My favorite in Paso, if I was forced to pick one. Best wine, biodynamic, indigenous yeast, dry farmed. Food and wine pairing is awesome. I love that they always accommodate vegetarians, and do it with love and not afterthought. Always impeccable service. Don't miss!

We love and are members of Le Cuvier. The wines are delicious, the tasting room is lovely with an amazing view, they are dog friendly and they do incredible food & wine pairings! As a member, it is only $10 for a tasting with food and the food is delicious. It's fun to actually experience how wine can enhance food. Very friendly and knowledgeable service too. Highly recommend visiting! Be sure to make an appointment.

We were tasting on this side of town and decided to pop in to Le Cuvier as we were driving by, we arrived too late to do the food and wine pairing, but were still able to do a tasting - which was exactly what we were looking to do anyways. Sat on a long bench with a beautiful view and Miranda brought us out our wines one at a time. She doesn't normally do tastings, so it was very kind of her to stick around and let us taste! We had so much fun chatting with her about the wines, history of the winery, and Paso in general. We really liked a lot of the wines here and ended up leaving with a bottle of their cab sauv and l'enfant du pape. We will definitely be coming back to enjoy the food and wine pairing, the menu changes seasonally and sounded amazing when we were there!

I have to say I have enjoyed many fabulous wine tasting over the years but this experience was probably my top. First of all the view was gorgeous, and it was fascinating to hear about how they make their boutique wines.. The showstopper was the food pairing that went with the wine. These were chef created food pairings to be exact. Alex and Xavier could not have presented the wine better! I can't wait to come back!

Came for the food and wine pairing and it was absolutely phenomenal! Definitely need a reservation because they do fill up. The food was amazing and much higher quality than your normal food pairings. The chef knows what he's doing. The wines were also great and our host was very knowledgeable. They give you small booklets with very beautiful descriptions of each of the wines as well as the small bites. Our favorite small bite was the filet and the cabbage roll! Will definitely recommend.

...and once again, we had the BEST tasting experience here! Whether it's a bi-annual visit with just me and my husband, or if we bring our closest friends with us, the crew at Le Cuvier is always so welcoming! Xavier was our wine host/educator that day, and he was a pro at handling simultaneous tastings, while also spending equal time with all parties in the private tasting room. I'm still amazed at how many wine glasses he could hold on one hand!!! LOL. Special shout-out to Stephanie, our wine host/educator from our last visit, who stopped by to say hi and helped fill our water glasses too (so sweet of her for remembering us). Glad we were able to share the best experience with our closest friends, and the reason why we love Le Cuvier! From the beautiful views, delicious food pairing, phenomenal wines, and most of all, amazing staff! Perfect ending to a blessed weekend in Paso Robles. Thank you so much, Le Cuvier. Enjoyed this beautiful winery on the west side of Paso Robles. Le Cuvier Is a charming hidden gem with amazing views ,unique wines paired with creative delicious appetizers. Definitely worth the bumpy trip up to the winery.

Came in for the food and wine pairing because my friend said she's heard great things about this experience. It was so good that I joined the wine club and booked the lunch for the next day. Looks like I'll be visiting Paso Robles a lot more frequently now, since Chef Kyle creates new bite pairings every 2 months and the lunch every 3 months =d They also post their recipes online. The tomato sauce was amazing paired with their 2021 Petite Sirah. I've purchased 2 bottles and am waiting patiently for the recipe to be posted so I can make it at home and revisit that delicious pairing! Yum!

