisket enchiladas. I wish there was more on the kids menu, but we were able to order tacos off the regular menu. Only request for all of the TexMex restaurants in Heath: put a giant wet burrito on the menu, the kind from California (I know, I know it's TexMex) but if anyone offered a regular wet burrito as shown below... I'd be so happy.

This is such a great place. We just moved to the are and love Mexican food. I had the Grilled Avocado with Brisket which was amazing. My husband had the chicken enchiladas with the chipotle wine sauce. Definitely visit this place!

Pablo's offers tasty Tex-Mex in a cool, casual atmosphere. Also it is super convenient for Heath residents.

A week later and I am still thinking about the delicious food and fantastic service! We didn't wait…read moresuper long for a table and the hosts were great. We took my dad to dinner and he complained that it was a little loud, but felt like we sat right under a speaker. I explained to him that it was part of the "vibe". Other than the volume making it difficult to hear, everything was fantastic. We probably could have asked to sit on the heated patio. The chips were warm and fresh and came with both red and green salsa, and both were super tasty. My husband asked if I could make salsa like that at home! We ordered drinks and they came quickly. I appreciated the quality of the drinks especially since we mostly ordered from their drink menu. We ordered "The Good Guac" to start and our server made sure that it wasn't too spicy or anything for my dad. I thought that was very thoughtful that she asked if how it came was ok. For food we ordered street tacos, Baja fish tacos and the parillada en fuego. The food runner seemed confused and brought us another dish (maybe the Verde molcajete) but with the loud music the message that we didn't order it was lost in translation. My husband thought maybe it was what he ordered and started in. Because our server came to check on us so quickly, she caught the mistake right away. She apologized profusely and said they were bringing what we ordered. They allowed us to keep the dish, and no sooner did we have a few bites of the deliciousness the correct food came out. They checked on us quickly, apologized profusely, brought the correct food immediately, let us keep the other food, sent another manager to apologize and finally followed up with coupons to return after making sure we were satisfied with how they handled it. I understand humans make mistakes, so I feel like the recovery or response is what is important. This is the type of amazing service that will keep us coming back. We were actually happy with the mistake as we were able to try another dish we likely wouldn't have ordered (but ended up being our favorite thing to eat). The ambiance was fun, parking was easy, the wait was reasonable, the service was FANTASTIC, the food was delicious and food/drinks were made with quality ingredients. We'll be back!

Though they add cool lighting, which helps. Food, well I wish I could give it five stars, but my second visit confirmed my feelings about the food. It's super spicy, and the portions for the price are crazy small. Don't count on sharing. So, if you can go during a happy hour give it a try. Otherwise, there are better places for Mexican food.

(We had one person in our party not receive their dinner due to a misunderstanding but they handled it well.) The food : The honey glazed salmon was cooked beautifully, and so was the broccolini. Seasoning was well balanced. BUT the rice underneath it was a miss. It was having an identity crisis. Not exactly sure what they were aiming for: Spanish rice ? Mexican rice ? Not a risotto, but certainly mush. The dish could do without this element. The pizza : the crust was more bread than crust. The sauce was good and the cup pepperoni is our favorite pepperoni. If you like a doughy bread type pizza you may like this. We like ours thinner and crispier with a chewy crust. The crust was bland. The Steak frites: order it! Best dish of the night. I would have ordered mine medium rare but I tried my husband's order which was more well done and it was still soft as flavorful. Next time I'm ordering my own and not sharing. The wine: we had a nice bottle of the Chenin blanc. It was aromatic, light and crisp. Everything I expected from a Chenin blanc. Amazing on a hot spring/summer night. They do have a good wine list that won't break the bank! Ambiance: I'm a fan! Dark and moody without being too dark and moody. They had live music and although a little loud for conversation if you're in the mood for a nice night out and don't want to drive to mesquite/dallas this is the place.

