While the service team did explain the dishes beautifully, it would have been nice for the chef to come out and explain even one of the dishes, especially with a restaurant that has the potential to share a rich background in history about the dishes and flavors. I found that to be particularly surprising that was not the case. In all of the tastings we have participated in (NY, Paris, Miami, Barcelona, Rome, Shanghai...) the chef has always come by even if for a second and it's in those moments that you really get a sense of the passion and the experience of a tasting. After all the origin story is the thread that would have pulled the elements together. It would have elevated this from an average to a more memorable experience.
