I would have to start with this is definitely not JPot. If you think that you're coming here for the same experience, you're definitely are not going to get the same thing. Yes it's soup but beyond that the experience in the presentation is completely different. It was a little quieter and more laid-back it felt a little bit more upper class. I feel like I would have to come here two or three times to fully find what my favorite things are. I tried the spicy miso broth. But if I come back, I'll get something different and I'll probably have to try a few before I end up finding my exact favorite. The experience here was more about timing and what you're cooking instead of making a soup with everything in it and then eating it. I would have to say that everything that I had was good. Not really big on tofu and their money bags tasted OK a little bit sweet in the end. The corn was really sweet to me. I like both of the mushroom types that they had their my wife only liked one of the two. My broth came out amazing. I added cilantro, green onion, and their hoisin sauce along with some lime. We also got Ramen noodle. It didn't seem like it was gonna be a lot of food. I felt like we were gonna be hungry by the time we got done eating everything. But it turned out in the end we were both full and not needing anymore. I would say this is a little bit more expensive than JPot. But I think this would be a nicer place to bring a date to overall experiences and presentation is better. I would say the service here was really good. We were well taken care of. I always say that you should make reservations if you're gonna come. We walked in when it didn't look like it was full or busy, but we still had to wait 30 minutes to be seated. I had such a fun experience at Ichi Shabu! We did the Shabu for Four, and I loved that everyone gets their own individual hot pot so you can choose your broth and completely customize your meal. There was SO much food! We had a great variety of fresh vegetables, plenty of meat to share, and seafood including shrimp, scallops, yellowtail, and oysters. Everything was fresh and delicious. I also really enjoyed the sauce bar where you can mix different ingredients and create your own dipping sauces. I will say, shabu shabu is definitely an interactive dining experience -- you're cooking, dipping, mixing, and building your meal as you go, so it can feel like a little bit of work. When you first step in you can feel the peaceful energy, the hostess was very quick to seating us at the perfect booth. Our server was Marina, she went about and beyond for us making sure every dish was delicious for us. She even broke it down to how we should cook each dish, she was so attentive and kind. This place honestly reminded me of being back in Japan, which is probably one of the biggest compliments I can give. We made reservations, but when we first arrived it wasn't very busy. That changed quickly though. By the time we had been seated for about 30 minutes, the restaurant was filling up fast and I could see why people recommend making a reservation. The inside is beautiful but still feels warm and cozy. One of my favorite parts was the sauce bar in the back. I always get excited when hot pot places have a good sauce bar because it's fun trying different combinations, and this one had plenty of options. Every bowl ended up tasting a little different depending on what I mixed together. There were only three of us and we were having a hard time deciding what to order. Thankfully our server, Latonza, was amazing and helped us figure everything out. She answered our questions, made recommendations and helped narrow things down without making us feel rushed. We ended up getting the Shabu Shabu for 2 and added some extra meats, sides and another broth. I loved that everyone could choose a broth they liked and cook everything exactly how they wanted. I got the Taiwanese Spicy Mala broth and it was packed with flavor. Also, it's nice that I didn't have to cook for everyone because I'm usually the last to eat lol This time everyone was on their own! For meats, we ordered the prime rib, short rib, and sirloin. They came out sliced super thin and cooked in just a few seconds. My husband also added crab sticks, and the set came with a nice variety of vegetables, tofu, sausages and other items. We loved it. We went almost 2 weeks ago, birthday dinner for one of my faves. I'm glad my friend chose this spot because I've been wanting to try it out since it opened. Aesthetics were great. Since it was three of us, our girl suggested we get the Shabu Shabu for Two + extra pot of broth + extra side (noodles)... we did just that. Two of us got the Spicy Miso (I wish we can sample all the broths first to make a decision but I went with the safe choice that I knew I'd like), and birthday girl got the Shitake Mushroom broth. Two