As soon as the plate was set, I could tell it was the wrong type of udon, and the udon was massively overcooked. Yes, there are different types of udon and they are meant to be cooked in different ways. They are identifiable by their shapes, storage needs and preparation needs, a memo Daikon clearly missed.
