The extra texture and flavor are absolutely worth it. My wife is a total Brussels sprouts snob and she was absolutely in love with theirs. The funny part is that I'm usually not much of a Brussels sprouts person, but I kept asking for more off her plate. That alone should tell you how good they were. The fries were okay.
