Pleasantly surprised by Chay Concept. This is a high-end vegetarian spot with an open kitchen that lets you watch the chefs in action, especially if you snag a bar seat. The space is stylish, the service is great, and the food is both beautifully plated and delicious. The cocktails could use a bit of refinement, but the creativity is there and I'm excited to see how they evolve. Parking nearby is limited, but if you're staying at the hotel across the alley, it's an easy win. Overall, a great choice for an elevated, meat-free meal in Bellevue.

I went to Chay Concept and had a mixed experience overall. I ordered the golden garlic and chili tofu and Thai iced tea. The garlic and chili tofu was the highlight--well-cooked, flavorful, and nicely balanced with heat. The tofu was crispy on the outside while remaining soft on the inside, making it quite enjoyable. However, the Thai iced tea was disappointing. It lacked the usual richness and depth of flavor and tasted watered down, which took away from the overall experience. The food felt freshly prepared, and the flavors had a modern Asian vegetarian touch. Overall, Chay Concept is worth visiting for dishes like the garlic and chili tofu, but the drinks could use some improvement.

We Tried Happy Hour at this Vietnamese Vegetarian restaurant last Friday. (4pm -6pm). The decor is very nice and tranquil. Seating area is a bit limited. About 6 seats at the bar, but you can enjoy the HH drinks and small plates in the regular seating area too. They have mocktails, for those who prefer non alcoholic drinks We ordered the crispy rolls, and golden garlic and chili tofu with a #2 spicy. Both small plates were very tasty. The tofu had a definite kick to it but was still enjoyable. The restaurant is very clean and well maintained. Servers were very courteous, attentive, and welcoming. On the street parking was easy to find.

It was packed, but glad we put in a reservation. We got bar seating, which wasn't too bad. Seats were still comfortable and you get to see all the action from kitchen to bar to dining room. We've always had low expectations for vegetarian restaurants, so we were quite surprised w/ the execution with the food here. Pumpkin and lotus seed soup was our fav - fragrant, umami, and whatever they put in there, it warmed my soul! Perfect dish from happy hour to get through this cold spell in Seattle. Others we've enjoyed: Pho rolls, crispy rolls, tom yum mushrooms (love the seasoning and the peppery flavor!), and papaya salad. There was something in the mango salad that gave me an aftertaste of dish soap. Maybe they felt rushed b/c of the number of orders that night, so the dishes didn't get wiped down fast enough. I'm sure executon gets better w/ time. My mocktail was a bit too sweet for my taste. Will certainly try a different one next time.

Went back to Chay Concept for a second time, and again, loved the food. This time, I enjoyed the food even more as I was able to hone in on some of the items that were more of my taste. We ordered a crispy tofu appetizer, which came with a yummy lemon grass dipping sauce -- I'd definitely order this again! They also had a new item, tropical mango rolls, which were also quite good. The place is on the smaller side but because of that, it's pretty chill, making it easy to have conversation during lunch, dinner or happy hour. The service was outstanding. We had such a warm, friendly server, who seemed to really care about our experience. I love that they have expanded their menu since I visited the first time, and there are pictures which are super helpful too!

Good option for vegan food! They have a wide variety of different dishes, with veggies and meat alternatives. We tried the papaya salad and bahn mi skillet. It was flavorful and light. The drinks menu was also extensive with coffee, mocktails and alcoholic drinks. They also have HH menu from 4-6 with good discounts

I am very happy I had a chance to try Chay Concept. This place has very tasty food. While here for a Yelp experience, I also purchased and entree of Sesame Beef with Lotus Root and a spiciness level of 2 stars. I enjoyed the Sesame Beef entree. This dish had imitation beef which was super similar in texture as real beef and the spiciness was just right for me. Lots of veggies in this meal with broccoli, peppers and lotus root. It is similar to Szechuan Beef but certainly healthier and still full of flavor. This dish came with a choice of rice and I chose the purple rice for variety. I had a great waiter who kept my water full and checked up with me often and remembered my name which is always nice. I will return here one day with family.

We really enjoyed Chay when we visited. We do typically eat and like meat so we're a little suspicious that we wouldn't like it, but we were wrong! They do a good job of using meat alternatives to replace how meat would usually be used. Their beef replacement is probably what they do best. The tofu dishes felt like they could be hit or miss. This is downtown Bellevue so there is mostly street parking and garages if you want that. The interior of the restaurant is really nice and cozy definitely recommend visiting!

