Personally, I prefer the tonkotsu for the cleaner taste. Their pork is tender and the noodles had the right amount of chew.

We got lucky and took the 6 remaining seats at the bar, but be prepared to wait if you're a bigger party. That said, the staff and bartender were very nice and service time was fairly normal. The drinks were yum, I got the NA matcha colada which I think was the best option out of the spirit free offerings. For dessert we tried the mile high miso pie which was very indulgent and a bit too sweet for us but very interesting combo of flavors esp if you love savory over sweet. By the time we were ready, it took a while to find someone to take our order. The most wanted item is sold out, a fact that they told us upon ordering. Will be appreciated if we know ahead of time so we have more time to consider 'back up item'. There was a table beside us (came after us) who also discussed about ordering same sold-out items, and I was very tempted to tell them that it's sold out. But I figure it's not my place to say because the restaurant must have its own reason for NOT telling this upfront!!?????!! Ordered pork belly skewer , shiitake skewer, shrimp in spicy peanut sauce, and aburi salmon handroll, miso creme brulee. Best items are the shrimp with spicy peanut sauce, and miso creme brulee. Just wow!! For the rest: -If u have eaten shiitake before (at home for example) , u know nothing can go wrong with shiitake as it's already flavorful in its own (safe choice). -Pork belly has good flavor but kinda too fatty (it is a totally different style from the one I usually eat at other places). -Aburi salmon handroll doesnt taste like aburi at all. Just normal handroll basically. Nth special. It was my friend's birthday, we asked if they hv noodle (considering we were farrr from home) and they said it's only available during lunch (which is understandable), but then nth else was done to help celebrate this moment when they hear this fact (simple smile or simple 'happy birthday' could be a gift in its own). Overall, food-wise, we agree on best item and that this place is kinda meh (in terms of food selection and feels like very few 'flavor-worthed' ones).

(The only other spot to ever pull this off for me is Verde Rekado in Coron, Philippines!). Cucumber Salad ($9.99 CAD): This was wonderfully refreshing and reminded me of lightly pickled Korean cucumber side dishes, bursting with savory garlic and umami flavors of fish sauce. Char Siu Marinated Tofu ($4.44 CAD): They managed to perfectly capture the iconic sweet-and-savory flavor profile of Char Siu pork without any actual "porkiness." The tofu was beautifully firm, perfectly cooked, and thoroughly marinated inside and out. The Nourishment Bowl ($24.24 CAD): This bowl is large, and I paired it was the Char Siu Marinated Tofu. The brilliant addition of a subtle coconut cream, paired with roasted vegetables and quinoa, perfectly softened the rough texture of the raw shredded carrots and greens; This combination elevates this bowl so that you don't feel like you're "just eating a salad" for dinner. Tempura Tacos ($17.17 CAD): These tacos were absolutely divine! Nourish restaurant has somehow mastered the art of frying avocados so that the batter is flawlessly crispy on the outside, while the inside remains warm, rich, and smooth. If I could eat these in Los Angeles, I would honestly never miss battered fish tacos again. Summer Shoyu Ramen ($22.22 CAD): Featuring a deeply comforting, hearty roasted garlic and soy broth. They brilliantly give the broth a slightly velvety, thicker-than-water body with just the right amount of oil. It completely tricks your palate into thinking it was simmered for hours with meaty bones, rather than being a boring, thin vegan soup. I wish we had such an amazing vegetarian restaurant like Nourish in Los Angeles!!

In the midst of everything. - Exterior: Small, but with an inviting outdoor patio. - Ambiance: Casual. A vegan/vegetarian restaurant with the look and feel of the 1960s and 70s. I was around and that's a good thing. - Menu: Creative and inventive. Who says vegans and vegetarians can't be delivered great choices? - Food: Unbelievably good and healthy. I ordered the Nourishment Bowl with an extra Falafel ($20) which had a variety of super ingredients. Filling and tasty! One of those each day and I'll live to 100. My wife had Tempura Tacos ($16)...a plate of 3 large and, of course, healthy tacos. So big she gave one away. Others orders included a Nourishment Bowl with extra Tofu ($26)...Cucumber Salad with Tofu ($17)...and Summer Shoyu Ramen with Tofu and Chili Oil ($30). Nobody could believe how good these were...especially with preconceived notions of vegan dishes. - Service: Very good. Our server, "PM", was friendly, informative and helpful. - Price and Value: Not cheap, but reasonable Cons: - Bathroom: As with many small restaurants, the bathrooms are shared with other establishments. No problem. But it was kind of far away and not the cleanest. - Parking: You'll probably need to walk a few blocks since the downtown core of Banff has many more shops than parking spaces. We then shared a Waldorf salad, which was refreshing and nice. Then we both selected red wine varietals grown in Canada. I had a Cabernet/Merlot blend which was super great. Would've never guessed it was from Canada. Next, My wife enjoyed a Pinot Noir that was light and complimented our entrée perfectly. Our entrée was the fillet and prawns served over a garlic mashed potato. This is an absolutely extraordinary dish. We shared it and it was just enough for two people. It is a full meal for one person. The filet temperature preparation was perfect. The prawns were extraordinary, and the garlic mashed potato made you curl your toes! Then we closed the evening with the melted chocolate soufflé, which was divine. Here's the one thing that they missed and to me it's an important miss. They use an automated system for taking reservations. And it kept asking for my name to which I said "Chris" and the automated system kept asking me what's your name!? So it asked hey fourth time and in my frustration I got playful and I said "Big Daddy." And it happily received my name and took my reservation. And then asked if there was any special occasion and I said yes my wife and I are celebrating our anniversary. I get that it may not seem normal to say "Big Daddy party for two". So I'll kind of let that pass because neither front door or upstairs Host was willing to ask. But what I don't like that was missed was our anniversary wasn't acknowledged. I was a server for years, and every host gave the server some type of chit or note to let them know if there is a special occasion. We specifically selected a higher end restaurant for anniversary. So somewhere in there, even if you weren't brave enough to say "Big Daddy for two." Someone still should've checked if you were celebrating any special occasion to which we were. Our anniversary. Our server was fabulous. She was super kind helpful and shared about her experience being in Banff. She made us feel great. My overall experience, the Mapleleaf is a great restaurant. But I'm scoring you an A- because you missed our anniversary. and that's why we chose you. So if you're going to use AI, you can't miss special occasions. Chris & Trisha from Long Beach, CA
