[[HIGHLIGHT]]Love the decorations and super cute vibes.[[ENDHIGHLIGHT]] The waitress was very sweet and attentive. Overall the food was very okay and didn't taste like much. We got tacos, chicken fajitas, and chicken quesadillas and all felt they were pretty flavorless. We also got some chips and queso which we were very grateful for and put on each meal.

The food was okay, nothing too exciting. The restaurant was packed when we arrived, and the service was average. The nachos were decent, but my achiote chicken bowl was so bland--it looked better than it tasted. For some reason, my bowl was a bit watery, possibly from the lettuce. [[HIGHLIGHT]]The ambiance was loud and had a typical sports bar vibe.[[ENDHIGHLIGHT]] Overall, just okay food.

It's been years since I've been in here. We decided to stop in for a last minute dinner with our little. Interesting customer service and the place has had a face lift since I've been. When we entered, no one was at the hostess stand. A server walked by and asked if we had been helped yet. We said not yet and they kept walking. Oh okay lol. Then a gal asked if we had been helped and we said no not yet and that we'd love a booth (they had three open). She looked at them and asked to wait. She circled around the restaurant and looked at all the tables. When she came back, she sighed and said come on. Not sure if we came on an off night, but not friendly staff. The margarita was on point and the food here is very lack luster now. Not what I remembered at all. The chips are thick and taste like oil. The guac is okay and the salsa was the highlight. My husband has a smothered burrito and said it was good but nothing special. I had the steak and shrimp fajitas. Definitely not the way to go. My steak looked gray and pepper was the only seasoning on them. Same with the shrimp. Nothing sizzled and there was no char on anything, literally anything. Super basic mountain "Mexican" food. Again come for the margs and maybe an app. Then hit up another spot for some main courses and better service. I wish this was still as good as I remembered.

Food: 3/5 kinda small portion size for the burrito and my salad was missing both beans and corn, so that was a bummer. Drinks: 5/5 the margaritas were awesome and decently priced for the bigger size! Service: our server seemed like she was figuring out the tablets but she was so sweet and helpful regardless. All in all not a bad place to stop! The food was not amazing but I'm not too picky and would go back here again/

Fantastic tacos! Great Margaritas and Great service! We got the chicken tinga tacos but I've had their vegetarian chili before and shrimp tacos and both were good! Start off with chips salsa and guacamole- it is very good!

I give this place 3.75 stars, which I'm rounding up to 4 stars. Why? Well, it's definitely worth checking out if you like Tex-Mex, you like to drink, and you are in the area... just don't be expecting an award-winning experience. What you will find is fairly good food, a fun and friendly wait staff, and drinks galore. Note, I went to Coyote twice on a recent vacation to the area, which gave me a solid feel for this place. So, this review is not for some one-off visit. Here's a break down of my thoughts: FOOD - Try the guacamole, the queso, the chips and salsa (complimentary), the chili relleno, the tacos, and the rice and beans. The salsa was a bit spicier on the second visit than the first, but it was definitely super tasty! The chili relleno was unique in that each chili was wrapped in a tortilla; be sure to get the green chili pork on top! Skip the burritos. They are just okay and kind of small, actually. Some of the photos on Yelp are a bit deceiving, but look closely and you will see what I mean. DRINKS - This was the most disappointing part of Coyote for me. I felt that, overall, the margaritas were just too sweet (I tried a couple of different varieties). Our waitress informed us that the bartenders make their own mix; however, for me, the mix was too sweet and too limey. Not that I'm necessarily a margarita snob, but I do know a good 'rita... and, to me, the ones at Coyote are just meh. Some of my dining partners did order the spicy margarita and said it was less sweet and more satisfying. So, perhaps I'll try that if I return. My final note for you is to NOT order the large size margaritas; you get the same amount of tequila with just more mix - ugh. SERVICE - On both visits, the servers ruled! This aspect was definitely a highlight of both visits!! All of the staff we encountered were attentive, knowledgeable, and fun! One last thing I'll mention is that Coyote had great Happy Hour specials for apres ski time!!!

The Margaritas were top notch tho. Fiesta offers flavors like peach, mango, strawberry, and even huckleberry. We opted for Don Julio Silver and it was delicious. The Sopapillas were ok. Not overly sweet but not a fan of the extra whipped cream topping. Another bonus was that the telly's were broadcasting the Broncos game, so we didn't skip a beat there (and neither did the Broncos!) The down side: service and cleanliness. Food on the floor, under the tables, and the seat benches had rips and tears. It was hard to find a comfortable spot to dine. On top of that, our waitress wasn't super attentive. She did not offer water refills or second round of drinks unless we flagged someone down....when we could find someone. The Lookout bar is located in The Westin and on the top floor with stunning views. We were first greeted by the host Hal who couldn't have been more friendly and helpful. The only negative about the martinis would be the glasses are smaller than what martinis at most other places would be served in so it is simply a smaller serving. However, the wine was a generous pour. For bites, we ordered the Pimento Cheese which was served warm with baguette. So tasty. The beef + blue toasts. This was okay but not our favorite. The burrata salad. Very refreshing and delicious. Since we were not staying at the Weston and had to valet, they were kind enough to validate our ticket. I would definitely recommend stopping in for a drink and experience the beautiful views and delicious drinks and small bites.
