I've been visiting this spot since I first moved to Ashland in 2022, but I'm disappointed to say I've noticed a steady decline in meat quality over that time. Speaking, the brisket in the Banh Mi was unfortunately tough and lacked the tenderness you'd expect from a properly smoked or braised cut. It had the distinct texture of a pre-packaged Sysco-style product, or perhaps it was a cold portion reheated on a flat top without being properly rehydrated, leaving it dry and chewy. I understand that protein carries a high food cost, especially in the current market. However, a more effective approach might be to balance the menu engineering by leaning on lower food cost items, like seasonal sides or creative vegetarian options, to offset the expense of sourcing and correctly preparing higher-end brisket. This would allow for a better product that justifies its price point, covers its own cost, and ultimately helps the company's bottom line while maintaining the quality standards this town deserves. I'd love to see a return to the quality I experienced a few years ago. All and all, despite the brisket. The service was kind and friendly. read more

Starting with the most important part: the food at Gil's was amazing! Overall the service was very slow (but to be fair it was absolutely slammed for a Thursday night and there was only one person running the register and running food out). Of all the food that we got, the brisket Bánh mì was my favorite with the rice bowl coming as a close second. Lots of flavors and components going in to them, and for a very very reasonable price. It is very refreshing in today's market to see a business hiking up their prices significantly. Most of the items were between $12-14 with a variety of options. While Gils does have some vegetarian options, none of the sandwiches are vegetarian which is a bit of a bummer. They have a decent selection of drinks on tap with some local and some standard commercial beverages. Atmosphere is a nice, outdoorsy, sitting at the table with friends having a drink on a summer day type of energy. It took a fairly long time to get our food, but as I mentioned it's a small kitchen and staff and there was constantly a line of 5-6 people ordering. I loved this little bar. While we were in Ashland, my husband and I went to Gil's two days in a row. The indoors is tiny, but there's a lovely patio with fire pits outside. This was my first local spot I tried in Oregon this year (coming from California) and it was all the feels of being somewhere different. The service was great, the outside tables were great for a summer evening, and the food was delicious. I got the pork bowl and it was so filling. With San Diego based Reggae bands adorning the welcoming Patio with melodic rhythms... and a cool mint and cucumber seltzer to take the edge off the warm late summer afternoon, we settled in for a big ol lunch having just returned from a brilliant Crater Lake excursion. Bae runs up the street to get a bag of chips and returns just in time for the sandwiches to arrive. We got the brisket ban Mi and cubano to split and share. Bitting into that cubano I tasted a hint of curry. I liked the crunchy bread the savory cheese melting into the slab of ham. Well I was certain my cubano was vastly superior to the Ban Mi. I was mistaken! Happily! The Ban Mi had Au jus that was a stand in for pho broth. This was pretty interesting when taking a bit of the sandwich and dunking it into the broth like a roast Beef sandwich. The slightly over thick bread began to melt and assume a less prominent position on the palette letting the carrots cilantro radishes and onion provide the CRUNCH factor. The Brisket Banh Mi with Pho Dip was incredible! After living in los angels & Las Vegas, I couldn't find a banh Mi sandwich that could compare, but I found it at Gil's! Nothing super domestic so to speak (you know, bud light) but they did have a couple lagers and pilsners for those that like a lighter style. I definitely enjoyed my apricot IPA. All seating is outside right now, but I'm not even sure if they ever have seating inside - the inside space is small. Decent number of tables outside and fire pits. These 5 stars are all because of the brisket banh mi with phó dip This is one of the best sandwiches I've ever had. They combine classic banh mi style with a kind of French modern dipping soup. It's honestly genius I spent awhile traveling in Vietnam and I think they would be proud that someone understands the finer nuances of banh mi. Well, I know some locals want to keep Gil's among locals, but I'm sure the owners would appreciate getting business from everybody, and they sure deserve some kudos for what they do, so: The Food. It's sometimes easy to overlook how good their food is here. It doesn't look like a restaurant, and a lot of people rave about the beer selection, which is substantial, but the food really is great here too. I'm an advocate of their nachos, which are huge and not for the dainty. I have yet to have better chicken wings in town. Sandwiches are solid too. The Drink. Great selection and nicely color coded for an easy scan if you already know what direction you want to go. I find they tend to get some stuff from smaller breweries that other places might overlook. Also - don't miss the single bottles in the fridge on the side. There's some good stuff there too. The Place. I find Gil's to be cozy. Not somewhere to take a birthday party of 11 people (at all, don't even try), but excellent for a smaller band of friends. During the warmer season, there's a lot more seating, and the parking lot nearby can be a plus for some. read more

