The space used to be the original lobby from 1888 but now occupies the bar. We've had the pleasure of visiting fantastic bars in a lot of places but Rundle Bar is special. The service level is as good as it can be. The staff makes you feel like you're in their home. They're incredibly attentive but not annoying. We had great conversation with many of the them and they genuinely care about you having a memorable experience. The views on the patio (alfresco terrace) are as epic as it gets with views of the breathtaking mountains everywhere you look. It's been named the best patio in Canada for years and you will see why when you walk out of the beautiful Rundle Bar onto the patio. The menu is made up of classics and signature creations. I had the Ember which is an old fashioned variation made up of high quality spirits and an infused maple syrup it was one of the best cocktails I've had in a long time. It didn't hurt that it came with a smoke show. It was so good that I have to create a separate post with photos and videos vs. detailing it here. Trust me, it's gorgeous!!! Banff has been on my list forever and I finally visited. The Fairmont Banff Springs hotel was equally a place I needed to experience and it didn't disappoint. The Rundle Bar was a bonus I wasn't expecting so make sure you make time to visit this magical place when you finally check Banff off of your list. I'm definitely going back with my beautiful wife because we have to experience it together. You need to go. Salute @thejohnnycocktail

We ordered to share: Bison carpaccio: 8/10, the large pieces of black salt(?) was overwhelming the bison, but otherwise very unique and worth trying Burrata salad: 100/10, super refreshing and unique palate of thinly ribboned squash covered with tarragon vinaigrette and burrata. Smoked trout doughnut: 8/10, interesting combination of sweet (donut, lemon glaze) and savory (smoked trout, herbed Crème Fraîche, everything bagel seasoning, pickled shallot) Individually: Strip sirloin: I didn't have this one but 10/10 for work of art presentation. Huge piece of steak though. Roasted chicken: 9/10 myself and one other got the chicken. Tender and well seasoned with sweet and spicy harissa honey glaze and chili crisps. It looked like they gave half a whole chicken to her and the other half to me, huge portions. Probably could've been 3 meals. Peyto's ribs: 9/10 had to get it for the touch of maple paprika. Seared ling cod: 9/10 it's the only portion that remotely made sense for a single person and didn't end with leftovers. The dimly lit atmosphere at Brazen is perfect to unwind in after a long day of hiking and exploring. The portions are generous and flavor profile recommendations between appetizers, mains, and drinks well explored. Highly recommend making an advance reservation to try!

Good Folk (in the Otter Hotel), 600 Banff Avenue, Banff Alberta…read more On the next to last day of a 12-day rail vacation from Washington, D.C. to Banff, Kevin Guadagnoli, my travel advisor from Amtrak Vacations, had booked me a two-night stay at The Canoe Hotel & Suites. He had booked my bus transport from Banff to the airport in Calgary, and while I waited for the bus I had time for breakfast before the bus arrived. Right next door to The Canoe the Otter Hotel offered meals at the on-site restaurant, Good Folk. I was looking for a light breakfast, and Halle promptly brought me a menu and some water. The variety of offerings was excellent: in the listing were steelhead trout gravlax (dill goat cheese, pickled Spanish onion, everything bagel, rosti bravas, $25CAD), banana caramel French toast (double smoked bacon, candied squash seeds, Canadian maple syrup, vanilla crème fraiche, $22CAD), and the Good Folk Breakfast (two eggs, duck fat rosti bravas, sourdough toast, choice of wild board chorizo sausage, double smoked bacon or ancho squash & cippolini onion, $22CAD). Hoping to keep it light, I asked Halle for a mimosa ($13), and from the list of side dishes I ordered two poached eggs with sourdough toast and house-made strawberry-mango jam ($13). In short order Halle was back with my order and a refill on my water. She was pleasant, attentive, and did a great job throughout the meal. The restaurant was spacious, well-lit, offered a full bar, permitted low-volume conversations, and was ready with no waiting. There was both indoor and outdoor seating (this was July), and the mountain views from my table were awe-inspiring.
