Sadly, another fail for Utah trying to do Chicago cuisine. Not the worst by the way, but sure to disappoint any Chicago expat looking for a fix. Ordered the Mr. Beef with hot peppers, dipped. Arrived promptly, barely luke warm in temperature. The bread was completely wrong and ended up a mushy & doughy mess. These two things pretty much kill the experience. The roast beef itself was actually fairly good. Taste wise, the meat was similar to what you'd find at Portillios (versus i.e. Al's or Rosati's). The texture revealed it was slightly overcooked. The giardiniera is homemade and I really enjoyed it (other than it being fridge cold instead of getting warmed by a piping hot sandwich). The staff were awesome and asked us what we thought. Formerly great, this place has gone down hill. Formerly I gave this a five star review. As a loyal follower since their opening in 2012, I used to visit Cubbys a minimum of once per week. Because of a dozen consecutive bad experiences, I have not been back in over a year. Their downfall was a portion control change. I used to be able to order the Tri-Tip salad and it was filling and hardy like a healthier version of a Cafe Rio salad. Now it resembles an extremely light Zupas salad with little meat, little flavor, and a dusting of toppings (if they remember them). I'm not sure if this drop in portions was due to a cost issue, training issue, or simply they decided to market to a different crowd. At first I thought they were just training someone new or that perhaps I had gone to a bad location until one day I compared a current salad to a photo I took a few years ago and the contrast was undeniable. I would have gladly paid $2 more just to have back the flavorful and filling salad that made them great in their first four years. read more

great new spot in lame Provo. I was visiting some friends down there and we headed to Cubby's. Holy deliciousness! I had the main tri tip sandwich and it was incredible. That together with their fries and that nice kind of aioli sauce was enough for me to give them 5 stars. their service was great and fast. My friend has their salads there all the time. First time being here. Everyone told me how AMAZING this place was. Honest truth, not impressed. The guy taking our order looked like he hated his life. I got the "Che" burger (double) for as many ingredients as it had, not super tasty, and meat was dry. Wife got a salad, good amount, but no flavor to it and literally NO dressing on it. Eh, I think Cubby's is good, but doesn't meet up to all the hype around it. Their menu items are a bit more expensive than I think matches the actual quality of the food, but my guess is they are using fresh ingredients which drives up costs. So while fresh ingredients are great, I wish their food would be a bit more memorable. I will say though that I do enjoy their Tri-Tip sandwich, and they have a great chipotle fry sauce. Atmosphere is clean and rustic at the Provo location. It is more modern at the Spanish Fork location. read more

I honestly don't know how I am just now sharing my opinion about Cubby's!I love it and everything about it! Their Tri-Tip sandwich is a game changer for sure! I love everything about it: it is huge (you can opt for the smaller choice), filled with tender bits of chopped tri tip, loaded with flavor (you choose the sauce you want on it), all between a huge toasted roll. Cubby's has really exposed a market niche here in that I don't really know of any other establishment in Utah where a big tri-tip sandwich like this one is offered. If tri-tip isn't your thing, they have so many other options whether it be a salad or a sandwich, I can guarantee you can find something you will enjoy. And whichever sandwich or salad you end up ordering, don't forget to order some of the best sweet potato fries around! They are really just delightful! I love the atmosphere and overall theme of the interior! It is "casual" dining so you order at the counter and then find an open table. Don't get Cubby's at the Jazz games. We ordered a couple of burgers and the buffalo fries. The fries came cold(ish) and limp and had almost no buffalo sauce. We also ordered a $4.50 Dasani. They were out and offered us a cookie with tap water instead and then also told us to come back for refills if we wanted due to the circumstance. We thought this was nice but when we came back for a refill they told us they don't do refills. When I protested, two of them literally pointed me away in a dramatic attention-grabbing gesture and then rudely told me to post a complaint if I didn't like it. So I am! read more

I have to start off by saying that had the prices not been so high, I would have given 4 stars. It was really hard to stomach paying over $10 for a foot-long, knowing that my wife and I could have gone to a sit-down for lunch for the same price (and food that was just as delicious). Less food for more money isn't a good marketing pitch. Now, on to the food... My wife and I each split a tri tip sandwich and the Mr. Beef. I LOVED the tri tip sandwich! The meet was cooked to perfection, and the flavor was insane. The sauce got all over my fingers, and I couldn't help but lick it off. As mentioned above, a bit expensive for the portion size, but still tasted great. My wife liked it, but not as much as I did. Just a preference thing. I thought the Mr. Beef was good, but it wasn't my favorite. My wife really enjoyed it. Again, it's just individual preference. We both agreed that it tasted like beef stew on bread. Both my wife and agreed that the bread was not up to the task on either sandwich. It was good, but it was far too soggy. A firmer, larger bun would be a much better option. We also ordered a side of the Blue Cheese Buffalo Fries. The fries themselves were kind of standard, similar to In-&-Out. The Blue Cheese and sauce was delicious, and that is coming from someone who doesn't usually enjoy blue cheese anything. The portion size was good for the price. Not the best fries I have ever had, but still very good and worth a try. I really liked the atmosphere. Kind of a modern rustic dive, if that makes sense. There is very limited seating, but it wasn't too crowded when we went. The owner was extremely nice and helpful. I really appreciated his enthusiasm. I would warn you to avoid using the bathrooms. You actually have to leave Cubby's to get to them, as they are shared by other stores in the building, and they were nasty! read more

