We had driven an hour to get pizza at our favorite Colorado pizza joint. Yelp said it was open. It was open for carry out and delivery only because of the stinking pandemic. Driving an hour to pick up pizza and take it home to microwave it is not my idea of date night. We were saved by a couple in the parking lot waiting for their pizza. They recommended Rookies. By the time the night was over, we had a new favorite Colorado pizza joint. The Pizza Shop had become the latest casualty of Covid because we will never be back. They have kept all of their classic dishes like the birra and tacos. The most important update is that they are now open for dinner! They open Monday through Thursday until 8:30 and until 9:30 the rest of the week, which is amazing! I believe they have their breakfast menu until 2:00pm then switch to dinner. I haven't tried all of their new dishes yet but I'm going through them one by one. They have a soup of the day now with tortilla soup, carrot soup, and potato soup on rotation, along with a few others. The tortilla soup and the carrot soup are vegetarian. They have a few designated vegetarian dishes on their menu snd are good about substitutions if you ask. I have tried their power bowl, their sunrise molcajete , the fried talamoa, and their angel burrito. I haven't had a bad soup yet. It's great to see them expand and try new items. I'm looking forward to trying the rest! The service, as always is attentive and earnest, and the servers all seem enthusiastic about the updated menu too.