I'm still banned from Gil's and Ruby's in Ashland for not wearing a mask the 2nd day of pandemic (3 years ago) The manager persecuted me for not being "respectful"... shouted and screamed in my face and I never disagreed and also apolgized profusely. I was in shock and all I said was "are you for real right now?" I am not forgiven to this day! But I heard people are getting really sick from Ruby's and Gil's has the same Manager... soooo- someone who doesn't care about people will reap what they sow. this place gave me food poisoning. I had the veggie nachos, i thought it was a safe choice since so many reviewers raved about them. By the time i got the chance to eat them they were cold so i blamed their low-quality on that. I thought "well hey maybe they're better hot". I ate less than half. Woke up this morning very sick (i'll spare you the details). This was my first time here, and i let a lot of things go because of it. Usually when i see an employee pull their mask down to talk to customers i leave. There were people inside without masks even when there is an ironic sign that says "no masks indoors". Gil's is small, especially indoors, but it's a great slice of Ashland's good life. The beer is good, the people--staff and regulars--are great, and the food, which you can order from Gil's itself or from Ruby's next door, is outstanding casual fare for the price. I haven't found a better deal in Ashland on meat-loaded nachos than Gil's, and Ruby's makes a good Reuben with, as ought to be required by law, corned beef, not pastrami. (If it feels too early for a beer at Gil's, some locals are addicted to Ruby's breakfast burrito.) If you're in luck, Dawn will be behind the bar and, look to your left, Jeff "the Night Mayor" will be in his regular seat. To your right is the restroom, which, believe it or not, you should definitely visit for the entertainingly off-putting family portrait on display there. Meh, to hell with my last review, so long ago. I love this place. Went for an afternoon pint today after a stop at Growler Guys with my wife, and it really makes you realize how cold and not personable a place like Growler Guys is: leave that one for the tourists or a quick "in and out" growler fill. Gils is warm and welcoming. Free popcorn, great little menu. Nachos were the perfect size for two (we got the small) and really quite a good deal for what you get--they were delicious. Great beers on tap, and a beertender who actually knew the pours, and wanted to help! After a few samples, we settled on a pint. Cool cat. Now, on to the bottle fridge. I love the selection at a place like Market of Choice, but it is very expensive and overwhelming. Here, there are select unique bottles for taking home or pouring on the spot, and the selection is PERFECT. I scored a bottle of Consecration from Russian River, and while it is not cheap anywhere, it was a fair price for a very rare and unique beer, which will now sit to age for a few more months at my house. Picked up some Hair of the Dog selections and also a favorite from Alpine Brewing. That was really the tip of the iceberg, and there were many more to choose from. The entire place is eclectic and really fun. This is probably as good as it gets for a neighborhood joint with food and great beer, and an always friendly staff--never have encountered an unengaged employee here! Came here with an old friend from college while I was wandering around my old college town. This place wasn't here when I attended college so it as fun to check out. Lots of good beer selections. My boyfriend and I tried the sampler which was 8 dollars for 4 four ounce beers. Not a bad deal! It gave us the chance to try a couple different beers before deciding the double IPA on tap was the best. We also ordered chicken wings half honey soy sauce and half Chimichurri. I thought the Chimichurri sauce was disappointing and honestly boring while my boyfriend enjoyed it. Honey soy sauce was tasty but it seems like a rotating flavor. Only downside here was the service was lame and the guy working didn't seem happy at all to be at work. I get it as I used to be a waitress but sometimes you gotta put on the fake smile! read more

Go to Growler Guys instead. They have more taps, larger firepits, and friendlier staff. Gil's has changed and become the opposite of generous. You are better served elsewhere. I've been a huge fan of Gil's since it opened and I actively talked them up and sent them new customers daily. No longer. After paying $6 + tip for a pint a kombucha, I was thirsty for a second pint. After sampling two of their 24 rotating taps, I was told that I had exceeded my sample quota! Okay, this is new. Their samples are served in tiny 1oz glasses poured less than halfway full. I estimate they are 1/3 oz pours with beer being one of the highest margin products on the market. When I told the barkeep that this felt unwelcoming and that it irked me that I couldn't have further samples (ever?), he said I was part of a problematic set of customers taking advantage of free beer and that he "didn't have time for samples" -- the bar was empty save for his girlfriend and 2 tables on the patio. No one else was inside. If there's a line, I get it, it's rude to sample multiple taps before choosing. But there was just the barkeep and me trying to order a beer. In that moment, I felt singled out, unappreciated, and betrayed by a place I loved. Then, he added, "I remember you came in earlier this week and ordered two samples before deciding which pint you wanted" as a way of attempting to shame me for not knowing my order in advance. In so doing, he only acknowledged that I was a regular, loyal customer. Then he continued as if to make his point, "You wouldn't go into another bar and do that, now would you?" Thinking he was just terrible at basic customer service, I contacted the owners privately via Facebook. The response was shockingly unapologetic, "we have to draw the line somewhere" referring to me asking for two samples prior to selecting my pint. No apologies and no attempt to regain my business left me feeling unheard and strongly regretting all the money I'd given them in business in the past. It is estimated that a 1/3 oz draught beer sample costs a bar $0.08 to $0.10 per tasting plus cost of washing the glass according to my google research. Conclusion: My business wasn't worth a dime to Gil's. I was in disbelief. A true customer-service bartender in an empty bar would have recognized that neither of their constantly rotating, and therefore unknown, taps pleased me and then recommended without prompting a third brew more to my palate. Half the fun of going to these places is discovering new and unique beers. Not about to order an entire pint of one that doesn't suit my taste nor do I want to feel obliged to engage in an unpleasant conversation with the bartender about the poor service. Severely disappointed with the bartender and the response from management. Never again. Growler Guys, just up the street, will give you 5-6 samples per customer no questions asked. Not that I would ever go past 2-3, but I asked them as they'll now be my regular tap house. read more
