We stopped by Nuodle and wow, what an amazing experience! I ordered the Classic Beef Soup and my partner got the Short Rib Soup, and both were absolutely incredible. The short rib was fall-off-the-bone tender and packed with so much rich flavor, it was honestly unforgettable. The broth itself had such depth and layers, every spoonful felt comforting and exciting at the same time. For noodles, I chose the angel noodles and my boyfriend went with the regular. I was surprised to see a skewers restaurant in Seattle and needed to try this one. I have to say don't get non spice if you come here. The non spicy skewers were extremely bland (got it for kids) they didn't enjoy that. The spicy beef ones were delicious. The braised pork combo is a go to and a must. Love myself some hot soup noodle on a cold winter day. The service lady was really nice to us and kept offering us water and asking us if we need anything. We went around 7:45 and it was not too busy. After we ordered the food is ready within 10 mins. The beef soup is heavy in white pepper which I really like during the winter timers. The spicy cucumber got a little tingling sweetness to it as well. Over all the price is good value for the amount of food I'm getting. Okay can we just take a moment to appreciate this place being open till midnight? I've been looking for another late night place to be able to go after my shift and was so happy to find this place! I always crave something warm and comporting and this definitely hit the spot. I came in around 11 at night and was seated immediately. You order and pay through an app online so there's little communication with workers, aside from them bringing you the food, or asking you if you need anything, or how the meal is. I enjoyed this due to being tired and just wanting to be able to quickly eat and leave. After placing our order the service was very quick and prompt with our meal on the table in less than 5 minutes. The food was also delicious!! Very authentic and comporting though my soup lacked flavor which made their chili oil very necessary. The bowls were also massive, I was barley able to finish it myself, and for the price it was amazing! If you're looking for somewhere to eat during the cold rainy months of winter in the PNW, look no further than Nuodle. Immediately upon stepping into the restaurant, you can tell from the vibes that it's a very authentic place. They have a pretty good deal for a combo meal, which is two entrees, two sides, a pork bun, and two drinks for about $50. You can even pick your noodle shape! I got the spicy beef rib noodle soup with thin noodles. The noodles were a very good texture, kind of al dente, and tasted homemade. The broth was savory and flavorful, but not very spicy. I didn't particularly care for the beef rib, as the meat wasn't very tender and it was messy to try and bite it off the bone, especially with chopsticks. I loved the sides we ordered though! The century egg tofu was so good, and I also really liked the Szechuan beef, spiced chicken with chili sauce, and the pork bun. Everything tasted authentic and homemade, and felt like comfort food for me. I think some of my friends didn't particularly like some of the sides, like the potato salad, but this review is for my experience, not theirs :p I do think it would be nice to have more options for drinks with the combo. This place makes the best beef noodle soup on the Eastside. They don't have a ton of selection for entrees, but each entree stands on its own and is better than other options in the area. The broth is rich and well-seasoned, the noodles are made fresh to order, and the plum juice is the only one I drink! As soon as you walk in, pretty much the entire dining experience is interaction-free from the staff. When you get seated, there's a QR code at your table to scan and order online, which is great. No need to wait around for someone to get to you. After you place your order, food/drinks will start arriving at your table when things are ready. I enjoyed that there was plenty of sauce, tomatoes, and eggs to go with each bite of the noodle. The sauce was perfect -- not too salty nor watery. The noodles were chewy and al dente. I was even able to watch the noodles being stretched and made to order, since I got a table facing the window. The prices are reasonable and the portions are huge.  My family and I really enjoyed and highly recommend their cucumber appetizer dish. We were glad we went with the larger size so that there would be more to go around. The cucumbers were cool and crunchy with a touch of vinegar and a small kick (spice).  