I was really excited to try their vegan food, and it turned out to be a great experience. The staff were very welcoming and helped me choose the right appetizer, which I really appreciated. The ambience was also nice and comfortable. I tried the pho rolls, which had egg, mango, salad, and imitation beef. I was a bit skeptical at first because I don't usually like plant-based meats that taste or smell weird (even though I eat chicken and lamb). The staff clearly told me that it wouldn't have that smell, so I decided to go for it. I'm glad I did! The rolls were really good. The "meat" was made from soy, tasted nice, and didn't have any odd smell at all. With the sauces, everything came together really well. It's a small plate, but perfect for sharing between two people and surprisingly filling. Plus, it felt like a good protein option. I'd definitely recommend this place to vegans or anyone who wants to try plant-based meats without that strange aftertaste. I'm already excited to come back and try more items from their menu. Parking was a bit tricky, though. I couldn't find a dedicated spot and ended up doing street parking. Also I noticed in reviews many people find it difficult to find the restaurant. It's in the soma towers and beside the signal.

Not very many vegetarian places like this in the area so definitely recommend if you're vegetarian, open to trying something new / different, or wanting Vietnamese food. The restaurant is cozy /very intimate setting and in my mind great for small groups and dates. My parents are vegetarian so we invited them. It was our first time there so we asked the owner to recommend a few dishes for us to share. We tried the salted eggs, tropical roll, bao, Tom yum mushrooms, purple yam soup, pho noodles, and purple rice. Every dish was good and packed with flavors. If I had to re-pick three I would probably go with the tropical roll, bao, and pho noodles. They also hand a ginger fried fish dish that I would recommend but didn't try on this day (I had it at their sister restaurant). Overall really good experience and staff was friendly.

Pretty good! My party and I found out about this place through a yelp elite event and were able to get a couple of appetizers through the event. We got the bao buns and the egg tofu which was SO good! They have plenty of creative tofu options which was very nice. The egg tofu was recommended to us by our server and I would stamp another recommendation on this appetizer, it was super good! The bao buns were just okay as the bao itself was not that soft and the cucumber was cut a little to big so it was kind of hard to eat. We also got the pho beef rolls which had a great flavor. I appreciate that there are more asian vegetarian options! It is nice to taste familiar flavors while also being able to eat less meat. The price point was quite average, maybe a little above average for everything being vegetarian so I don't know if this will become a regular spot for me. I also recommend parking in the SOMA parking lot which is right near the restaurant and offers 2 free hours of parking.

What did I just eat?! All the Vietnamese flavors I love in new, unique textures??? This was an experience for which I was not prepared.... If vegetarian food is this good, I mind as well take the plunge and become one. Probably better for me, and I get to order more cocktails :p The good: - COCKTAILS: I've been eyeing their Pandan and Banana cocktails for a while now and am happy to report out that they're balanced and smooooth af. We tried 7 cocktails in total lol and my friend loved the Strawberry and Guava Margarita-- I mean, at $12 what is is there not to like!!!! - FLAVOR: their salted egg yolk tofu, purple yam, and tomyum mushrooms were my personal favorites... I'm still thinking about my first bite of each app... ONLY ORDER IF YOU LIKE EXPLOSIONS OF FLAVOR. - SERVING SIZE: they loaded their pork baos and pho rolls with the most delightful and springy meat... I felt like I got a lesson in how to prepare and serve good vegetarian meat cuz sheeeesh - SERVICE: friendly and attentive. I can tell the team in the back really, really cares. I wish them nothing but the best as they make a name for themselves in the Seattle and greater U.S. food scene!!!! Keep it up!!! I can't wait to come back and consider vegetarianism :)))

Food portions are huge, very nice staff, and a fun concept and variety. Super cool to see Vietnamese food not only elevated but be showcased in a vegetarian way. We came for drinks and were easily convinced to get more from seeing all the food brought out. Sitting at the bar, we got to chit chat wor the owners, Long, Thao, Van and even their team. Theyre all so nice and welcoming offering more for us to try. I love the idea and wish them and the business well!

This place is amazing! Great food, great cocktails, great ambiance. It's perfect for either a date spot or lunch with friends.

