The burnt ends were rich, smoky, and deeply flavorful, while the ribs had that combination of tender meat and well-developed bark that you hope for at a serious barbecue joint. What makes Lawrence particularly interesting is chef and pitmaster Jake Wood's approach to barbecue. There's a clear Texas influence in the low-and-slow wood-fired smoking, but the cooking also reflects Carolina traditions and Southern ingredients.