You order via QR code. All of the utensils, napkins, and straws are on the table already. The ambiance is casual. You can take your time to enjoy your meal and not get rushed. It was a cold, gloomy, wet, windy day... and I needed a pick-me-up. Nuodle is a pun on the Chinese word for cow (牛) and noodle. Their claim to fame is their excellent beef noodle, and this is what I ordered in their lunch set which included "New Orleans" Chicken Wings and a side of spicy potato strips. The portions are huge, and the braised beef is tender and tasty. The soup is unctuous, served piping hot and it was plentiful. I had the "chive leaf" noodle, which is the flat, thin version which went perfectly with the chunks of braised beef. Tried this place out with a coworker for lunch today. Atmosphere was pretty nice. Wasn't too crowded and clean. Was greeted and seated timely. QR codes on the table to self order using your phone. I ordered the Spicy Beef Rib Noodle and he ordered some braised beef rice dish. The soup I got was just ok. My issues with it. 1) There was nothing spicy about it at all. Like why even call it spicy when there isn't any spice. I added chili oil from the table to add spice. 2) The meat to noodle ratio was just so off. You got maybe 3 to 4 bites of meat and a ton of noodles. When I compared that to my friends rice dish, he seemed to have double if not triple the amount of meat. 3) the broth was just ok. Had much better broth with bolder flavors but after adding the chili oil, it helped. Overall, it's just ok. If they fix the meat to noodle ratio, I'd order it again. I've been to Nuodle twice now and based on the two times I've been here, I would gladly recommend this place to go if you are looking for some delicious noodle soups and filling Chinese options! I've been here on a Wednesday and a Friday, both at dinner time - in a way to experience the customer traffic on a less busy and more busy day. On a midday, we were seated instantly as there were open seats everywhere. But on a Friday, we had a 20 minute wait to get seated - this makes sense as we unknowingly went when they had a promotion where if you spent more than $20 you get their pork hamburger on the house. This deal was killer - we each ordered a combo and got basically another meal on top of it! But besides that promotion, I would say Nuodle is still very solid. Service is fast, and ordering is done through their QR code scanning menu, where you can also pay your bill when you are finished. I was able to try everything in the photos I've provided plus some more that I haven't included - I'll try to review everything in a comprehensive manner: Appetizers (Included with combo/$2.50 for the dishes and $8 for the chili chicken if you a la carte): I had the sliced seaweed, spicy cucumber salad, and their radish dishes. They all have pretty deep flavor - tasted like they have been marinating in their sauces for some time, and luckily aren't too heavy on their flavor to where they are too salty. I would say my personal favorite I've tried between these three was the cucumber salad, the cucumber had a nice crunch and slight spicy strong sesame aftertaste. For the spiced chicken with chili sauce, the chicken is really tender Patty/Stewed Pork Bun ($5 for the patty, included with the combo/ $8 for the stewed pork bun, +$2.50 with the combo): I've tried both their Crispy Beef Patty and their stewed pork bun. The Crispy Beef Patty was as in it's name, very crispy and flaky - the beef filling was delicious and also had some small vegetable chunks. Between the two, I personally liked their stewed pork bun more - it was very rich and moist, and had the same crispy and flaky crust texture as the Crispy Beef Patty. It is pretty greasy as there is a hearty amount of pork fatty that just seeps into the bun - you will feel sluggish and very content though after enjoying one of those. Entrees ($14 for noodle soup, $19 for combo/$15 for rice dish, $20 for combo): I've tried their handmade beef noodle soup and their rich with mushroom and quarter chicken entrees. The beef noodle soup has a nice delicious savory but light beefy flavor, with some radishes in the soup - the noodle have a nice chew and beef cuts are tender to the point of just falling apart in your mouth. I would say the noodle soup gets you to a comfortable state of fullness (at least for me) if you finish everything including all of the broth. The rice and chicken entree is the one I would pick if you are really hungry - the chicken is soft and drenched in the soy based sauce, which as someone who loves a strong flavor, I'm a fan of! There were some reviews talking about the cold bok choy, but I personally didn't mind it too much, as it served as a good refreshing temperature change. The rice is very nutritious tasting - there like bean (and maybe corn?) cooked into it, giving it a complex texture from chewy/sometimes dense beans to the soft rice. There are a variety of other reviews stating that food/service wasn't up to standard, and fortunately based on the my visits I haven't encountered the issues mentioned. In my opinion, I would say this is one of more solid food options here so far on the Eastside in terms of quantity and quality for price. read more