Since we were going to the show, why not go for dinner? I mean we have never been. Love that you can book reservations online. Super easy to get through the gate and it has amazing views. We were greeted by the host who was so kind. The place was super busy, I assume due to the show. So, we had to wait about 10 minutes. Table right in the middle of action... 1 min... 2 min... 7 minutes no greeting nothing and a woman walks by and says she will be right us. Cool. Thanks for letting us know. Walks past us 4 more times and nothing. The good thing is clearly someone else noticed and brought us water and said she was helping while the server got caught up. Okay. Everything will be OK. Whole ordering our drinks the server took over. Ordered drinks. App and 2 entrees. Then she was gone. 30 minutes after seating... nothing. Not even drinks yet. 32 minutes... she brings my husband's can of beer. No glass. No manhatten. She says they are working on mine. After 32 minutes (at least 20 minutes after ordering our drink)... can we have a glass? 5+ minutes later she brings me my manhattan... in a wine glass? Before I smell it I ask if its a manhattan because it looked like wine (damn good pour). Her response... I don't know. Never had one before. And still no glass. A. The Manhattan was fabulous and a ridiculously amazing pour. And for the cost... damn. Thats amazing. We decided she never rang in our drinks. Its the only thing that makes sense. It had really quieted down and the bartenders were working hard. And thats fine. But own it. Another 40 minutes and she stopped by once. Said our food was coming. But honestly haven't had a server who seemed to care less about her table in quite a while. Food came about 45 minutes after ordering. We ordered the Philly egg rolls... flavor was awesome. But they were cold. Clearly they had been sitting... for a while. Literally the cheese had melted onto each other and cooled. The entrees came at the same time. Smash burger and chicken fried chicken. Both honestly really good. The mashed potatoes were cold though... not sure if its because they werent kept warm in the prep station or if our plates just died waiting on server. Flavors were good though, including the gravy and fries. Good seasoning. We asked for ranch. Can you believe she never brought it? Nope us either. Seriously. The service was the worst we had in a while. It seemed exlusive to our table/server. I finally got her name at the end... Leandra. I am not trying to put her on blast everyone has a bad night. When my husband asked about the ranch. She said oh I forgot that too.. no apologies for that or the entire night. I said well it has been a rough night... she said yep. Here's the check. We are super nice... lots of grace... but this service made me almost want to not return. But... this is a small business trying to create something for our community. So im going to return oncs more and score is based on potential. But please owners.... staff is hard to come by, and maybe it was a rough night... but no one will survive if 30 minutes with not even drinks and cold food is acceptable. Its a beautiful space, flavorful food and great energy im very hopeful.

Brick and Bones Backyard is a blue house on the corner of Main St. in Rowlett, Tx, that has been transformed into something magical. This Mexican-Inspired "chicken shop" is offering fried & rotisserie chicken, classic cocktails, and live music in a rustic setting. The menu is diverse and offering all things chicken that is brined 24 hours, fried and can be order breaded or naked( for the gluten-free in you). They also have rotisserie chicken, tenders, sandwiches, salads, bowls and wings, along with unique sides. Poblano mashed potatoes, habanero mac n cheese, mexican corn, etc... often garnished with fresh radish and cilantro around out the menu, with top notch service to boot. Mi marido ordered the breaded fried chicken, mexican corn and poblano mashed potatoes and gravy. The chicken was well seasoned with a great crunch. The potatoes had good flavor, but were barely warm. I can imagine their greatness heated. The mexican corn on the other hand was the real elote deal! The fresh snap of sweet corn, dosed with cotija cheese and spices lives up to the hype! Sweet, spicy, savory, it hit all the flavor profiles. I had the naked chicken with an order crinkle fries(faves) which was greatly appreciated for it's gluten-freeness and flavor. However, it was abit overcooked. Which left it thready and a little dry. The sauce that accompanied it, was needed, but shouldn't have been, while the fries were fresh, but undercooked. The concept and flavors make Brick & Bone standout on the chicken front. Better execution can make it a cut above the rest. Check It Out!

It's never felt like a place that values new faces or fresh energy, and that's a missed opportunity. As for karaoke nights, it's no secret there's an inner circle. If you're not part of it, good luck. Despite signing up early and showing up ready to contribute to the night, I've consistently been pushed back or overlooked. It's hard to ignore when the same familiar faces keep rotating through while others wait endlessly. The karaoke host (yes, you know who you are) makes it clear who's in and who's out. If you're confident, talented, or don't "fit the clique," don't expect fair treatment. Some people protect their spotlight at the expense of others -- and that's exactly what happens here. It's unfortunate, because karaoke should be about building a vibe, not gatekeeping one. It's no wonder the place was dead last Saturday. Places that don't grow community eventually lose it. I'm speaking up not out of hate, but because I believe people deserve to know the truth -- and Rockwall deserves better than what this spot currently offers.