We did, but we were early -- and he immediately told us it wasn't a problem. He cracked a few jokes, which instantly made us feel welcome and happy to be there. He was incredibly friendly, funny, and set the tone for a fantastic evening. We were shown to our seats but noticed the bar was open, so we chose to sit there instead. From the moment we sat down, we were greeted by one of the friendliest bartenders I've ever had the pleasure of meeting. He asked about our evening, whether we were celebrating anything special, and genuinely made us feel valued. His service and cocktails were top-notch. He took the time to understand what we liked, offered thoughtful recommendations, and every drink was excellent. On top of that, two different servers stopped by to check on us and let us know they were available if we needed anything while the bartender was busy. That level of teamwork and attentiveness really stood out. What started as a quick nightcap turned into a much longer stay because of how welcoming and enjoyable the atmosphere was. The staff truly made the experience. Highly recommend -- and I'm very much looking forward to coming back.

The concept is simple, they use soda and add a scoop of fruit pulp, a pump or so of syrup, and a sprinkle of dried fruit bits. I could be wrong, but I feel like i noticed they use large bottle of the carbonated drink to pour many drinks, but they go flat over time. Which means some people will get flat drinks. On my last visit i ordered several drinks. One was bland and flat.I tried to get them to remake my flat drink, but they warned me it would still be flat. I insisted as my other drinks we had taste better having more carbonated spark and sweet juicy flavors. They remade it using the same bottle of soda and it was just as flat and bland the second time so I just tossed the drink and sipped on my families drinks that tasted amazing. Idk if i would recommend this location as it seems to be so hit or miss. Maybe just make sure they use fresh soda and also that they give you all the mentioned flavors. Hey, maybe on my last visit they just ran out of flavor and fresh soda and didnt want to tell me. When they make it right, its absolutely worth a try.

Their…read morerefreshments are flavored with real fruit and don't include any added sugar, making them a healthy alternative to sodas, with much more pizazz than just a can of sparkling water. Nine enticing creations make up their menu, all of them being fruity and vibrant in color. Ordering is very simple on the kiosk as you just select your drink and also choose an Adaptogen, which is their version of a health "boost". A few of the Adaptogens are free of cost (I selected the immunity one), but other more premium options will cost a dollar or two extra. According to the staff member, most of the Adaptogens are flavorless. All drinks are $7 each and only come in one size. I've visited on two different occasions and both times, my seltzer was ready in just a couple minutes. + PINEAPPLE BREEZE: A refreshing combination of pineapple purée, passion fruit purée, freeze-dried passion fruit and a thin slice of dried pineapple. Both fruity flavors were balanced; I could taste the bright pineapple and the juicy tropical passion fruit. The seltzer was crisp and perfect to enjoy in the Seattle sun. The freeze-dried passion fruit dissolved over time, strengthening the intensity of its flavor with each sip. + RUBY REFRESHER: This drink included cherry purée in addition to lychee. The menu stated that it also includes coconut, but the employee who helped us said that they have never added coconut to the drink, so I'd suggest that they update the description. Additionally, she said that they were out of the actual lychee fruit which would have otherwise been placed on top, so she substituted with some freeze-dried strawberries. This said, the drink strayed from what was displayed on the menu, but it was still good. The cherry flavor tasted very natural and the lychee flavoring brought a juicy sweetness. With this being located within the Lincoln Food Hall, these seltzers are somewhat of a splurge, but are the perfect addition to round out any meal.

Second, I ordered the pork shoulder stir fry which wasn't bad but had several large pieces of pure fat & gristle in it that I felt a high quality restaurant would have taken out of the dish. It's indicative of lazy & careless food preparation skills. Also, the basmati rice was very under-cooked...some pieces were even crunchy. Lastly, after leaving the place, I realized that I accidentally left my sunglasses there. So I called later that evening to inquire if they had found them. I discovered they route all incoming calls to a bot that instantly made me feel unimportant and unappreciated. What's worse is it tried to connect me with someone in the restaurant, but kept looping back into its own messaging narrative. What an absolute PITA. This enables me to make a broader point: Restaurants have to get it through their heads that cutting costs has negative impact on customer experience, putting the lifeblood of their business into jeopardy. Take the widespread adoption of QR code-based menus during COVID...how many restaurants do you know actually switched back to real menus after COVID passed? The answer is very few. The reason why? They are too stingy to pony up the dough and ignore the benefit to the customer experience. They figure, 'people already know how to do that so why spend the money on printing up menus anymore?". They couldn't care less about what customers might actually enjoy more, and that's the real travesty. If restaurants are going to force their customers into a self-serve model (as so many have nowadays), then why bother tipping anyone? I am so fed up of a world where the idolatry of wealth has surpassed the appreciation and value of real, engaging human experiences. The Central Bar + Restaurant could help reverse this course if they ever decide to they put customer experience first instead of their own profits. UPDATE: Added one star because they actually had my shades...went ot go pick them up today.