of us got the Udon noodles, one got the ramen. We also ordered one bowl of rice to share. We opted out of the Seafood choices and just did the Premium cuts - 2x Chuck Sirloin, 2x Prime Ribeye. The Shabu Favorites are great that came with it. My faves out of the bunch: corn, enoki mushrooms, and the bok choy. I enjoyed the money bag as well. My least favorite? Didn't care much for the sausage... it wasn't bad but the sweetness threw me off for this meal in particular. The meats were perfect-- loved how thin they were. Made it easier to eat and it was just the right amount. If we didn't get the rice, we probably wouldn't have struggled much to eat all of it (but we did it). The sauce bar is always a great touch. People can create their own sauce(s), their own spice level, flavor profiles... as many as they would like. I've gotta admit, I misjudged and thought it wouldn't be too spicy so I packed that bad boy with peppers! Oh, she was spicy enough, lol. I made two sauces-- one with the works, the other with just the peps and sesame oil. As for the Yuzu Marg mocktail? Delish!! We loved it! Very yummy and refreshing! They gave my friend a nice little birthday treat. We all took a couple nibbles off of it but couldn't finish because we were already so full! We liked it though. Can't believe we actually have a shabu shabu place in Fresno now! Servers are very friendly and quick to greet you. They happily explained the menu and the best way to order based on the size of your party. They offer you hair ties if your hair is down, which is a nice touch. We ended up getting one of the sets and added on a veggie platter, the meatballs, and broths for each person. The meat selection was nice, but the lamb shoulder in particular was partially frozen and made it hard to actually grab a piece without tearing it. The tonkotsu broth is flavorful. He also was extremely kind to an elderly guest that was part of our party, kneeling down to have a conversation with her, walking her through the different dishes and providing a friendly comfortable experience. You order the type of broth from 8 options available and choose the proteins that come along with a large plate of super fresh veggies, tofu and sausage. This spot is incredible! The staff is amazing, so attentive and kind. They even hugged and cracked jokes with my 90 year old grandma. They did a great job explaining the menu, and man do you get so much food! We split the 4 person set between 5 people and still had leftovers (which they packed up really well). I love shabu shabu and have dined at many spots over the years, so I don't say this lightly -- this was the best shabu shabu restaurant I've ever eaten at. From the moment you walk in, the restaurant feels clean, elevated, and thoughtfully designed. I was greeted by a friendly hostess and felt welcomed right away. This visit I was dining solo, which meant ordering à la carte. I've never done shabu that way before, but I actually loved the flexibility to choose exactly what I wanted. The cocktails were outstanding. I had the blood orange martini and it was perfect. For dinner, I ordered the A5 Wagyu and the Wagyu short rib. Both were incredible, but I actually preferred the short rib because it had a heartier texture and richer bite. Absolutely delicious. My server was phenomenal -- answered all my questions and even made me a custom dipping sauce that was so good I wanted to bottle it up. The entire staff was attentive without being intrusive, constantly refilling water and checking in at the right moments. There were also little touches that really stood out. A hostess brought me a hair tie so I could pull my hair back while cooking -- I've never experienced that anywhere before. The bathrooms were spotless and stocked with floss and mouthwash, which says a lot about the attention to detail. If I could give this place 10 stars, I would. Our entire party had not dined here before, so our server was informative, patient, and super helpful familiarizing us with the menu. To begin, we opted for water, sodas, and Ichiban Sangrias. The two children in our party ordered Kids' Egg Fried Rice and Chicken Katsu with White Rice. The four adults ordered (appetizer) Chizu Poro Katsu, Shabu Shabu for 4, Shiomi Set, 2 Classic Tonkotsu, Udon Noodles, and 2 Ramen Noodles. We were then motivated and led to the sauce station. The sauce station had ten scoop options to add, [oyster sauce, sesame paste, Japanese chili oil, ponzu soy, crispy garlic oil, green onion, lime slices, fresh garlic, fresh cilantro, fresh Thai chili,] 5 bottles to squeeze, [sesame oil, fish sauce, rice vinegar, soy sauce, another sauce] and 2 glass shakers to sprinkle [sugar, togarashi] for one's own sauce concoction(s). For the four of us, this was a lot of food! Everything was fresh, the broth was fabulous, and the proteins tasted good. For my first