"You get what you pay for"... Not always the case in higher scale restaurants but Matsu Denver does not disappoint! The atmosphere is a scene. Which is nice considering how casual the state is. Women dressed up, like dresses and heels (yes!) and some men in jackets, some still stuck in their teenage closets sporting hoodies and shorts. I would recommend making an effort for this place. It's worth it to people watch alone. Service is upscale and the wait staff is trained incredibly well. We didn't order much outside of our waiters recommendation and honestly I would go back just for the waiter, but we don't have to because the sushi is the best in the state. Ask for the wait staffs opinion and you will not be disappointed. Warm dishes were also phenomenal and everything is a good portion to allow you to choose multiple items. Celebrated my birthday here. It's a great looking restaurant with good service. However I wasn't impressed by the quality of the fish. Tried yellowtail sashimi which didn't melt in my mouth and octopus sashimi which was chewy. The best dish was the scallop on a bed of Brussels sprouts. For rolls, both the signature and the torro roll were good but not spectacular. The salads were great, greens and hearts of palm. Fresh ingredients and well seasoned, as well as good size. For dessert we had mochi ice cream and they were fine. Overall I wouldn't pay the $$$ price for this fish. I think Izakaya Den has better fish. read more

Wonderful dinner to celebrate our anniversary. We all enjoyed the toro tartare w caviar, uni oyster shooters and the omakase. Sake was delicious. Not sure if I would order the Smoked and Toasted cocktail again - just wasn't for me I guess. Interior of the restaurant was beautiful and peaceful. This location is near a wealthy shopping area, and it's a nice treat after a long day of walking around Denver. I went at 5pm because I had early evening plans. The restaurant was dead at 5pm so the service was quick. I didn't love the service that I had, hence the four stars, but the experience was still good. I felt that the server I had was not happy I was a solo diner (usually this equates to less money spent), but that also could've just been his style of service. Food was good, not incredible. Some dishes were fresh, while others did not taste quite as fresh. The hamachi was very typical, but had a fishy taste at the end. The spicy tuna with crispy rice is a fun dish that I highly recommend. All the other food items we tried were good. They had some off menu items such as the sea bass with truffle I would highly recommend. The servers have great recommendations as well. I was more impressed with the service we received. Any and everything on the menu is the best, I've said before and I'll say it again we love a dim lit spot with great customer service and a little chatter in the background. I will say they have a meal that is mirrors much more of what you would get traditionally for sushi, so come expecting an experience. The environment is set beautifully with dim lighting and low music. The hints of architecture make it easy to feel as though you are fading into an Asian getaway. The food was delicious and rich and flavor (though very hard to picture in low lighting). Had an excellent dinner at Matsuhisa! Our server was excellent. While we didn't order the traditional omakase dinner, she asked our preferences and she and the chef designed a menu for us that was phenomenal. The jalapeno yellowtail was fantastic, as were the lamb gyozas and the black cod. We also all loved the sushi platter...it had several nigiri items, including salmon and seared tuna, as well as tuna sashimi and a spicy tuna roll. All were incredible. We had a lovely dinner there the other night. Chad helped guide us through the extensive menu which will definitely fill you up by the end of the night. We started with the bluefin truffle special which was good but not as amazing as the ora king salmon. That literally melted in your mouth. Then we had a selection of tacos--the fish, lobster and crab. I was a fan of the crab and my wife the fish but they were all great small bites. Then we had the miso cod and a few ounces of wagyu as a main which were both lovely. We each had a peru margarita to start and the kosta brown pinot which worked perfectly with the meal. I've been so impressed anytime I've visited the Matsuhisa in Denver and in Aspen! They truly are a refined Japanese restaurant that elevates some of the traditional flavors that we have come to know and love. The space is elegant and modern with moody lighting which is great for a special occasion, business dinner or date night. The ingredients are dependably fresh and that definitly translates into the quality and flavors of the dishes. While portion sizes tend to be on the smaller side, I find that I really want to spend the time to savor and enjoy the dishes, company, and ambiance in a restaurant like Matsuhisa. Some of our favorite go-to dishes are the Miso Cod, which is so incredibly delicate and desliscious. The eggplant, which is a wonderful starter with sweet and savory elements that truly shine, the Rita Dito roll with shishito peppers, and the New Style roll! I came here when they first opened in Denver for my birthday, and even though my husband and I spent $500 for the 2 of us, it felt worth it -- from the service to the food. I've been recommending it to everyone for a sushi date night since then, but I am going to stop. It's really gone downhill it seems: so popular, that they don't feel the need to try anymore. Came here last night for my husband's and my anniversary. My reservation said anniversary, and my husband called ahead, too. Not a word or even simple "congrats" from them (god forbid they do something like other restaurants and bring a special dessert or glass of bubbles or whatever). $18 PER dumpling that didn't taste like foie gras or truffle (the two main advertised ingredients) -- and that was generally the theme: super overpriced rates for dishes that just tasted good, not great. I can easily name restaurants in town with better dishes of each type for half the price. They ran out of their "live" specials halfway through the holiday weekend -- otherwise I might have had something positive to review. Oh, and the upcharge on the drinks! Look, I know this is where restaurants make money. But take this example: one of my favorite champagnes, Ruinart, costs $90 in store, $130 at Chez Maggy downtown (which is also nice and fancy), and $182 here. Considering the sommelier barely spoke to us for 5 minutes and then didn't even bother being the one to pour our wine... what are we paying for? Some of the best waitstaff I've experienced, serving from a hit-or-miss menu at extremely inflated prices. Cocktails were decent, but nothing to write home about, the kind of thing found in kaiseki restaurants nationwide. Contrary to other reviews, everything is *not* solid. You can, in fact, go wrong here. Many of the dishes are quite bland. In particular, the deep fried softshell crab was nearly completely flavorless, and the unagi shirayaki suffered from the lack of sauce. While some of the off-menu items were more decent, and my partner really enjoyed the deep fried uni, Matsuhisa would have needed to be half the price to be on par with even its local competition. I'll certainly go, if someone else is paying, but for my money, there are much better options in town. read more

