In Prescott for the weekend and stopped at Docs with my wife for some good old fashioned bbq and let me tell you, it did not disappoint! I got the plate with the burnt ends, ribs, and pulled pork. My wife got the western cheeseburger, she loved it! Our server, Sydney, was awesome! Very nice. The only thing I will say...the bbq sauce itself was not great. 4 options available, none of them hit the spot. House BBQ too sweet, others too watery. We were seated at Table 7 around 6:30-7:00 PM last night (Saturday 5/17) during a very busy evening in Prescott. I understand that the city had several events going on and the restaurant was packed, but that doesn't excuse poor service. Our waitress was rude and had a noticeably sassy attitude throughout the meal. She didn't know what a Moscow mule was (that's a pretty basic drink). The service was extremely slow, and our food took nearly an hour to arrive after we placed our order. To make matters worse, we were only informed about 15 minutes before the food came out that they had run out of brisket. The food was decent, but the overall experience was disappointing because of the long wait and unfriendly service. This is a popular restaurant, and with that comes the expectation of professional and courteous customer service. Do better. read more

Went to Doc's for HH today. We live in Prescott and would like to have a few great restaurants. We realize Doc's is new BUT you need to HH menu. What beers and wines are offered, etc. Wait staff was clueless and contradicted what is on line. Another disappointing restaurant experience. read more

We visited Doc's BBQ & Whiskey shortly after they opened in Prescott, Arizona! Overall an impressive establishment, I wish I lived closer. Everything was clean and well put together with a modern BBQ vibe. All the staff were very friendly and personable. The restaurant is situated along Prescott's Historic "Whiskey Row" and Doc brings the goods. I started with their Old Fashioned and it was very tasty. The brisket here is outstanding. I ordered the moist cut and it was tender, beefy, and richly marbled with a distinct smoke ring. I had high hopes for their "Smoked Mac & Cheese" but it wound up tasting pretty pedestrian. Seemed to be laden with processed cheese. We had fun sampling all of their delicious BBQ sauce choices that are nestled in a caddy at the table. Be warned however that one of the five is actually ketchup! I will definitely visit this place again the next time I'm in Prescott. read more

Ordered a pickup to go yesterday. When I called in to order at 5:30 for the pickup time at 6:15 the girl on the phone said it was too early to call in an order for a pickup time at 6:15. I was confused by it but I didn't want to make a fuss about it. The place was packed yesterday because of some event happening in downtown. After picking up the food, they missed my Mac and Cheese side dish and also the bread which the girl on the phone said it come with my order were missing. The ribs were burnt. Pull pork had weird flavor after a bite. If I'm paying $35 for a combo and $3.00 additional side dish u better do it right and not missed packing my side that I paid for! Will not be back for sure. We shared the six shooter and the small order of Texas Twinkies. Both were great!! The Brisket was moist and flavorful same with the other items. From the time we walked in to when we left we had top notch service. Greeted with friendly workers, who enjoyed their job serving you. Laid back Rustic vibe low tables and high top tables. The burger meat tasted like steak seasoned perfectly. The fries were seasoned well and paired up nicely with their bbq sauce. Good gosh there was a lot of fries. The 4 BBQ sauces were all very unique . I loved the House, my husband liked the Hot Habanero. They also had AZ Tangy and Sweet heat all were very good and made there. Our waitress was so nice she saw my husband's phone and commented on our husky's. She too has a couple of dogs one being crazy like ours. I used to love this place when it was Colt barbecue and very sad to see the demise of that company. This new place is pretty similar, but there are some slight differences. Prices are a little bit higher, I'd say about 20%, the beer selection used to be fantastic and now it's just OK, the smoked meat is still delicious, but the portions are slightly smaller with no more cornbread sides, but now tortillas. We asked to be seated in the bar area, but they still put us at a table right in front of the toilets which was kind of a bummer and really dictated the vibe of our visit. Hard to eat when looking at the door people go in to relieve themselves... We shifted our chairs to the other side of the table so we could flick the other direction. Well, this place is very similar to the former business. It is not quite the same and didn't really do it for me the way the other place did. Colt barbecue was hard to pass up, but I think this will not become one of my regulars when visiting PRESCOTT. read more

