I preferred eating inside because they had a pickle, onion, and bbq sauce stand that you can take as much as you want from. This is great because I think the toppings and condiments are essential to making the pit beef sandwich reach its full potential. They have a wide variety of bbq sauces available that are sure to cater to your tastes. The unexpected star of the meal was the Maryland crab soup. We came with high expectations. We pulled up in the parking lot that is shared with a gentleman's club. Kinda awkward. As we entered two customers were getting into it. The staff didn't do a thing, maybe it's a common thing so they are used to it. I ordered their specialty--I guess--pit beef sandwich w/fries. It was not as expected, rather disappointing. I moved to Midwest over a decade ago, but most of my life (especially when I was first married and money to go out was tight) CHAPS was the local place for good food at fair prices. I went today, and the CHAPS of today is not even close to the comfy family business of the past. I think the change began when Drive-Inn Diners and Dives visited this business. It brought attention and more business, and the money changed the little family sandwich shop into a Pit Panera. Meaning cattle call ordering (no individual attention just push through) quantity of food still there, but quality is not even close. I don't know if owners changed, but the comfy, family neighborhood dive is now a money machine (obviously by the ridiculous prices) for the business that once was an original diamond is now just another chain like sandwich shop with no personality of its own. If you're looking for a good Brisket this is NOT the place because they don't sell it. That's what I was looking for and got disappointed. However, they have other options. I had their pit beef and turkey sandwich which was good with or without the BBQ sauce. I tried different sauces and of them, their House sauce hits better than any of the others. I didn't think I'd like any other sauce better than Sweet Baby Ray's but Famous Chap's sauce is by far better than Ray's!! It has flavor, a nice kick but not overly spicy, and it enhances the flavors of the meat. My daughter had the tenders. She loved them. She had some leftovers to eat for lunch. I took a bite of the tender so that I could write an honest review as my daughter has not quite gained the articulation to describe the flavors. Upon taking the bite there was a nice pop of seasoning flavor especially pepper but it wasn't overpowering. The batter to chicken ratio was perfect and the chicken was moist and delectable. These tenders can be enjoyed with or without sauce. The French Fries were a bit greasy and soggy. I did try them although I couldn't enjoy them with the sandwich. I took them home, popped them in the air fryer on the open grate (this is so that as they cook some of the grease could drain off), reheated them, added some Himalayan salt, and the fries were much more enjoyable. I ordered an additional beef platter for my husband and I to have to eat later. It came with Pit Beef, FF, 2 slices of bread, and gravy. I got the gravy on the side and I'm glad I did. That gravy is tasteless. It would have ruined the whole meal. I added salt and still nothing. It needed some "Umph!," some "Pick Me Up!," and some "Sho You Right." That gravy was missing the soul that the Pit Beef has! I need the same care and attention to food to be paid all around. SN: I just thought about the contents of the Beef Platter. Beef on 2 Slices of Bread with Gravy made me think, "Where do I know that from?" Then I remembered that as a child growing up in the south we ate what the adults used to call, "S**t on a Shingle." The name is off-putting, however, the beef with gravy over bread was a life saver. The cashier was very polite. The place was clean and I'm judgemental about places with clean floors and bathrooms. This place allows you to see the grillers when they're cooking which allows me to see the floors and they were clean when I stopped by. A clean kitchen means things have been sanitized. I like that. The music that was playing on the PA speaker was jamming. I was dancing while filling our drink cups. My overall take on Famous Chap's Pit Beef is 4 out of 5 Stars. Baltimore bucket list worthy! While the pit beef at Chaps is the standout, everything on their menu is tasty. I'm actually a HUGE fan of their pit turkey. It's perfectly smokey and juicy. There are quite a few special menu (and off menu) items but don't miss their fall/holiday special sammie, The Plymouth. It's a combo of both pit turkey and pit beef with stuffing and cranberry mayo on a potato roll. It's truly delicious and what thanksgiving leftovers aspire to be. My parents came to visit and they were excited to try an establishment they've heard so many great things about, either from friends or on their favorite tv shows. I ordered the ribs with sauce on the side. The ribs were delicious with and without the sauce. They're served by the pound. I'm not sure why I thought a pound of ribs wouldn't be filling but they definitely were. We shared a few sides- mac and cheese, green beans and gravy fries. All of the sides were underwhelming in my opinion. I'll probably get a plain order of fries on my next visit. They gravy that the fries were drenched in lacked flavor. This was my second time in Baltimore, and my second trip to Chaps. Last time was over 10 years ago, and the food was amazing! I had seen their appearance on DDD and had to try it. On this visit, I wanted to know if the quality was still there, and it was! Their smoked meats have so much flavor! I ended up pulling the meat out of the bread just so I could finish