Chaps doesn't really need my review, they're famous (how can anyone beat Guy Fieri famous) on their own, but I FINALLY tried it and wow. I'm from Kansas City and know and love BBQ but I've never had pit beef before and I'm in love. It's so so tender and smoky and flavorful, and holds any sauce you want beautifully well. I am going to use my KC BBQ sauce on it next time, but I tried the hickory BBQ and it wasn't bad. The fries are also so delicious. I ordered them to-go and they were spilling out of the container, that's how many they packed, which was a great sign. The only downside is that Chaps put me in a food coma that took me hours to awaken from (and I'm still in a state of disorientation). We saw this place on Guy Ferarri's show and we had to stop by. My husband and I got the pit beef sandwich. I got mine medium and it was perfect. My husband got it rare and he said it was good as well. The service was super fast and they were pretty busy at the time. They also have a good selection of BBQ sauces. Most important....I use to go there every weekend I stopped going when I noticed that that meat at the end of the night was being stored in a bucket. Not a real big deal BUT it was being stored for the next day in the fridge or freezer after it was being cooked.. I don't think it's normal to cook food and then when the store closed the leftovers were put away in a bucket. This would be reheated all over again for the next day. Not good. Fresh food is what I thought I was getting not reheated leftovers. I hope they make a change for me to come back. I've been a Chaps fan for some time now, but I guess I neglected to share my love on Yelp until today. Oops. Well, better late than never, right? I'm happy to report they are open for business right now, though you can't dine in currently. Also, be aware there might be a line, because they are trying to limit interior capacity (thank you for putting our health first!). Also, their team all wear gloves and masks, which is really awesome. But, don't worry, the food quality hasn't suffered at all! We just got a couple of sandwiches and a load of sides for noshing at our last visit. Everything made it home safe and sound due to their good job with packaging. Everything was still pretty hot, too! I accidentally ordered the BBB instead of the Triple D (my go-to), but it's fine, because it was a very interesting experience! I'm normally not a fan of mac-n-cheese on a sandwich, but the rest of the meats made it worthwhile. It was like an entire meal in a handheld package! It's pretty hard to eat, but after one bite, you find ways to make it work... ;) (Oh, and BBB is a secret menu item, which stands for Baltimore Bad Boy... the name fits! Their other secret menu item that I know of is the Bossman, a BBQ-basted burger with more meat on top). My favorite is the Habbit, because they throw on three very complimentary meats: ham, turkey, and their absolutely money pit beef (along with cheese, which marries everything together). You can't go wrong with Guy's Triple D, though, with beef, corned beef, and sausage. Honestly, everything is good here, just depends on your preference. We love their fries covered in gravy and topped with cheese. It's not technically on the menu, but you can ask for both toppings. By the way, if you think 9 bucks is a lot for a sandwich, let me offer this as a rebuttal. It's two meals, EASILY. We ordered two the last time thinking we'd split each other's order. We got through the first one and had to stop, it was that big! The second made a lovely dinner the next night. Trust me, these things are HUGE. You definitely get your money's worth. Overall, it's a Baltimore icon, pure and simple. If pit beef were a religion (and around here, it kind of is), then Chaps is the Mecca (no offense intended). We ordered the Triple B, Baltimore Bad Boy, off the secret menu, which included ham, bacon, pit beef and mac and cheese. So tasty and absolutely delicious! The Pit Beef Sandwich was good, but I forgot to add onions. A little bland for me, I added the variety of sauces given. Loved the combination of the hot sauce, golden bbq, and tiger sauce which elevated the taste of the sandwich. Also, thank goodness for the side of coleslaw which I also added to my sandwich. Inspired to eat here after drooling over Instagram photos, we hoped the 35min drive from Severn to the top of Baltimore would be worth it. Navigating was a bit difficult, as the area is industrial & the parking lot was crowded-since they share with the Gentleman's Club. I smothered a side in tiger sauce (horseradish) & the other in golden bbq. The horseradish was really good, it had a nice kick without being overpowering & the golden bbq wasn't too sweet. They went really well with the drippingness of the ooey goodness cheddar cheese. Overall the sandwich was STUFFED, I give props to their bun guy! Out of all of the meat on my sandwich combo, I really loved the crisp taste of the outside of the grilled sausage with the warm moist sausage inside-a notable taste! The sides: PASS-the mac n cheese was meh; honestly tasted like they buy frozen mac & section it out into Tupperware. The coleslaw tasted like warm potato salad (OH because they gave me warm potato salad instead-very upsetting-it was mayo-ey and very sweet). As for sides, the fries were extremely underdone, some were almost raw potato but since this was a takeout order, fries can get soggy, so no points off there. We just broiled them a bit at home. The mac and cheese was exactly what you'd expect from a bbq joint- creamy cheesyness. This isn't my personal favorite type of mac and cheese but it did the job. For me, the baked beans were my favorite side! They were sweet, hearty, and although we got a small, it was a huge portion! I got the corned beef/beef sandwich ($9.70) since I read reviews about how the beef is a must try. There was no long wait on a late weekday afternoon. I was asked at the register how I wanted the beef cooked, which caught me off guard. So I said "medium well". All I could see behind the register as far as prep was a large grill with some meat on it and 3 other workers standing in the relatively small kitchen space with a bunch of open faced sandwiches on 1 counter. It didn't look particularly clean.. and I saw one large hunk of meat just sitting on the metal countertop that seems to be the corned beef sliced to order on a nearby deli slicer. It's a bummer that they charge for simple toppings like tomato, lettuce. Onions and pickles are free so I asked for those. While I waited for my sandwich, I went straight to the sauce counter which is self-serve. Made sure to get some Tiger sauce (which is mayo + horseradish). The corned beef and pit beef are sliced very thinly but well done, tender as you'd like it. I wasn't blown away though since it's a pretty bare bones kind of sandwich. Also didn't enjoy having to pick off so many burnt bits from the pit beef, which I think got on the meat while it was being cooked to "medium well" on the grill. The sauces make things taste a little more interesting, but I guess this is the best you can do for BBQ around Baltimore. Some of the sauces are just the ones you can buy from the store like sweet baby rays (which I do like but it lessens the excitement of hoping for something new to try). Everything else was just ok. The pork ribs were a bit tough and a little fatty. The pulled pork sandwich was nothing really special, just pulled pork in bbq sauce on a bun. The fries were decent with skin on them. The beans were good but for a large the size seemed kind of small.. I'd call it more like a medium (maybe 8 oz). Every time I go to Baltimore, or drive through I stop at Chaps. In fact, I travel to the south quite often but instead of flying I drive just to pass Chaps and have a sandwich. It's no wonder people line up outside the doors, the place is amazing. I always get the #52 Chaps Special, it's beef, corned beef, ham and cheese...it's a big sandwich. Throw some sliced onions and Tiger sauce on and I'm set. For some reason I order fries....probably because I'm starving when I get here. But I usually don't eat them. Not because they're bad, they're very good. I'm just always full from the sandwich. Here's a tip, the large fry is unlike any large fry you've ordered....you could feed a family on it. It's deceiving because it only costs four bucks. If you want a lot of fries go for it. Also, keep the door shut, if the line is going out the door...wait there until there's room inside.