I believe this is Prescott's best BBQ. Talking with the manager, she explained the new direction and menu with a new pit master. The flavor profile was on point with the starters. Having the Twinkie's and burnt ends pork belly was very good though the burnt ends was a tough chew. Easy fix I'm sure suggesting adding a burnt ends quesadillas to the menu for the tough belly and scrap smoked meats. Otherwise, had a pulled pork sandwich with slaw, very good all around. I can't wait to go back!!! Saw they had these smoked Texaz Twinkies and had to go try them. I got 2 huge ones for $6.95 couldn't even finish them. It's a jalapeño stuffed with brisket, cream cheese, and wrapped in bacon. I can't wait to go back and try their jalapeño cream cheeseburger and several other things on the menu atmosphere is cute. Friday 1/30/26 First time here since it changed over from Colts much better service I had half a rack of ribs and brisket my girlfriend ordered brisket, beans and salad and I had two beers and she had a Coke ambience so great service was great The salad has a lot of weeds in. Awesome fun venue with fantastic bacon wrapped prawns, healthy big serving when you're 2 meat combo arrives. 1/2 slab ribs + 1/2 lb perfectly smoked tender brisket. Ribs were good, little too much cumin and could have been sweeter like our local @aptosstbbq ribs. Friendly helpful servers were very attentive during a busy Friday nite dinner time. Chill rustic decor inside was relaxing for a bbq joint. Lots of new outdoor seating areas were being completed, looked like a fun place to hang when they open that area. Stopped in to try the new place in town. The staff is efficient and friendly. The decor has a doc holiday vibe, with plenty of inside tables and ample bar space. At the moment there is still work being done but it looks like there will be a large patio area in the future. Parking is street parking or use the parking garage on the corner of Goodwin and Montezuma. I have attached pics of the menu to show the variety. We started off with margaritas which were good. For appetizers we had the Texas Twinkies. Very good. Heavy on the brisket so definitely get it to share. They could fill you up. The heat was minimum but the flavor was not. We also tried the fried pickles. They are pickle spears an have a nice heavy batter. We split the six shooter as it is a lot of food! Unfortunately they had run out of turkey so we substituted for pulled pork. The Texas toast is very good! It has a crunch, full of flavor and soaking in butter. The ribs were over cooked and very dry. The pulled pork was delicious. Very moist. We chose the rich brisket and it was very good! Moist and flavorful! Jalapeño cheese link- Good, no heat and not much jalapeño flavor They have 4 bbq sauces ( all available right at the table) Doc's house bbq- nice, no heat basic sauce Sweat Heat- Our favorite, a little heat that builds but isn't too much. Great flavor and goes with all the different meats. Az Tangy- ok Hot Habanero- our second favorite, good flavor, a little heat but not overly hot. Ended the meal with a glass of Knob Creek Smoked Maple whiskey, on recommendation of the bartender. Highly recommend!! Smooth and so good!! They have a very large selection of whiskey. We got in right away and sat down no waiting great service great food good atmosphere. I got a margarita at lunch and I'm not sure it had any alcohol in it. I never felt it. I am just really sad they changed the Mac and Cheese to more generic looking version. They also pulled out the off set smoker and now I can't smell the barbecue from the streets. I guess I just miss the Colt Grill I wish they did not commit those crimes. Food is more expensive, and my favorite burgers are gone. Chicken sandwich was a bit weak, and smaller as well. REVIEW UPDATE: I ordered takeout last week. The phone ordering system is AI and sounds human but is a bit glitchy. It requires payment before submitting the order, and "she" tells you so up front, but no prices are mentioned until you get a receipt via text (~10 minutes later - I was halfway there). I asked her to repeat the whole order to correct details (I wanted a side salad with each entree), but the text receipt showed a side salad for one ($6) and a house salad for the other ($12.95). I called while en route to try to fix the order before it was filled, but she transferred me to voicemail, where I opted not to leave a message, figuring I'd eat the large salad the next day. Upon arrival, Louis had my order ready. I recounted the AI story, and he was responsive. I accepted the tech was evolving but suggested it could be tweaked a bit and thought it would help if prices were cited during the order or a total given at the end. Louis agreed, gave me a business card for Damian Hartze, Director of Operations, and told me Damian would likely call me. Damian called within the hour, apologized for the AI glitch, and offered a discount on my next order. He told me to call his personal cell when I decided to take advantage of the discount. This evening, I called Damian, who gladly agreed to arrange things but asked me to make the order in person at the restaurant with Louis. During my short wait, Damian greeted me and thanked me for my business. I thanked him for going the extra mile to ensure I was satisfied. This is excellent customer service, and we will continue to patronize Doc's for this reason and also for their delicious food. Thanks, Damian and Louis! read more

We came on a busy Saturday night. We figured we'd have to wait to be seated, but we were surprised to be seated right away That's where our good luck stopped. Doc's is very similar to the previous Colt barbecue with a few changes. You now sit down and order at your table instead of ordering and then sitting down. If you are going on the weekend, I would suggest trying the dinosaur rib, it is 1 pound of beef rib and is awesome! If you can eat the whole thing, I'd be surprised. read more

1st timer review! Solid 4 star BBQ!!! The "Brisket Cheesesteak was delicious - Smokey, tender beef, thick and super flavorful - see the photo - if it doesn't make you salivate - check your pulse!!! Wife had the burger and it's in the top 5% of burgers she's had here in Prescott! Haven't tried the bar yet - but the iced tea was very good. Their BBQ sauces are awesome - really like the Habernero and the Sweet Heat both VERY Good (100% YUM!) Tried the beans and sweet potato fries (small complaint - you need thicker sweet potato fries) wedge or criss crossed is my recommendation. Beans were very tasty. Tried this new restaurant for the first time. It's a casual restaurant with a nice bar and tables inside. Unfortunately, they do not take reservations so you may want to go early cause this place does get packed rather quickly. They have something for everybody on the menu from poultry pork and beef and for those that are trying to stay healthy they do have salads. The menu is straightforward and easy to read, and our waiter did give us ample amount of time to decide what we wanted to order without rushing us.. The staff were all very polite, professional and kind which made the dining experience much more enjoyable. So excited about another bbq restaurant which we visited yesterday. A few suggestions. The ribs feel off the bone which I liked but didn't have any where to place the discarded bones. Need better napkins plus it would be nice if a small wipe was supplied for our fingers at the end. Hubbies smoked turkey sandwich was difficult to eat as so much was pilled on. It's amazing that this opened quick enough, we desperately need a better BBQ restaurant. Doc's BBQ is impressively THE place in Prescott! I ordered the brisket sandwich, wowed with the meat piled high, extra juicy and tender with every bite. It's an awesome match with Doc's house sauce. The brisket plate is perfect as well, the side of potato salad much preferred vs. the coleslaw which was too bland for my taste. Earl provided efficient service, friendly and orders speedily came to the table. What's not to like about this place? We had lunch here and we were very impressed with the quality of the food and service! We sat on the spacious patio because it was a beautiful day in Prescott. We ordered the "Six Shooter" as it is a sampler of their BBQ offerings and everything was delicious!
