We walked into Chili Verde in Polaris thinking it was going to be just another chain spot--but wow, were we wrong. This is a warm, welcoming Mexican restaurant with beautiful décor that instantly makes you feel at home. The bartender was amazing--super friendly and mixing up some of the best house-made margaritas in the city. Perfectly balanced, refreshing, and the kind of drink you come back for. If you're a fan of fresh-made, thin chips, this place will be your new go-to. The real standout for me was the green hatch chili crab cake--unique, flavorful, and unlike anything I've had at other Mexican restaurants. We went all in on the happy hour menu and honestly, every single dish was fantastic. As we sat at the bar, plate after plate of sizzling fajitas kept coming out, and you better believe that's on the list for next time. Chili Verde completely exceeded expectations, and we'll absolutely be back to keep exploring the menu.

UPDATE - We've been here dozens of times and it never disappoints. They have some new items on the menu and we had the New Mexican Big Bowl and it is BIG and amazing. It easily feeds two, maybe three! I brought a lot of it home. You build it yourself from a large number of options. We also ordered the New Mexico Classics tamale and you can customize it with sides. In our case we had a taco and the sweet corn and tots. Their side of tots is HUGE! Look at the picture!! And they were so good. Great service, good prices, parking is always good. Go there. I mean it.

Stopped into Chile Verde after over 19 years! Compared to the last visit, they're in a great new location - complete with outdoor patio seating! Same great food I remembered and apparently the same owner! The service was wonderful and it was a great experience!

Met up with family here, who love this place. We were in from out of town, and thought it was great too! Delicious salty chips, and their homemade apple salsa (changed every week, I believe), was really good. My skinny marg was yummy and the service was fast & friendly. Definitely a step up or two from a "typical" Mexican restaurant. The front patio area was cute too, with plenty of umbrella coverage from the sun. Part of the front window area actually opened up onto the patio.

We were regulars at the original location on Sawmill Rd but were too lazy to go to the Polaris location. We happened to be up there and stopped in for dinner. We quickly realized how much we missed the food here. It is definitely the best Mexican restaurant in town. The margaritas are delicious. Food portions are generous and chips are endless!!

Going in sequence, the chips and salsa were good. There was a typical red salsa with a little kick, but then there was a watermelon salsa that was the perfect, lighter, sweeter complement. The spicy mango margarita wasn't it for me. When I get margs, it's usually a house (lime) on the rocks with salt rim. I'll stick to my go-to next time. We were there for brunch and the sopai-pillows were nice. Light in weight and in taste on its own, but the accompanying cup of honey for dipping helps the replay value. I ordered my breakfast burrito with chorizo and green chile sauce, and I didn't regret forgoing the alternate choices of bacon and red chile. A solid dish. With everything else that I had, there was enough burrito for leftovers which I appreciated. My wife and I sat inside, and the open windows/doors leading to their patio created a nice ambiance, almost good enough to make you forget that you're surrounded by a suburban mall. I took a few bites of her Sandia Sopapilla. We agreed that the shredded beef was nice but the sopapilla (just like its aforementioned appetizer counterpart) didn't really add anything. I'd be open to trying this New Mexican themed chain for dinner, but I'm not exactly prioritizing the trip.

Very friendly, efficient and timely service from the host to our waitress despite the fact that every table was full. We tried brunch on Easter (made reservations) and it was fantastic! We each had different dishes-- Green Chile Stew, Three Sisters (I asked for a combo of chorizo and beef and they said, "Of course!"), Sandia Sopapilla with shredded beef. All were excellent and were attractively plated-- it wouldn't have mattered, but it was those little extras that really elevated the experience. We were also given a bowl of their latest salsa to try-- sweet and mildly spicy watermelon! We are regulars here and always enjoy the food and the pleasant ambiance, but this brunch was truly exceptional. We ended our meal with a plate of puffy Sopapillas with honey to share. Delicious! **This is New Mexican and NM-inspired food, not the same as Mexican or Tex-Mex.** If you're not familiar with it, you may ask for samples of sauces and meats before you order! NM cuisine is less about piles of cheese and taco shells and more about the flavors of their regional peppers (which they fly in fresh here!). It's a blend of Mexican, Spanish and Pueblo Indigenous foods, not American-Mexican. And yes, you still get great chips & salsa, but you're going to want to pass on the refills to make room for the stars of the meal-- the e

First timer here! It did not disappoint. I have to say that spicy beef is no joke! I would add a business tip on that but Yelp is doing away with those. The rice was delicious, I would absolutely recommend. The service was great and appreciated the menu suggestions. The atmosphere was nice for a strip row restaurant and business block. Inside had a nice, respectful, Native American influence. I had the Spicy Beef Chimichanga, with queso salsa and chips. The regular salsa was really noteworthy too. Definitely a spot worth checking out!