Crispy rice cubes were very good but WAAAY overpriced. Nigiri was honestly the worst I've had in quite a while - fishy taste to the shad and amberjack. Portions are small and you're going to probably leave the restaurant still hungry or having paid the equivalent of a car down payment for your meal. Wife and I went in for her birthday dinner and spent a ton of money for really great service, exceptional sushi, and fabulous cocktails. It's a very cool space, definitely a place to be seen, and has a gigantic menu filled with anything you could ever want. With a couple of glasses of Japanese whisky in hand we perused the menu and landed on a we'll-need-to-waddle-out-of-here amount of food. A few pieces of sashimi, a few pieces of nigiri, multiple appetizers, basically anything the waiter suggested and whatever we'd seen on social media and all of that. And there wasn't a single thing we would've changed. We loved it all. I'm not even bothering to list out all the specific things we had, because it basically doesn't matter. It's all excellently prepared from top shelf ingredients and its wonderful. It's just...very expensive, and that's life sometimes. But you get what you pay for. read more

This place hits the nail on the head every time! The food, the service, the cocktails! We also love the atmosphere, it feels fancy but not stuffy. We have been for a few different occasions, and they recognize it subtly and well. A macaron , candle and a little chocolate that says "Happy Birthday" is more than enough for me. In this day and age, no one "owes" people Birthday desserts or drinks. Red and Tiffany were a fantastic team, and he really kept in touch with us about what we liked and didn't like to curate the next course. What you don't get is the very best fish - theirs tends to be dry reflecting that it's been too long in inventory; improperly frozen and/or shipped; and, simply not of the highest quality. Nobu Matsuhisa is a Japanese celebrity chef and restaurateur. I've been to Nobu in several cities, but never to a Matsuhisa, until today. One of the sushi makers told me that Nobu is a corporate chain, while Matsuhisa is more about family ownership. We start with the signature Jalapeño Yellowtail. Next, the Tiradito Roll, which the sushi chef suggested. It's not on the menu. Like the secret menu at In-N-Out! We finish with the King Crab Tempura and Black Cod Lettuce Wraps. Excellent food, service and cocktail. This was our first time coming to this restaurant, and we expected the food to be on par with Sushi/Izakaya Den and Uchi. We're happy to say that that the quality of food, service and drinks met our expectations --and some dishes were even better than Sushi Den and Uchi. We thought the new summer dish of salmon sashimi with beets, peach and jalapeño vinaigrette was delicious, and the bincho truffle sashimi was excellent. I didn't know that truffle would pair well with fish, but somehow this dish creates a great balance between the fresh seafood and the earthiness of the truffle. Billy, our server, recommended some wonderful dishes and drinks (the gardener cocktail with tequila was so, so good! Not too sweet, not too spicy, everything just mixed so well). The chef at the sushi counter worked together with our server to create an omakase-like experience that focused more on sushi and sashimi. We also tried some dishes from the kitchen like the appetizer black cod miso in lettuce cup and rock shrimp tempura, and they're all delicious.
