Rooted in a century-old heritage of authentic Lanzhou beef noodles, our craft honors the legendary five signatures: clear broth, white radish, red chili oil, green cilantro and garlic leeks, and golden hand-pulled noodles. We remain dedicated to traditional techniques--hand-pulling each portion of noodles fresh to order and slow-simmering our rich broth to perfection. In early Chinese history, wheat was not used to make noodles. When it was first introduced, the lack of widespread processing tools like stone mills meant people simply steamed or boiled whole wheat grains. Known as "wheat rice" (mai fan), it was considered a coarse, unpalatable meal for the lower class. It was during the Han Dynasty, with the widespread adoption of rotary stone mills, that humanity truly entered the "flour era." Early noodles were called "soup cakes" (tang bing) or "boiled cakes" (zhu bing), though they remained a luxury mostly reserved for the royal court and the wealthy. It wasn't until the Song Dynasty (10th-13th century) that noodles finally crossed social divides. With a booming urban economy and mature flour-milling techniques, noodle shops emerged everywhere, transforming noodles into an everyday staple for ordinary households. Ambiance: Although the restaurant has been open for many years, the interior remains stylish, bright, and spotless. The management keeps everything impeccably clean. With tables for pairs, groups of four, and larger seating for 6-8 people, it caters effortlessly to any dining setup. Taste: Offering what is arguably the most authentic Lanzhou beef noodle flavor, you can customize your noodle thickness to your liking. The broth is rich and deeply flavorful, clearly the result of hours of careful simmering. Highly recommended! Service: The service here is truly outstanding!

The location is at the corner of a strip mall in Bellevue. Plenty of parking outside and lots of tables inside as well. The only reason I gave it three stars is because I don't really like that kind of noodle soup. The noodles were really thick and dense. You go in and you can order off the QR code at the table.

The beef broth is on the verge of being too salty but it's balanced by the sheer amount of black pepper that you can taste and not really see inside the clear broth. There's also a ton of beef and veggies inside, and got noodles for this dish. Noodles themselves were al dente and fresh. Friend and I also shared a side of fried dumplings, which came out very hot and didn't really need the sauce provided on our table, as everything already had enough taste. Staff brought out the food relatively fast - within about 10 minutes for all our dishes - and this is on top of the restaurant becoming a full house throughout the hour we stayed. People even started lining up near the waiting area after a while, that's how packed this place gets!

We each ordered a bowl of noodles along with some popcorn chicken. After about 10 minutes my daughter's and my noodles were brought out, no sign of my wife's noodles or the chicken. A bit more than 5 minutes later my wife just said forget it, so I told the waiter to cancel the rest of the order. Totally ridiculous! It wasn't even that busy so I have no idea why after nearly 40 minutes we still didn't have half our order. As far as my, and my daughter's, noodles were concerned, they were good but nothing special. Nothing I would come back for, especially given the far better options in the neighborhood.

Our favorite had to be the duo jiao yu pian (two super tender, juicy white fish filets coated in two different sauces. One was pure spiced and the other had suan cai, a slightly funky and sour pickled veggie). We also loved the stir-fried eggplant and green beans, which was perfectly tender and intensely savory. It was great to have some veggies to break up the otherwise intensely protein-forward meal, and the veggies were all so well-prepared. Despite the menu saying the dish was spicy, I didn't find it spicy at all, so it was also a good break from the rest of the peppery dishes. We also had their stir-fried shrimp, which had an incredibly extravagant presentation, with mountains of red chili peppers and a burner to keep the dish warm throughout the meal, but I thought that the shrimp were a smidge overcooked and more salty than spicy. Nonetheless, the meal was delightful, and, even more importantly, it received the Asian parent stamp of approval! The service was also quite efficient and friendly. There was a kiosk near the front door to join the waitlist, but we ended up only having to wait ~5 minutes before being seated. We ordered off a QR code at the table, but the food all came out quickly and our server was incredibly attentive -- he preempted our every need and refilled water, brought new napkins, and cleared completed dishes almost the second we were ready.

First thing I noticed when I looked at the menu was that the prices are very LA, but before you let that deter you, hear me out: the portion sizes are significantly larger than what you'd get for the same price back home. So in terms of value, you're actually getting a much better deal out here in Redmond. One thing that genuinely caught me off guard; they let me bring my puppy. If you're from LA or the 626, you already know that's basically unheard of. Redmond, Washington is on a whole different level when it comes to being pet friendly, and I loved every second of it. As for the food, it was great overall. The mala wasn't too numbing, which I appreciated, it had just enough kick without overwhelming everything else. The garlic a-choy was perfect, honestly no notes. The braised pork belly was good but I wished it was a touch softer, and I personally felt like my dishes could've used a little more salt or soy sauce, but that's an easy fix and purely personal preference. Would definitely come back next time I'm in the area.
