    Sweet potatoes

This is my second time dining at chefs club and I have to say I've been really impressed with the food here. This is some of the best food in Aspen. They are bringing in some of the best dishes from around the country and they have great chefs perfecting these items. Both times I've dined at the Chefs counter, which I highly recommend as it's a beautiful open kitchen. Most recently I had the sweet potatoes to start, followed by the kampachi with miso and bok Choy. Both were excellent. Last year I enjoyed the croque monsieur and it too was divine. Prices are high, but this is the case at all nice restaurants in Aspen. Each dish here is designed by a different famous chef, so it's a very unique concept that comes straight from NYC. I believe it is a seasonal restaurant, so go while you can!

We came to Aspen for the weekend and decided to come here for Valentine's Dinner. The chef's set menu for the night was good but it could have been better in our opinion. The restaurant wasn't too crowded and it was nice sitting at the bar watching the chefs cook the meals. The risotto was my favorite. It was purple and tasty with lots of cabbage. The eggplant parmesan was delicious but the basil didn't have any taste. The pesto pasta was very cheesy and the basil was fresh. The Branzino was super filling after all the pasta, I almost couldn't eat it. Also the dessert wasn't spectacular, it was just okay. The tiramisu was frozen for some bites which was disappointing. It was a very nice restaurant in the St. Regis Hotel and I would recommend going for a light dinner instead of the $200 pre-fixed dinners they have for special occasions.

What a treat to experience Chef Tom Coohil's seasonal menu and to meet him in person! Everything from the boards to the small plates and desert were phenomenal. Great presentation. Wonderfully balanced and creative dishes and superb customer service. I HIGHLY recommend the Guinea hen entree and bread pudding!!!

So I guess this passes as a Entree/Main Course at Chef's Club. Good food, but portion size is pathetic. Won't be back.

I have been to this place before, and it was great. The food and service were actually fine. I ordered a Low Country pan roast, and the flavors were great. The problem was the portion. If you are going to compete with the other greats in Aspen, Pinions, Ellina, The Wild Fig, Monarch, etc. You will need to up your portion size. I would have gladly paid 10 dollars more for the entree, had it in fact, been an entree. Left feeling like they are being cheap. I will spend the same amount of money tonight at Pinions, and leave completely satisfied.

Interesting concept! - Food and Wine restaurant serving select dishes from a variety of famous chefs - Great way to try dishes from restaurants you want to try - Chef's Table was fun with views of the open kitchen - We had the option to do a la carte or prix fixe with visiting chef Bryce Shuman but opted for a la carte to try more dishes! Food: 1. Squash salad (Alex Guarnaschello, Butter) - was good, but not memorable 2. Octopus (Zoi Antonitsas, Jarr and Co) - prettiest dish of the night 3. Arctic Char (Marcus Samuelsson, Red Rooster) - better of the 2 fish dishes 4. Sea Bass (Daniel Boulud) - crusted in potato 5. Champagne Panna Cotta (Bryce Shuman) - from the prix fixe menu

Beautiful, subdued elegance in the open dining room. Chef's Club features a Food & Wine chef each year. Seasonal menus.

This restaurant at the St Regis...is everything a foodie restaurant should be. The dining room is visually intriguing with its eclectic mix of texture and color. The service...EXCELLENT. Our server's knowledge of ingredients, origin and preparation was impressive. The wine list under master sommelier Jonathan Pullis has so many interesting labels that it will take several dining experiences here to fully appreciate. The charred octopus is a MUST! I had the halibut and it was the best preparation ever. We skipped dessert on this occasion but we won't make that mistake again!

The Branzino was a bit of a disaster. The tuna and beef tartars and the pasta were very good - so was the wine. The branzino is salt crusted and meant to be uncased at the table. The waiter struggled to get the salt off the fish and tore the fish to pieces in the process. The fish was dry, shredded and looked terrible. Wouldn't normally complain like this, but it is meant to be a nice restaurant where things are really well executed. Rather than comping the $70 entree, they comped a desert. Seemed like poor damage control. If the restaurant feels this is unfairly representing things, please reach out.

Just finished the thanksgiving prefix meal! Almost everything was delicious! My favorite was the squash pasta, truffle chestnut bisque and the pecan pie. My husband loved the filet short rib duo. I got a seafood chowder that had what I believe was a white fish but I don't remember. Unfortunately it wasn't flavored very well. The broth was great but that flavor did not really get into the fish. The short rib was sooooo tender. Really well cooked. One thing that was weird was the gave us a candle with our desert... We were celebrating our honeymoon... But not a birthday. Not that big of a deal but kind of weird... Overall it was good. Be prepared to spend some money! We spent a little over $300 for two ppl with cocktails and a glass of wine. Service was very attentive. I want to try it again with their regular menu.

For some reason, I'm always a bit skeptical of hotel restaurants, but this place is legit. We walked in (with a reservation) and the hostess gave us a choice of a regular table or the chef's table. The views of the kitchen from the chefs table were great. It's always fun to see the pros in action. On to the food. Everything we had was top notch and cooked perfectly. We started with the highly recommended octopus appetizer. Then we decided to go local and had the Rocky Mountain Trout and the Lamb Duo. Honestly, we wanted try everything on the menu. Service was top notch, and we loved the famous chef portraits on the far wall.
