I came after a made a reservation strictly for Brunch. I got there. They don't serve brunch, no apology no explanation but okay I settler for early lunch. The service is slow. I order a burger and a fall drink special. The waiter doesn't check on me for a while, brings my food and totally forgot the drink.The burger was okay, the fries were tasteless. Middle of the road and over priced experience. All I can say is BUYER BEWARE. The website and reviews that have come out since covid make this place seem warm, cozy, delicious and safe. We searched and drove and searched again for a restaurant on Thanksgiving evening and somehow just by luck we found an absolute gem, Fork Lore. I heard a rumor that the head chef traveled back through time, initiated a sando competition with Colonel Sanders, won easily, went back home and got a job at Forklore. This was the restaurant in our hotel (the Hilton). We had a busy day ahead of us, sk instead of venturing out, we decided to just grab a quick bite to eat downstairs. Boy, are we glad we did! Our waiter, Robert, was awesome, friendly and knowledgeable, making recommendations and being very engaging. The eggs were all cooked to perfection (over-medium) and the cheese grits were exactly as he said... "decadent!" Oatmeal was the other entree at our table and our waiter even complied quite gracefully when asked to provide "just the berries," and "all the fruit." (Apparently we had a couple of "Sallys" sitting at our table... who knew?!) Enjoyable experience and we would all highly recommend Roux for breakfast. We had to unexpectedly stay at the Hilton when our flight was cancelled. We had the good fortune of stumbling across this little gem for some nourishment! Some may have been annoyed by the wait times but we sat at the bar and chatted with the bartender Traci who never slowed down and never lost her smile. There was only one other server working. They both maintained their composure throughout our entire experience. Our food came out hot and delicious- my faves were the home made fries and the Caprese sandwich. The restaurant was short staffed and the staff that were there gave off the vibe that they didn't want to be there. They were friendly enough but you could tell they were stressed. The restaurant atmosphere was lousy because the bar area and the surrounding tables were full of baseball kids and their drunk parents, all of them being extremely loud and acting like they had the place to themselves. After one of the father's got particularly loud and unruly, I think the staff finally got involved because the group mostly dispersed soon after that. It was just super distracting and awkward. The drinks and food were good but nothing special. Overall, not bad for a restaurant in a hotel but not great either. If you are staying at the hotel and want a convenient place to eat after checking in, this is probably a good spot. I ordered a glass of the Milou Rogue Syrah/Grenache blend and it was awful, so the bartender made a suggestion and swapped it out for me. The honey Dijon salmon was the perfect mix of savory and sweet. The southern mashed potatoes were creamy and flavorful. The Brussel sprouts are deep fried and good (but needed some seasoning). Unlike the soggy ones from other busy restaurants, the fries are crispy and gees how could they keep the temperature hot and maintain the crisp just pairing next to the burger on an open plate? The waitress is the best and most professional hostess who recommended my salmon to be blackened, paired with grilled asparagus and freshly made, tasty mashed potatoes-you get two free sides. The freshly grilled half lemon served with the plate - I devoured the whole plate in no time. The bar tender is wonderful and fun!!! (Sunday night Memorial Day weekend) Both bartender and waitress served our dinners at the same time, it's as if you would expect from a 5 star Michelin starred restaurant. Brussel sprouts appetizer is AMAZING!! A rather large portion made with honey, peanuts and feta a combination I wasn't sure I would like but now I can't stop thinking of them. For dinner I tried the chicken caprese sandwich with sweet potato fries and honestly they were both so good but the fries were the best I've ever eaten out. I will admit I am not a fan of hotel restaurants and given the fact this Hilton is situated in Biltmore park with a plethora of dining options I was convinced the other restaurants would've been better. Great breakfast/brunch here on a Saturday morning. We were not staying at the hotel but walked by and decided we were hungry and should dine in. The service was great and fairly quick. The waiter was very friendly and knowledgable about the menu items as well as the restaurant history. The bottomless coffee tasted fresh and very smooth. I went with the garden and goat cheese omelet - delicious. The potatoes, though, were the real winners and stole the show. They rank up with the best breakfast potatoes I've ever had - perfectly seasoned and not overly salty. The waiter mentioned they are made fresh in house and locally sourced, which I can appreciate. My husband also had an omelet, the chef's favorite, which was also delicious. The omelets are a good size, so prices are reasonable. Also, I learned that Roux was named one of the top Hilton restaurants in the country, which was impressive. That seems a little difficult to believe, but I do think the quality of the food and experience was very good. read more

While staying at the Hilton at Biltmore Park, the Roux was very convenient for us. During our stay it was downpouring and we didn't feel like driving or walking in the rain. This restaurant choice was extremely good. I got the salmon and it was absolutely delicious. I loved the sauce that was on the bottom. The customer service was really good. I don't remember our server, but she did an amazing job. She answered any questions that we had about the dishes The only reason that I gave this restuarant 4 stars out of 5 is since our creme brulee was watery. The server removed it from our bill and understood that creme brulee should not have that texture. The next time I come visit North Carolina, Roux is one of the restuarants I have to visit. read more

Looks like an abandoned mall, there should be some separation from hotel front desk and the restaurant but sadly it is just one big lobby. We are there once, food was surprisingly great, like a lot better than expected. The second time we went here the host was gone for a while and so we gave up and starting walking away, when she came walking down the hallway opposite direction asking us to come sit. Take a hint like we are already tired with waiting. A shame that we didn't want to taste their food again, but Asheville has a ton of restaurants so I couldn't really care if I never go there again. First of all, this is a hotel restaurant. We came here because of yelp rating and convenience. We sat down at 6:45pm. It is almost 8 now and food still hasn't come out. The restaurant only has 5 tables of people (and 15 empty ones). During this hour of waiting, it took them 3 times (in a span of 20-30 mins?) to serve the big table next to us. Husband said he saw a table left because of the long wait. We were told there were two chefs and they had to take care of the entire hotel's room service.