experience at hot pot, the food was good but the experience was a bit confusing. This is my reason for a less than 5/5 review. My friend had invited us for a birthday dinner and made the reservation. We arrived and were told our table was given to another party. This was a bummer but I made the best of it given I don't get to hang with the girls that often. After we did get our table, our server came and started to take drink orders. This was pretty standard so no complaints here. I ordered the sangria which was really yummy. The menu on the other hand was where I got lost. I'm not sure if the server was new or just assumed we all knew how to order, or how the food was served or what but she didn't give much of an explanation of how we should order. For example, everything is basically a la carte, including the add ons, like the veggie bowl - it was pretty large. What I'm trying to say is that she could have suggested we share one between the group because we all ordered one with our broth and had to take most of it to go since it doesn't all fit in the single serving broth pot. If you want a good quality hotpot place with fresh ingredients and excellent customer service, this is the place to go! Me and my two friends went to this place on a Sunday afternoon. We called a week before to make a reservation and we were seated promptly when we arrived. In addition to hot pot, they offer appetizers and desserts. For appetizers, we ordered the pork katsu roll and the ceviche. The pork katsu rolls was a standout! Crispy, fresh, cooked to order. The pork was juicy and there was cheese inside that was perfectly melted. It came with a dipping sauce but it didn't need it. It also came with a side cucumber salad which was delicious and shredded cabbage on the side. The ceviche was okay. Kinda plain but if you like fresh tasting seafood then you might like this. It tasted really light and refreshing. The standout was the shrimp chips they served this with. I personally wouldn't recommend it; it was pretty pricey for the amount you get. Now on to the hot pot. It is NOT all you can eat but they do offer some sets/meal deals. You can purchase a meal for two and a meal for 4; it includes meats, veggies, and carbs. You can also order every individual item ala carte but it could get super pricey if you choose a lot of meats/veggies. My friends and I got a meal for 2 ($68) and then just added a broth for the third person for $3. If we split the hot pot price three way, it would have cost us $23 per person which I think is a great deal!! The best part was that the food for two was more than enough for us. We were full and couldn't even finish all the meat/veggies that came with the set. We all ordered the tawainese mala broth and it was sooooo delicious, probably one of my fav mala broths I've tried. It was perfectly balance. If I had to nick-pick, I'd say it could have been a little more spicy and numbing but really, it was great the way it was! I appreciate that they put the mala spice on the side and you can put in the amount you wanted. I ended putting all the spice in and it was not too hot at all. The service was 10/10. I think the manager serviced us first and he was amazing; super knowledgeable and helpful when it came to questions about the food menu and ordering process. Udon and ramen noddles were good, but I did not like the flavor of the shirataki noodles. We tried quite the variety of proteins and veggies. Everything was well prepared and fresh. They have a wonderful building your own sauce bar fully loaded with ideal toppings you can dip for your shabu shabu items. The order: I got a hotpot for 2 which was amazing, and added the prime rib upgrade. The broths are spectacular, sooo rich and full of flavor. I got the Taiwanese spicy mala (loved it) and the classic tonkotsu (creamy and rich) definitely doing that combo again. The veggies from the chefs favorites are a great add to the hotpot , they are fresh and well put together. I added a shokunin set as well because I love veggies. The mushrooms were so yummy. In addition, I got the baby bok choy as well, they cook so well in hotpot and really cling to the broth. Tiger shrimp was big and abalone with shell were fresh. The cuts of meat are top tier. My favorite was the prime rib of course because of the marbling and tenderness of the cut. So very good and highly recommend ordering. The chuck sirloin and choice cut short ribs were just as good. Overall, food was 1000/10 just because of how they prepared it for packaging to take home, the freshness and quality of the ingredients, and how easy it was to have hotpot at home. I've been wanting to visit since they opened but just thinking of the long waits, time just never permitted until today. My husband and kids had originally made plans to visit Sushi Box (Grand Opening) today. It was just alittle over 11:30 am