A Ma Chicken puts out a really solid Hainan Chicken Rice. If you are familiar with the dish, you know the chicken quality makes or breaks it, and theirs delivers. The chicken is incredibly tender and there are some nice fatty pieces in there that add a lot of richness and flavor. Exactly what you want from a proper Hainan chicken. It comes with two sauces and both are delicious. I personally felt like it was missing a soy sauce component, but then again the ginger sauce does a great job of tying everything together so I get why they went that route. Small thing overall. I did takeout and the whole process was quick and painless. I really liked this spot! I didn't realize it was so popular too. I came for lunch on a long weekend and we had to put our name on the waitlist. The inside isn't too big but there are plenty of tables, and we waited around 15 minutes before getting seated. Great place when you're craving Hainanese Chicken. I had the combo chicken rice, which comes with your lighter Hainanese chicken and fried chicken. The Hainanese chicken was so tender and almost pure. It had depth and complemented the chicken fat infused rice. It's a nice balance and you can dip sauce into it if you like more intense flavors. Would recommend ordering the poached chicken here (as is typically recommended), but we tried the fried chicken as well. Note that the chicken flavor in the rice is slightly weaker than some other chicken rice restaurants, but I think they do this because if you add any of the sauces they provide it really brings it out (plus you can always use some of the soup if you want) so you can season it to your taste. We seated ourselves outside, and got a couple of laminated menus before ordering at the inside register (the food is brought out to you). It's a very focused menu, with either a chicken rice set or noodle soups. They have hainan chicken here, called the classic chicken rice ($19). It wasn't good, with the rice being overwhelmed by garlic flavor, instead of tasting like chicken broth/fat simmered with aromatics. The chicken was poached (like it should) but wasn't as delicately flavorful as what I've had at other Hainan chicken places. The crispy chicken rice set ($19) replaces the poached chicken with crispy deep fried chicken, and it tasted fine, albeit the same situation with the rice. We also tried their Cambodian noodle soups: Phnom Penh Noodle Soup ($19). The pork broth was good, obviously having been made from pork bones and expertly prepared, not needing any condiments. It came with various meats, including liver and heart, which adds a bit of mineraliness which I like (in moderation). The full dinner plates come with 3 sauces, small side of pickled veggies and a chicken broth. The small bowl of chicken broth was very soothing and complimented the meal well. The hainese chicken had enough meat on it and perfectly soft. The chicken noodle broth is different from the broth that comes with the rice plates. It was excellently infused with garlic, very flavorful and heart with chicken liver and more. The reason why I had to deduct one star was because of the side items. The rice was not fragrant enough and the scallion ginger sauce was overpowered with ginger which is not how it should be. I also wish the sweet chili sauce was a bit sweeter.
