So, in anticipation that we might not find much we liked, we actually ate before we left home. That turned out to be completely unnecessary. I remember trying the chicken-style seitan and several other things from the menu and being genuinely surprised by how good everything was. Not "good for vegan food." Just good food. What I remember most is that Watercourse challenged an assumption I walked in with. I didn't leave there suddenly becoming vegan, but I did leave thinking, "Okay, there's something to this." And all these years later, I still remember that meal and find myself wanting to go back and see what they're doing now. Sometimes that's one of the best compliments you can give a restaurant: you changed my mind.

The menu is completely different, table service is gone, prices are not good, food is mediocre at best (said everyone at the table). They're now a place that will make non-vegans say "this is why I'm not vegan." I used to look forward to my Denver trips solely because of Watercourse Foods, or what they used to be. Now I have one less thing to look forward to when I go. I'm sad.

Am I allowed to say it changed my life? It's located in the Edgewater Public Market which is rad. I highly recommend dining in! The dining space is dimly lit and has a great atmosphere. It suits a formal occasion, but I tend to go more casually. And WOW, the cleanliness and organization in this space makes my brain happy. The staff are all wonderful. The Spice Room in the Highlands is the best one too, the others are great but this one is the best. A fantastic meal with good service at a great price- hard to come by in Denver! A few dedicated parking spots in front or otherwise on the surrounding streets.. whatever it is, don't let it deter you from coming bc they won't let you down. There's ~15 tables & everything is so fresh! You're served complimentary sauces with a thin roti-like cracker, and the sauces are all so good- my favorite is the cilantro one or the tamarind sweet one.. and they all go great on your dishes. The best appetizers are the samsosa chhole chaat- it's like a deconstructed samosa with crunchy bits & sauces on top, soooo good you won't want a regular samosa again! My other favorites are Chicken 65 & the veggie pakora (fried veg nests). Those 3 alone are enough for 2 people, but if you're super hungry, the entrees won't let you down either!
