    let's just say that this filled me up with so much food i didn't eat for the next 22 hours…read more for the price (only 12 dollars) that's a ridiculous portion size where to even start these seemed to be soft tacos, but with a full melted cheese covering on both sides of the shell i would say that's my only slight disappointment - that these weren't really crispy at all - there was no real crunch when i would bite into one of them - rather it was just slightly harder than a soft taco the cheese did add a great flavoring to the outside though - making this more than a normal taco shell each taco was absolutely overflowing with stuffing - it got to the point where the plate became another full meal by itself from everything that fell out of the taco the two main components of each taco were the cheese and the chicken the cheese was so perfectly melted - may have been the best cheese in a taco i've ever had it created such a satisfying cheese pull every time you took a bite - and it was one consistency throughout, meaning every time you took a bite you had to pull the cheese away from the rest of the taco - which was just fantstic as for the chicken - i was slightly disappointed that it wasn't spicy in the slightest. However, it still tasted like it had a really nice flavor, and had a soft interior. It being actually spicy would've moved this dish up a lot, though each taco was primarily made out of this chicken - and there was so much of it it was practically insane - but I loved this amount shoutout to the onions as well - they were great I asked for the habanero sauce - which i thought was ok - wasn't spicy at all and didn't add much flavor. will go with another sauce next time tried mixing in some taco bell fire sauce which was interesting i love that these came wrapped in aluminium foil to preserve heat. a great touch overall, as far as taste, these were pretty good, but when you consider the amount of meat you're getting, along with overall portion size - it's simply a fantastic meal.

This was not during a busy time at all. I realize this is a hometown Seattle favorite and more power to the die hard fans that love it. It's just not for me. I'm sure Dicks could care less about my comments. I wish them continued success in the generations to come.

It is delicious and it looks like it could be a buttery crisp French pastry of sorts even though I realized it was most likely just crisped up. The burrito I ordered is very interesting. It tasted more like a chicken pizza or a Mexican style fry bread. The burrito has feta and mozzarella tasting cheeses and the burrito is less burrito tasting and more cheese forward. The inside of the burrito is shredded chicken and whole beans which makes this burrito filling and the portion is generous. I don't mind this as I'm taking this place as fusion. If you look at the menu they specialize with Birria and this makes sense if it's the same tortillas used. The options are odd but they are eye catching like ramen birria. I look forward to trying their specialty soon. The salsas are really nice and mild and they give the right amount of kick. Seattle prices are astronomically high. Even for a burrito it came out to $19 with tip. Nothing to do with this food truck but it's getting crazy out in PNW. Service was fine and quick. The ambiance is more of a grab and go and not somewhere where you want to eat in a parking lot. It's is way better than burrito California on the ave and a refreshing departure from corporate burrito flavors at Chipotle.

They have tablets to order from, QR codes, and of course you can order straight from the food truck. I really liked how the tablets also offered common modifications, so the egg on mine was easy to order fully cooked through. I didn't love how buttery the caramelized kimchi was. It completely takes away from the flavor, so all I really could taste was butter. Kimchi aside, there are so many generous toppings and it really compliments the salty meat and seasoned rice. They also have a big condiment tray so you can even top your food with extra pickled veggies, sauces, and the like. My kids devoured the rice. Their packaging is fully compostable or recyclable. Wonderful addition to a fun, family friendly brewery!

I feel like I could create an entree just with items from the sauce bar. The symbiotic relationship between food truck and brewery has to be an ideal pairing, otherwise it just won't work. Mexican Seoul and Project Nine are meant for each other. But I wouldn't be surprised if this little food truck emerges from its cocoon to become a full fledged butterfly eventually. This one was pretty much just a regular soft taco with beef inside. I wasn't a huge fan of the taco shell, as it was a little soft. In terms of the filling, I did really like the amount of beef in there, but I thought it was kind of dry and chewy. The beef being like this was something I noticed in all 3 tacos - but it was the most noticeable in this one I really liked the quesabirria taco - that extra layer of cheese did so much for the flavor. For one, it provided another layer between the taco shell and the cheese, and second, the cheese itself was really good and there was a lot of it. Because of this, the beef inside just tasted better than the regular birria - and the shell on the outside didn't feel as soft as the first one. My favorite of the three was the mulita, which came as two small tortillas with the filling inside. the reason I liked this the most was because it was the crispiest of the three - there were actual crunchy parts to this tortilla that weren't there in the other ones. This one also had cheese like the birria, but due to the slight advantage in crunchiness it's my favorite Of course, what really brings this entire meal together is the consommé. This is just absolutely fantastic - and is the best part of the meal by far. The broth is salty, flavorful, and just adds so much to everything it coats. When dipping one of the tacos in it, I would let the consommé wash over the beef that remains, essentially liquidifying it, and this made the beef so much juicier and changed it from dry to flowing with the juices of the broth. It's hard to describe how much this enhanced the two tacos and the mulita. There's also a pretty generous amount of it Another thing I have to mention is the spicy salsa - which was incredibly flavorful. really loved that The only thing I would really say as a negative (other than the beef that I mentioned before) is that these tacos/mulita really aren't crunchy at all. I wish the tortillas would've been fried more to really get that crispiness that I prefer in tacos - an oil coating on the outside would've also helped. I also usually don't mention this in my reviews, but the person at the front desk was amazing! For the price of about 15 dollars, I would say this is relatively decent - however, while the portion size looks big, it's not really that filling