Terrific food, margarita's and service at a price point that didn't break the bank. We had 2 entrees, 2 cocktails , chips, salsa and queso for $65. Not inexpensive but a waaaay better value than most places. Well done.

Hadn't been to Chile Verde in a very long while when I decided to venture there on a snowy January night, and I was glad I did. The place is warm and welcoming (the host seemed to know many people personally, this place clearly has its loyal patrons--many families with children), but I was very glad I'd made reservations online, because it was also packed and there's almost no room to wait inside. Even in the packed restaurant, our booth table near the bar area had a nice intimate feel. Servers were all very friendly and prompt. The menu has great variety: some Mexican classics (enchiladas, chimichangas) and other entrees with a Southwestern flair (burgers etc). Prices are reasonable. I ordered the BBQ quesadilla; the Anasazi BBQ sauce was excellent and elevated what would otherwise have been a kind of basic quesadilla. My partner ordered the fish tacos; they were good, but slightly bland (we realized toward the end they seemed to have forgotten one of the promised sauces). The chile con queso was great, and the chips were perfectly crisp and salted (not too much, not too little). Nice casual night out.

Food portions are very large (next time I'm sharing!). Service was friendly and quick. Casual, clean, contemporary Mexican Sante Fe style food. Very nice patio seating.

Let's start with the pancake balls. The signature dish is absolutely out of this world. You can get them filled with Nutella, dulce de leche or Apple/Pumpkin butter. These little morsels of goodness are worth the trip alone. We also had the Pueblo BLT Sammy with the sweet and spicy bacon (that's right this is a thing that must be tried to be believed). This sandwich was so good and don't sleep on the homemade citrus aioli - outstanding. Our table also had the hens in a basket. Eggs cooked perfectly and the bread had a sweetness to it that made it just right. OUTSTANDING FOOD! And we will be back

We were so excited, and all we could taste was the old fryer on l that clearly hasn't been cleaned or replaced in a long time. Literally tasted like rancid oil in every bite. We did eat it as carry-out, and I could have gotten over a little bit of rubbery-ness, as it is pancakes, but all 4 of us took one bite of a pancake ball and instantly spit it out. Really really bad... we spent over $70 and threw it all away minus the sandwich. The only reason this is a 2 star is the Latina sandwich was VERY good.

This can be tricky because there seems to always be out the door, but most patrons understand the assignment and turnover goes quickly. I recommend searching the current menu online so you are ready as soon as you get to the register. This place appears to always be busy and bustling with people. We ordered the Country Scramble, Pancakes, and an Egg Sandwich. Drinks were hot apple cider, hot cocoa, and a Blackberry Fizz. All the food was delicious and are def the highlight. There is self serve coffee and soda(and water I believe although the person who got up to investigate for our table couldn't seem to find it). Honestly, the service is not my jam and why I dropped off a star. They seemed to be serving mimosas, wine, and Bloody Mary's in the line while you waited but the gal that was overseeing the area didn't really make eye contact so we didn't bother with that. Register was friendly and knowledgeable. But then the service gets tricky. There are no dedicated servers / bussers. Just people doing both. So many times you will find a group of people waiting for a table that needed to be cleared. We waited for the table to be cleared and no one was wiping the tables down, just removing dirty dishes. Our table was terribly sticky from the prior patrons but since you don't have a dedicated server, no one was coming back to take care of that. And lord help you if something wasn't right or you needed attention. We had no tableware or napkins and had to take them from another table. One of our meals took 10 more minutes than everyone else's so then our food was cold as we tried to be polite to the person who did not get food (but who do you inquire with?!). And if you wanted something else (another drink, or a pastry), you were going to have to wait in the line again. The food was good, but probably not a place I would return.
