They do NOT necessarily keep to their published hours and we've made a 5 mile drive a few times to find them closed when their hours said they'd be open! One time we arrived 45 minutes before their published closing and found them staffed, with a hot grill but telling us "Sorry, we're closed!" They almost never answer their phone, so calling to verify (or call in a take-out order) doesn't work! If Ruby's actually maintains their published hours, it would be one of our top favorite places to eat out!

It's poor form to not apologize and ask how to remedy the issue. Removing our cold French dip sandwiches with a scowl and without a word is not good service. In fact it might've been my favorite beers of the five or six breweries We tried in the area.. the bartenders were great, had great recommendations and very friendly. The prices are shockingly good for what you get, and they somehow manage to get food out fast without sacrificing quality. What I love most is the space. Even when town is packed, you are not jammed in elbow to elbow with people. Families, kids, locals, everybody just looks comfortable there. Big open historic theater, great food, quick service, sports on the screen later in the day, and good atmosphere without the chaos. Screen up or screen down, this place is one of my favorites.
