The friendly day time bartenders are more relaxed and at ease in reflection of the crowd that populates the bar at that time. As the day progresses and the night shift clock in, a younger crowd starts to trickle in replacing the day crowd. A second bartender and security comes on, to help deal with a burgeoning crowd. On the weekends often a DJ will be brought in to help keep the crowd entertained and attract more business, usually leading to even a larger crowd. If you've ever worked in the industry you know how stressful working those shifts can be, either as security or a bartender. Sometimes mistakes happen, but more often than not people neglect to give a full accounting of the situation. I love the 5th, and while I usually go more during the day, I have gone in on a number of occasions during the evening and found most of the staff to be friendly and professional even given the stress inducing crowds.
