It is in a quiet corner of the 14th arrondissement of Paris, at 49 avenue Jean Moulin, that bistronomy was born almost 30 years ago.
With its advance on the sidewalk, the Régalade had set itself up as the figurehead of a new way of thinking about the restaurant. Yves Camdeborde laid the foundations there, Bruno Doucet continued and enriched his work there, before selling the business in 2017.
In 2020, Arnaud is investing in this historic address to write a new story.
"I don't want to make it a gastro", specifies Arnaud Duhem. “It will be a place without pretension but not without ambition, which resembles us. Les Petits Parisiens is us. Their leitmotif: a good idea is a simple idea. From the sobriety and elegance of materials and colors, an almost minimalist outline. A clear aesthetic bias, concerned with preserving the soul of the place and giving it a unique personality. The result: a “decor” at the service of the kitchen.
Meet the Business Owner: Arnaud D.
Originally from Toulouse, Arnaud Duhem always knew that the hotel and restaurant industry would be his home.
He went to Paris to train at the good school of Jean-Louis Costes. Then, first maître d'hôtel at Ladurée, next The Louis XV (Alain Ducasse), in Monaco, Food & Beverage Director of the Park Hyatt Paris Vendôme. From 2009, he led the implementation of all catering for the Shangri-La Hotel Paris in Place d'Iéna, six points of sale including the gourmet restaurants l'Abeille and Shang Palace.
Without ever forgetting his childhood dream, to open his restaurant. In 2015, here he is at the head of the restaurant Les Petits Princes in Suresnes accompanied by Rémy Danthez, disciple of Bruno Doucet. "I'm not a cook, I gave him (almost) carte blanche, I took care of what I know how to do: receive and manage". , to make Les Petits Parisiens, with Rémy in the kitchen, it is for Arnaud a way to complete a first loop. The singular story continues with the same passion and determination.