and saw how long the line was... as expected so we decided to take a detour. I searched online to make reservations for Ichi Shabu but didn't see any times for noon so I decided to call. The lady who picked up my call was so nice and said they have no wait. We arrived a few minutes before noon the host greeted us he was really nice. He said the wait time is about 5 mins just to get our table set up. The restaurant was empty, thankfully but the lunch crowd started slowly trickling in. Our servers were Camry and Diane. They were so sweet. They explained the menu to us and also provided us with recommendations. We had our 2 littles (4yo and 1yo) they were so accommodating and love that they are kid friendly. They provided kid friendly plates/bowls and they also gave out chopsticks helpers and also gave them pocky when we arrived. We ordered 2 Shabu Shabu Lunch (11am-3pm) surf and turf. I ordered the classics tonkotsu and my husband had the shiitake mushroom broth. Proteins:kurobuta pork shoulder, superior farms lamb, yellow tail and abalone. These bowls also comes with a choice of sides and "favorites"-veggies. We also ordered Nikku Omurice per recommendation. Our food came out fairly quickly, presentation was beautiful. Everything was delicious! The broth was amazing the classic tonkotsu was so flavorful, so rich and creamy. The rice was amazing!!! It was topped with curry, the rice had so much flavor it was perfect!!! We were also give matcha float and that was delicious, perfect amount of sweetness and it had a coconut flavor!!! Food: Amazing! We ordered the Ichi Shabu Shabu set menu for two and the chizu pork katsu. We choose usda prime chuck Sirloin, tiger shrimp and scallops. Set comes with veggie platter, rice or noodles and Dashi for the broth. Drinks: Bar is fully stocked. I had the Awayuki Strawberry ( I like sweet drinks with the right amount of alcohol) and my husband had the Mango IPA. Both delicious. Special thanks to Outhao. He was our bartender/server. We sat at the bar. We had great conversations with him and he was very engaging with everyone at the Bar. James our server was amazing. He provided great recommendations for hot pot options and also make sure we were taken care of throughout our meal. Fresno normally does not have much selection and I am glad I found this spot when I came to visit. The ambiance was very cozy and beautiful. I would recommend this as a top spot to visit for hot pot in addition they have good drink selection. Definitely coming back again when I am in town. A tip I would suggest is to make a reservation on their website in advance. I came on a regular night with a friend and it was a much better experience. I was thankfully surprised that my tomato broth tasted better than my first visit. The first pot you get is full of flavor, but they refill it with a standard broth which waters down the initial flavors. Overall, great experience and would definitely return for hot pot. FIRE!!! First time in and I made a reservation online. Upon arrival they were slammed and so we had to wait an additional 30-45mins which was annoying but decided to sit at the bar to order a drink. This was like week 2 of the restaurant opening so the staff were very nice and apologetic for the wait. Tried a few sakes at the bar. And fell in love with the plum one. So good ! We order a few apps and shared until our table was ready. We were advised to order a two person package and add on an additional broth and it was perfect. The sauce bar was so yummy and we all enjoyed the meal immensely! I loved the ambiance of the space and the dim lighting and decor ATE. I will be back because I am dreaming of my bowl/plate! How did we not know about this place!? Not only was the food spectacular, but the service was personable and professional. We had the best server ever!. Her name was Hailey. We walked in right at 3 o'clock, but she made sure we still got to order the lunch specials, which were all phenomenal. We were in the restaurant business for many years and we can appreciate good food, but she steared us right at every turn !She suggested the most amazing cocktails, explained how they were made, and what to expect. We ordered a smoked pineapple, margarita, and a sesame margarita, as well as a passionfruit spritzer. The first two were an experience and we're both solid tens. The spritzer was very good as well Hailey explained the hot pot ,and how it worked in detail and as a result, we had one of the best meals we've ever eaten in Fresno! We had Wagyu with noodles wrapped in a egg roll, type wrapper, and Tiger Shrimp appetizers both were out of this world. I had the luncheon special which comes with an appetizer, your choice of broth, your choice of two protein, which can either be beef, pork, lamb, or seafood.. They serve you wonderful fresh vegetables to put in your hot pot and all sorts of