We stopped for takeout on a recommendation in July. We took home the plain pit beef sandwich, a simple smoke flavor. Real beef! I wanted to taste beef, my wife augmented hers with bbq sauce. Each sandwich was piled with enough meat for two sandwiches, cooked perfectly. We had the Mac and cheese, creamy goodness, green beans with stewed tomatoes were just okay. Additionally, my wife had the chicken wings. She liked the flavor, but they were too big, on steroids! She prefers the smaller wings. I travel to Baltimore often for work, and when two completely separate people tell me I need to eat somewhere, eventually I'm going to listen. In the case of Chaps Pit Beef, I've now listened twice. First, the setting deserves its own star. There's something wonderfully Baltimore about pulling into a place famous across the country for pit beef, sharing the immediate surroundings with a strip club, and knowing you can shop for used tires across the street when you're finished. Add the walls of awards, television appearances, photos and decades of accumulated lore inside and the whole thing feels less like stopping for lunch and more like making a small pilgrimage. And that's part of why I'm struggling with Chaps. I've tried several of the sandwiches across my two visits. I've piled on the raw onions, pickles and sauces. I've ordered too much--which feels both heroic and completely appropriate here--and walked away convinced that Chaps is very good. But I haven't found my five-star Chaps order yet. The pit beef itself is clearly the reason for the pilgrimage, and the condiment station is part of the experience. Beef, raw onion and that horseradish-heavy Tiger Sauce is a combination I could happily keep attacking. But then you look around at the menu and realize you've barely scratched the surface: beef, sausage, corned beef, turkey, enormous combinations of all of the above, gravy fries, homemade sides and sandwiches carrying names and reputations of their own. It's almost overwhelming. That's ultimately why I'm leaving Chaps at four stars--for now. There's a five-star experience hiding here. I can feel it. I'm just not convinced I've ordered it yet. Next visit I'm stripping this thing back before building it up again: pit beef medium-rare, raw onion and Tiger Sauce as the control. Then I'm going in the opposite direction with one of the ridiculous combinations--probably Guy's DDD--and finally giving the gravy fries their proper opportunity. If that unlocks what generations of Baltimoreans and seemingly every food television personality already know, I'll happily come back here and move this to five stars. If after three visits I'm still admiring the institution more than craving the food, maybe it moves the other direction. For now: Chaps is absolutely worth the stop. The food is good, the history is real, and the atmosphere couldn't be manufactured if someone tried. I just haven't cracked the code yet. Four stars, with one more trip pending. read more

One word: YUM! I'm from Texas so I like to think I have high standard for BBQ. This place came recommended by a close friend. This establishment was featured on Guy Fieri's show and has a sandwich named after him. This is side information, but I usually side eye his recommendations because one time I tried a place that he featured and the food was absolutely disgusting. However, this place was absolutely Yum. The staff was friendly and helpful. The cashier lady super cute and was helpful with recommendations. I got the pit beef sandwich with mac & cheese. The mac & cheese somewhat reminded me of the mac & cheese at this place called Luby's in Texas. It was pretty active on a Sunday evening, but the service was really fast. And I'm back! And you know it wouldn't be a full service trip to Baltimore without a trip to Chaps! My husband and I made our usual stop and got our pit beef sandwich's and I swear every time it's better than we remember. This time we were also notably impressed by the fry's too; nice and crispy and didn't get soggy with a hefty amount of malt vinegar. The servings are big and a regular to a large is usually only a $1 difference... get the large! They were having a special on jerk chicken and my husband got a whole chicken which we took to go and snacked on the rest of the weekend; it was amazing! The lobby and dining space were also nice and clean, fully stocked, and had lots of seating. I love the indoor picnic tables and the condiment choices (I'm a sauce boss!). What can I say? Interesting. Stopped in traveling from BWI to PA. With high marks and such fame we figured this was a must stop to see what it was all about. I wasn't sure what to expect with it being called BBQ...in Maryland. Being from CenTX, BBQ means something entirely different. Different isn't bad, just had no idea how different it could be. Another big difference is when it says sausage on the menu...here that means Italian sausage, really didn't expect that. We tried the regular pit beef sandwich, the Markie which had beef, turkey, Italian sausage. Also tried mac and cheese which was excellent, gravy fries and cheese fries which were also great these tasted just like Storm's hand cut fries covered in that gooey fake cheese deliciousness. The gravy didn't really have much flavor. The sandwiches had good bread and meat cooked well. We appreciated the bar of delicious pickles and thin sliced white onions. There is an array of sauce choices, and the thing is...it needs it. It needs some kind of sauce whether you choose the horseradish based mayo sauce or yellow mustard based Carolina style, or sweet baby rays...it needs something. To us...if it needs sauce...it's not perfect. We embrace trying new and different styles of bbq in all the states we travel to, so this was a good experience.
