    The arepas here are top notch. The meals cone with good salsa and hearty helpings of cheese and beans. Very good.

The meat was the correct type of meat for the dish, beef shank, and every piece was wonderfully tender. The noodles tasted like homemade noodles and had a really nice bite to it. It wasn't too firm or soggy. The broth was flavorful and complex with chili oil for added kick and the added fresh scallions and cilantro really brightened up the dish. The dish by itself was 5/5 stars. I'm surprised I hadn't tried Let's Noodle sooner since it's across the street from one my favorite ramen spots in the area, Ju Ichi. Let's Noodle optimizes a "Hole in the Wall" restaurant, very unassuming but it delivers authentic Asian flavors and delicious noodles. Although I didn't try it, Let's Noodle lets you craft your own noodles with choices of sauce and protein. The interior had very limited seating but a cute bar style table looking out toward the street. The windows where I sat had a nice large ledge which was super convenient to put my bag so it's out of the way and off the ground. The food came out pretty fast despite there only being 3 staff members that I saw - a front desk cashier who doubled as a server to deliver food when ready and 2 kitchen staff. The price was a little above average for what you'd expect for a non-full service restaurant, but it wasn't horrible either considering how close it is to the Green in Morristown. The pork buns I had were tasty but the pork mince inside was minced a bit too finely for my taste. It almost resembled a paste when it should have had a more structured and juicy bite. It was still enjoyable but it wasn't the star of the show. After I finished dinner, I decided to also try the Dan Dan Noodles to go. The takeout container nicely separated the noodles from the sauce so the noodles wouldn't get soggy when I got home. The sauce was flavorful and the noodles had great texture but once again, the pork was so finely minced, like the pork buns, that it really detracted from the quality of what was otherwise a fantastic dish. Overall, my experience was great. I love authentic hole in the wall spots and I am excited to go back to try the other dishes I missed!

The atmosphere is cozy, quiet, small but we had a good time.

Even on a rainy Thursday night the place was packed, which says a lot, but we were seated immediately. Service was quick, friendly, and efficient the whole time. I also loved the ambiance of the place. There's something about it that feels very communal, and it was cool being able to watch the sushi chefs and the rest of the team at work. This will definitely become one of my staples in Morristown!

Then he forgets about making them and spends 15 mins talking with other employees and doing whatever before I wave at him again. He gives me the nod and The drinks finally come but no limes like the previous round. Honestly I was done - might have stayed longer but with our kids it was time to go. Finally I've included a photo of our view of these diligent employees that are obviously too busy to worry about service or the perception of how things look from a customers point of view. The food wasn't bad but honestly the experience wasn't great. We won't be back.

The Saigon special bahn mi though, could've used a bit more presence from the mayo and pate to enhance the flavors. Sounds weird, but surprisingly, the sardines in tomato sauce bahn mi was better than it sounds. It was savory and definitely worth trying if you're feeling adventurous. The summer rolls were fresh, clean, and a great complement to the sandwiches. My only note: I wish the pickled carrots and radish had a bit more tang. They leaned mild rather than punchy. Overall, a reliable spot with thoughtful touches and flavorful options. I'd come back again.

PRO TIP #2: Stirling Tavern does not have a private parking lot, but there is plenty of paid on-street parking on South Street or Maple Avenue. Bring change or use the ParkMobile app for the meters ($1 per hour) Monday through Saturday from 8am til 6PM; all street meters are free Monday through Saturday after 6pm and all day on Sunday.