other delectable things that I can't even name. I will post pictures but whatever you do don't miss this place and take my advice and ask for Haley she made us some special sauce that was fabulous on our request. Came here randomly on a Sunday afternoon. The restaurant was packed but it didn't take long for us to get seated. Probably 15 mins or less? I was kind of surprised. The hostess helping us was great. I think her name was Mariana? Very friendly, great attitude. We really didn't want to sit by the window(in the sun) she accommodated our request and put us against the wall. Once we got seated our waiter Robbie? He explained the menu to us and how everything worked. Very insightful for those whom are scared to try something new because they don't know how it works. They really help you. But I'm Not going to lie, it is on the pricer side if you order things individually. The broths are good. We just got the basic pork broth. It was nice. The meats and veggies were really fresh. We also got the omurice it was okay. I wish it had a tad bit more flavor. Needed some more seasoning. It's also their own take, not the way the real one taste--which is ketchup based. The sauce station is okay. I feel like it's lacking in some condiments. There needs to be some more options. Missing some key items. But overall the experience was nice. Food was good. Great date night spot. The inside of the restaurant super cute. Service was great. I want to give significant props to the Lin company for their efforts here. I think what they're doing is great, opening up these Asian places in Fresno! Love to see it!!! This company knows what they're doingThis restaurant is a beautiful, welcome addition to Fresno and truly feels like a gateway to Asian dining in the area. The interior design is stunning, a wonderful blend of Japanese aesthetics with a modern, clean, and dim twist. We visited at noon on a cloudy day, and the ambiance was perfect, warm, cozy, clean, and inviting. You can tell they invested heavily in the look and feel, and it pays off, giving Fresnians a much-needed, high-quality dining environment with genuinely nice vibes. Unfortunately, the rest of the experience did not match the incredible atmosphere, and the fundamental operational issues completely overshadowed the meal. We waited for an entire hour for a table of 2-3. What was most frustrating was witnessing vacant tables for our group size to remain empty the entire wait-time there. While the staff were super friendly, I think more training may be needed. Customer management, time management, can be improved. I don't necessarily think 3 hosts need to have a full blown conversation with a single customer/customer issue. Furthermore, we had an odd start when the server introduced the menu and went in depth about the menu items, but immediately walked away without taking a drink order(Water.) We ordered two sets: the Hayashi Set ($43) and the Imperial Wagyu Set ($68). The Beef across both sets was consistently good, and the Imperial Wagyu was excellent. (It's beef, beef is always good. Nice marbling no complaints!) The Hayashi Set provides the most variety (pork, lamb, chicken, two beefs) and is the most "worth it" for sampling, though honestly, who wants to eat anything other than beef/seafood at a shabu shabu place? The Chicken had an odd aftertaste, maybe its user error, but we cooked it for 3-5 minutes to ensure that is was fully cooked too. For the broths (all priced at $3): The Spicy Miso and Spicy Mala were decent, while the Tomato Broth was plain and simple. The individual pots are fine for one person. The Nikku Omurice was a surprising favorite. Although I couldn't hint any ketchup rice, the rice was rather a fried rice with ground beef, maybe a little soy sauce. While the interior is beautiful and the service staff are friendly, this place ultimately fails on the value proposition. I do not think Ichi Shabu is worth the high price point. For a similar shabu shabu experience, you can head over to a competitor like Sichuan Hot Pot in Fresno and get a beef combo plate with four different cuts of beef (which are decent) for only $39 significantly better value. Although I haven't been to Sichuan in 2 years, I'll go again soon and update my review for that location. I'd say I'm more critical when it comes to Asian food, having grown up eating these foods. From that perspective, the quality is great but the overall offering is simply mediocre and overpriced for the experience. This place would likely be great for the normal consumer as a "gateway" experience to Asian food, but for those seeking authentic flavor and value, the price tag is simply too high to justify a revisit. read more