Le Cuvier Winery is something truly special--an experience that goes far beyond just tasting wine. What sets this place apart is their extraordinary ability to pair food and wine in a way that feels thoughtful, refined, and completely unforgettable. Each wine is served with a perfectly matched small bite that elevates both the wine and the food. The pairings are exquisite--not just tasty, but crafted with intention and creativity. We also had the pleasure of enjoying their lunch and wine pairing, which was equally impressive. Every dish was beautifully executed and complemented the wines so naturally--it felt like each course told a story. The staff at Le Cuvier were equally remarkable. Warm, welcoming, and incredibly knowledgeable, they made us feel like we were part of an exclusive, curated experience rather than just visitors at a tasting room. A special shout-out to Lawrence, who was both passionate and professional--his deep knowledge and charisma added so much to our visit. Getting to Le Cuvier does require a bit of commitment--the drive up the narrow, winding, single-lane road wasn't my favorite part of the day. But the second we arrived and took in the views (and that first sip), I knew it was absolutely worth it. Now, let's talk about the wines. I've never been a fan of Chardonnay--until now. Their Chardonnay aged in neutral oak was stunning. Instead of the usual heavy, buttery notes, this wine was fresh, fruit-driven, and incredibly well-balanced, with a complexity that made me sit up and take notice. All of Le Cuvier's wines share a signature profile: soft tannins, bold flavor, and remarkable structure. This is thanks in part to their philosophy of aging all wines in neutral oak for nearly three years, allowing the true character of the wine to shine without overpowering wood influence. They also use dry-farmed grapes, which adds a unique depth and earthiness to their wines that you won't find just anywhere. Two other standouts: the Petite Sirah, which was rich, dark, and powerful without being overwhelming, and the Grenache, which showed beautiful spice, red fruit, and elegance. If you're looking for a wine tasting that's immersive, elevated, and unlike anything else in Paso Robles, Le Cuvier is the place. Yes, the drive may test your nerves--but once you're up there, you'll never want to come back down.

Amazing views! This winery used to be a residence so there are separated locations on the property which would be nice if you're having a party or gathering. The service was pretty quick and the wine knowledge was high. I think what elevated the experience was the sampling of food provided with the wines. Everything was so good and the wine taste was enhanced with every bite. I fell in love with their Zinfandel as it was so crisp and refreshing for a red.

Wine paired with food. What a brilliant idea! I spotted this one when I was hunting for vineyards to visit in the Paso Robles area - the concept above intrigued me. They called us in advance and let us know that salmon would be the entre. We though that would be great - and it was. So great I ate it before I thought about taking a picture (sorry). The tasting area has a tree growing in the middle of it. It's open air, and we had a nice breeze which helped keep things cool. Spot coolers were stationed around the area (evaporative type) which helped keep the temperatures moderate. The starting course (see the picture) was 5 bite sized nuggets of goodness. On the left was apple slices with a rich sauce, above that was pork loin on break, next to that was two slices of rib eye with sauce, and they two other dishes that went quite well with the wine. The main course was salmon, and it was done perfectly. Even the skin was edible (and I usually end up double-bagging salmon skin and pitching it). The seasoning was just perfect, as was the wine pairing. The service and staff were just top notch. The food pairings were perfect for matching up food and wine - not too much, not too little - just right. The salmon entre was very filling, and absolutely delicious. Reservations are required, so look them up and make one. If you are in the area, you'd be missing a great opportunity if you don't try this entertainment option.

Alta Colina is a family-run vineyard and winery located near Paso Robles. It was founded in 2003…read morewhen owner Bob Tillman bought 130 acres of land. Meaning "high hill" in Spanish, the vineyards are located at one of the highest altitudes in the region at 1,800 feet. We stopped by their tasting room near the end of the day and fortunately they didn't require a reservation. The room itself was not super big but the workers were friendly teaching us about each of the wines. We shared a wine tasting ($30) which included five of their offerings. Of the tasting menu I enjoyed the carbonic grenache, GSM, and the old 900 syrah. At our table was a map of the vineyards and what they grow on each parcel on land. We didn't do so but from the looks of it you can even drive through them to check them out yourself.

The host at the entrance was incredibly dismissive and wouldn't even let us finish our sentence before cutting us off. We were told our only options were to come back in an hour, a "limited" tasting, drive all the way downtown, or just pick up our shipment and leave. ​We asked for the Wine Club Manager to resolve the situation, but she wasn't on-site. To be offered a "partial" tasting as a favor after nearly ten years of support was the final straw. It feels as though they now prioritize "closing" new members over honoring the people who have supported them for years. They've gone mainstream and lost the personal touch that made them special.

When we arrived, we were greeted with the first wine on the tasting list, which was the Grenache (pretty good, different than what I normally go for). The patio had a nice view of the rolling hills and we could see goats running across them in the distance. The tasting consisted of 4 wines, and we also got a bonus pour. Our host was friendly and knowledgeable, and I really enjoyed the wine selection, especially the "Messer" red. We also ordered lunch, and both my Harvest Salad and Parmesan Fries were very tasty. The grounds were nice, but not quite as breathtaking as some of the other vineyards I've seen in the area. Overall though, a good experience!