it. This is where it all started & I've been before but don't get here enough. I recently visited their Aberdeen location and great to see they are in Delaware and PA also. This location does have outdoor seating and you get the smoke aroma as you're approaching from Pulaski Highway. A good amount of sandwich varieties and combos with interesting names. Ordered a couple of sandwiches which are the definition of overstuffed. I'm usually rare/medium rare when it comes to steak/beef but prefer closer to well here as you get more of the smoke flavor. Highly recommend checking out! There is a reason this spot is so well-regarded and even featured a while back on Guy Fieri's show on the Food Network. The specialty here is Pit Beef, which is a Baltimore-styled roast beef sandwich (and much more tasty than your traditional roast beef sandwich IMO). They've won numerous awards for their Pit Beef, including an award they won 20+ consecutive years for having the best pit beef in Baltimore by a formerly prominent paper in Baltimore than no longer exists. Can co-sign from having been here most recently a few weeks ago that the pit beef here is fantastic! You can get it cooked however you want, and they offer varied sauces with the pit beef. Variety of other pit sandwiches and specialty sandwiches offered here as well (corned beef, pit turkey, hot dogs, reubens, etc.). Other BBQ such as ribs are also available here. I ordered a Pit Beef sandwich w/cheese and also some gravy fries. One of the better meals I've had in quite a while! The gravy fries in particular were filling and a bit more than I expected LOL. I'll point out here that the food here was slightly pricey (in my opinion). The Pit Beef sandwich, for example, was $9.75 and was $1.20 extra to add cheese. A "small" side of gravy fries was $5.40 (though they do give you an ample amount of fries for it being a "small" side). And a small 16 oz fountain drink was $3.30 (!) You might be better off getting the 32 oz fountain drink for only 40 or 50 cents more, though it seems there's no extra charge for refills so probably doesn't matter too much. There was a bit of a line the last time I came, though it was only a 10-15 minute wait. There's both inside and outside seating here. From what I could tell the last time I was here, they'll be moving to a new, slightly bigger location, right across the parking lot in the very near future (might have moved already for all I know). Despite being a bit pricey, the food was well worth it and I'll definitely be back again! This spot is off Pulaski Highway, which is not an area typically frequented by tourists, but is pretty much a straight shot from downtown Baltimore via Rt. 40 if you're driving. My husband and I enjoyed the food at Chaps very much, and the person taking our order at the cash register was patient and helpful, but Chaps is a downright scary place to be during the pandemic. Seating was blocked off during our visit and for the most part, responsible customers tried their best to distance themselves, but pretty soon after our arrival around 3:00 pm, did the restaurant get busier with a lot more take out orders. Most of the customers wanted to wait inside as opposed to outside, in their cars, or in the outside courtyard because they needed to hear their order being called. This left very little opportunity to socially distance. During our visit, a difficult customer arrived in the store. I am unsure of how to state this, but he may have benefited with some mental health care. He was unmasked, getting well within people's social distancing attempts, yelling very loudly (he was upset that there is food tax he has to pay when he already pays taxes on income). The staff members did nothing to enforce CDC guidelines. In fact, one of the employees coming in to work his shift was unmasked, remarked the he forgot his mask, and covered his mouth with his hand while walking back to the kitchen. I had attempted to place our order over the phone, but no one answered the call and per their website, online ordering was not an option for this location. If you're still interested, here is what we thought of the food: Hands down, the best part of the meal was the Pit Beef Platter (with beef gravy, not at all pork based!). I loved how well the meat was cooked, and taking bites of the gravy soaked French fries and bread was amazingly delicious. I'm also glad to have tried their banana pudding. It was a creamy custard with pieces of banana and even a few pieces of cake-like crust (which were my favorite bites) and whipped cream. I thought the Two Meat (I chose pit beef and corned beef) sandwich was a bit dry, but that meant I could douse it in all of the different sauces Chaps offered (the pumps are located inside and customers pump them into individual containers themselves). Don't forget about grabbing plenty of napkins and plastic cutlery before leaving the restaurant as there were not any provided in the takeout bag and the dispensers are only located inside the restaurant. Normally this is not a problem, but again, Chaps was not a comfortable environment to experience during the pandemic and I wanted to kick myself for not having cutlery in the car... Been here a few times, and really enjoy their pit beef sandwiches. I saw someone compare this to Arby's in another comment and they couldn't be more wrong- this is real meat, not processed, being cooked, cut and put together in front of you. Lot of variety of meats to create your own perfect platter or sandwich. They have built and moved into a new building at the same location- which is bigger and has nice bathrooms. Dont let the location or strip joint nextdoor put you off, the food is rock solid.