We've tried multiple Lin's locations so when this place opened up we made reservations right away. During the week it was busy but I think it's mostly because it's new. The hostess was so nice while we waited for our table she gave us her suggestion on broths and meat. It was my husbands first time doing a DIY hotpot so the waiter was nice enough to explained how it all worked. Because it was date night we did the Shabu shabu for two with an app of the nikku omurice. I liked that we could make substitutions for the veggies but I wish we could do that with the meat selection because I don't like lamb. I did get the sukiyaki broth and my husband got the spicy male. We went to the soft opening and started off with the pork katsu rolls, they were so good. Perfectly crispy on the outside, creamy and warm on the inside, and paired with a sweet dipping sauce that tied it all together. We also tried the ceviche with shrimp chips, which was fresh and tasty, though I wish it had just a touch more lemon to really make the flavors pop. For our main course, we did the shabu shabu for four (Japanese-style hot pot). I loved that they have a condiment bar stocked with garlic, green onions, cilantro, chili oil, and other toppings so you can customize your broth to your liking. There's also a bar area on the other side that seems perfect for date nights or hanging out with friends, probably not as family-focused as the main dining area. The food came out quickly, the service was friendly, and overall it was a smooth experience for a soft opening. I'd definitely go back once they're in full swing. read more

Grand opening day, and I made sure to come with lots of grace and patience! To start, the staff? AMAZING! Everyone is so nice and patient with all the questions I had and I certainly took a minute before ordering. The bar staff was very kind and friendly, it was almost a little overwhelming. I ordered the Harumaki meat set, the vegetable set, the tiger shrimp, and the Japanese fish cake with the tonkotsu broth and a side of Udon noodles. Sadly, they were out of the fish cake, and my harumaki set took a while to bring out. Unfortunately, I never got the pork shoulder that came with the set, and because the meats did take quite a while to come out, the staff discounted my meal (which I wasn't expecting at all and was very shocked). The staff was still so sweet and came to check in on me multiple times. Overall the meal was delicious and very filling. The broth was rich in flavor and the meats were so juicy and tender. The tiger shrimp were thick and sweet. I would say the only downside was how little broth there was. After dipping a few veggies and meats, half the broth was gone and I never got a chance to ask if it was refillable. I didn't try the appetizers but they looked yummy as I saw others ordering it. The sangria looked very pretty so I'll have to try that next time. Everything was a bit pricey, but as long as you know what you like, you can customize your own sets and plan it out accordingly. My first time dining here for a late birthday and Mother's Day celebration. One of my fellow elites recommendations, I couldn't get them off my mind so why not. You do need to make reservations so it's not busy, you get a more calmer experience than JLin's other spot JPot which gives a different vibe. We were greeted by the hostess right away and seated. The interior felt very warm and high end at the same time, like you know you're about to eat good.I couldn't decide on what to get so I asked for server Diocese what was the favorite? The Hayashi set had two types of Wagyu one pork shoulder one lamb and one chicken then for the veggies I just got the little veggie set that was about $16 and you get a variety of greens on the side. I ordered the meatball trio and the money bags for the carbs we all ordered udon. There was a little sauce spot but mainly soy base with chili oil and some greens. There were different broths to choose from you get to try them before you commit. For the table, we chose spicy mala, spicy miso, and Tonkatsu broth. We were all happy with the choice we made. For starters agreed on getting the Wagyu beef omurice. It was on a bed of beef wagyu fried rice with a soft omelette on top with curry gravy and furikake topping. Delicious! Can't go wrong with wagyu fried rice. This all fed a table of 4. Then I redeemed my birthday dessert and also had a reward in my Lin's restaurant group app. So I got two free desserts. Our server was spectacular and had A1 service. He was a handsome very polite young man. My Junior Elite in the making was definitely satisfied and impressed by this hotpot experience. Honestly, amazing experience and customer service. Our server was Juju, he went above and beyond in his service and his time explaining each detail to us. It was a dinner and a show. Food were big portions and delicious. Food also came out fast. They even boxed and bagged our food for us and got us free dessert for our anniversary. I ordered the yuzu mojito and it was so good.