First time there today, had heart attack special. Sausage and beef. It was a giant link sausage wrapped with sliced beef, dripping in veggies and sauce of some kind. It was really good however my dry cleaning bill is huge. Shirt, sweater, and pants all with big stains. And I was careful. Next time in I'm wearing a hazmat suit. I'll go back and soon. I was pretty pumped when I went back to Provo and saw this new place had popped up with good reviews. In the end, it wasn't as great as people had been saying. I got the tri-tip sandwich and sweet potato fries. I felt like the sandwich was just ok--the bread was a little dry and there was nothing amazing about the rest of it. At $8.50 I was expecting a little bit more, size wise as well. The sweet potato fries were actually very good, especially with the chipotle fry sauce, so ask for some of that with your order. If I still lived in Provo I might go back and give it a second chance and try a different sandwich, but since I'll only be visiting, I'll be choosing other places I know I like or haven't been to before. read more

I really enjoyed this place. We came on a busy weekend evening, right during the dinner hour, and it was packed. Surprisingly, the line moved pretty quickly, and didn't seem to bother me much. Perhaps I was soothed by the creative decor, and the up-tempo atmosphere. Once you order, you find a place to sit, and they bring the food out to you. Even with it being so busy, we found seating at the window, which was still comfy. Yet another surprise. Food was good too. I loved the sweet potato fries, like everyone else, apparently. The dressing was amazing! I'm a big fan of cilantro lime on steak. The atmosphere was a little loud and the sun was blasting some of the seats at our table so I bumped the rating down by one star. I like the almost soul focus on beef here. And most of the menu items have a bit of a twist on normal beef sandwiches and salads, especially the tri tip or beef dip sandwiches as just an example of two of their items. The tri tip is the best of the two sandwiches I've had here. Love the addition of bacon and a garlic butter drizzle, though I confess I had a hard time discerning the latter. My one critique is the barbecue sauce, which is good, should be mixed deeper into the sandwich and not just drizzled on top. The meat was a little dry down deeper into the sandwich. But a tasty sandwich all in all. The beef dip was good as well and comes pre dipped which is interesting. Personally I'd prefer to do it myself with a dish of au jous. But it was fine this way--didn't detract at all from the sandwich. They add some spiceness to it with peppers and onions added in proportion to the amount of spiceness you request. I wasn't sure at first if I liked spicy beef dip but it grew on me later especially since the au jous was a little bland. Not the best beef dip I've had (go to Bailey's on State Street in Orem for one of the best) but acceptable nonetheless. The meat on both sandwiches was lean and had good flavor, but was perhaps a bit dry. The bread is apparently home made and is quite good. My friend I came with reported the tri tip salad was one of the best salads she's had. She was praising the thing the whole time she was eating it, so apparently the salads are pretty good too. The sandwiches are reasonably priced and will fill you up. Ladies will enjoy the good looking male staff behind the counter, and the friendly service will be appreciated by all. Cubby's is the best. The menu isn't too pricy and the food is so good. If I could eat cubby's everyday I probably would. There is great variety and I've never had anything I didn't like. I recommend the dragonslayer burger and then some sweet potato fries or Rosemary fries. I wish they had milkshakes but I can deal with no milkshake because cubby's is really just that good. There are rumors that cubby himself lived in the back room of a restaurant in Chicago to learn how to make food this good and this authentic. This is an update to my earlier post. I honestly wanted to love this place so I told everyone about it, even requested a gift card to this place for my birthday and finally was able to go back yesterday to try something new. Unfortunately the "Original Mr. Beef" did not live up to the the standard I set at the earlier visit. I got the Boy style sauce and the wet option. Let me explain, the meat had this sort of gamey taste to it, seemed like no seasoning at all, they added some vegetables on top, which was a nice attempt of getting vegetables into your diet, but they didn't compliment the sandwich at all. Then they dipped it, just like it says, into their "secret sauce" which gave the sandwich a musty BO flavor and left the bread completely soggy, to be honest it was quite disgusting. Overall I was extremely disappointed, I thought I had finally found a place that was decent & local with everything on the menu being above par, guess I was wrong.