We somehow passed by this area and saw Nuodle. It's my first time to try Nuodle though I have heard about it for a long time. There's no paper menu, so I had to scan a sign on the table to see the menu. (I am not sure what they would do if you don't have a cell phone.) I wasn't able to see the menu due to my bi-focal issue, so my son read it loud for me. My son ordered original beef noodle while I ordered beef noodle with pickled napa cabbage. He ordered normal noodle type while I ordered think noodle type. The order came very quickly, but somehow I didn't see any difference between his normal noodle type and my thick noodle type. The taste of the noodles was good. I was a bit shocked that they only provided us small plastic spoons. I forgot to take a photo of the spoons, but sorry I don't think those spoons are right for any soup noodles. Since we ordered from the phone, we were also supposed to pay from the phone. However, it required us to create an account or install an app, which I really don't like. I have had enough accounts and apps these days, so I just went to the counter to pay there. For service, I would say there's none. The staff never checked with us if I had enough water or if everything was okay. We ordered by ourselves without anyone checking with us to see if we needed any help. They assumed all Asian customers were Chinese, so they spoke Chinese only. I may go back to try again since the noodles were not bad, but I don't think I would recommend it due to the poor service and plastic soup spoons. read more

We actually came to this complex to eat at a different restaurant, but found it was closed when we arrived. After looking at reviews, we decided to try Nuodle. The menu is limited and everything is online - ordering, paying, etc so there's very little human contact. Also, the menu does not explain the different noodle widths so I mistakenly ordered the widest noodles and extra greens. Extra greens meant a TON of cilantro and green onions, which was fine, but not what I expected. The widest noodles were too wide, difficult to pick up and really chewy. The broth and beef in the soup were the best parts, however there really wasn't much of the beef. If in the mood for beef noodles and not willing to go into Seattle, I would go back (and order thinner noodles). But there are much better options in Seattle than on the east side. read more

TL;DR If you are a Lanzhou native, expect that it'll taste close enough to hit the spot if you're homesick. If you've never had authentic Lanzhou beef noodles, come here to try it, but definitely try it properly in Lanzhou if you visit! This means finding the busiest LZ noodle joint in the MORNING and not a fancyish proper restaurant. This is a fast breakfast food. I was born in Lanzhou and go back to visit family every couple years. I come here when I'm feeling homesick but don't have the time/energy to make it at home. Similar to pho, it's a common breakfast that people drop in to eat every morning during their commute to work. The best I can describe this is a Lanzhou noodle shop opened in Xi'an, so it has Xi'an dishes too. Recently they started offering bbq kabobs (eg cumin lamb, beef, shrimp skewers). Tried the lamb and it was decent. This is a long winded way of saying this is close enough to hit the spot for nostalgia. It probably wouldn't survive in Lanzhou itself, but would be decent in any other city outside of Lanzhou. The next closest competitor I've tried would be Malan Noodles (in SoCal). Side dishes are a hit and miss. Of the ones I've tried I would rank it the following: cucumber, seaweed, egg, shredded potatoes, beef bun, pickled veg. I wish they had the spicy pickled cabbage, or if the shredded potatoes were more crisp (soaked to remove starch). The extra sides of beef slices and radishes are large. I LOVE hand-pulled noodles and was very excited to try a place on the Eastside that would offer them. I ordered the braised fungus and tofu noodles, with the option of wide noodles. The ordering process is very much self-service, you scan a QR code at your table and order via their website. The dishes are very customizable - you can modify everything from toppings to the type of noodle. My noodles were decent - a little on the drier side but well cooked. The braised fungus and tofu was a standout - it was perfectly flavorful without being too salty and flavored the noodles nicely once I mixed everything together. We also got the "Sauteed Spicy Chicken Stir Noodle (small)" which was 'authentic' in that it was all kinds of chicken parts chopped up and bone in. I recommend the beef! Though the 'small' chicken dish was actually HUGE. Another recommendation: we also got the "Braised Fungus with Tofu Over Noodle" which was basically mushrooms and Tofu with noodles.
