Bummed. Wanted to like this place and they have all the tools to making a nice restaurant. Every dish we had was not good. Pork Belly- hard as a rock with a funky flavor that made me want to vomit at first. On my 2nd bite, it wasn't as bad, tasted like cumin or something like that. Had to spit it out because it was so hard, I couldn't chew it enough to swallow it. They kindly removed it from our check. The Caesar salad- How do you mess up a Caesar salad!? It was bland and fishy. So fishy that I burped a few minutes later and a fishy taste came with it. I have had 1,760 Caesar salad salads in my time and I've never experienced one like this one. The $90 Wagyu entree. Flavor was good but completely under cooked. We order med-rare and got rare. My friend also ordered a burger to go. Then the server forgot about it so my friend said never mind (we really didn't want to eat any more of their food). 20 mins later, server said "your burger should be right out". Weird because we canceled it. When she got home and gave it to her boyfriend, it was RAW!! She ordered it medium. Also, while I was in the bathroom, my friend and the server discussed it was my birthday and she offered a dessert on the house. ...it was on the bill Our server was new, and VERY YOUNG- bless her heart but it just wasn't great service. And we know they're new but still.... The chef did come to speak to us and was very nice. But we also didn't have the heart to look him in the eye and tell him we hated everything. And the manager was bouncing around checking on everything but our server was new and overwhelmed and we just didn't feel right complaining anymore. This restaurant is attached to the Element hotel but you can also access it via the street. I was pleasantly surprised when we walked in. The ambiance is classic with a modern vibe. The music playing was just the thing for me. I love listening to Sinatra and the blues. The star of our meal was the Bison tartare with salt and vinegar chips. The meat was absolutely flavorful and perfectly seasoned. We finished it and I wished there was more. There was no filler in the tartare which is rare. I also got a beef coulotte and it was perfectly cooked. Our server Diana was an absolute delight. She was polite and friendly. She provided menu recommendations and answered all of our questions. We had a reservation for an anniversary dinner but asked to sit at the bar. We were so very well taken care of by our bartenders Jeff and Isabel. We drank the house rose (Elk Cove) and ate the bison tartare as our starter. So very delicious and I highly recommend. Next we have the Caesar salad, which included butternut squash cubes and pumpkin seeds, instead of croutons. What a lovely touch! There was the perfect hint of anchovy that I like. I had the elk loin and could not believe the WONDERFUL gastrique. My only suggestion is to choose a less "sweet" side than the parsnip puree. While it was delicious, it lessened the depth of flavor to balance the deep rich elk. The plums were a fabulous addition. So wonderful! My husband NY strip and chose some different sides - roasted potatoes and sautéed leeks. Could not have been any better. For dessert we had some delicious ice cream and port wine. The server and manager were giggling and making faces right before they seated us, which was just weird. The menu....lol you can tell it's for tourists, it's just ridiculous. "Marbled Ranch Beef"??? We sat there and waited for almost 40 minutes before finally giving up. I am in Bozeman for business and wanted to find the best place to eat dinner since I am here for less than 24 hours. I suspected I could find a great steak somewhere, after all, I am in Montana (sorry to all of the cute cows I saw ). I was a party of 1 so I sat at the bar, ordered a glass of the house red and the 10 oz blue creek marbled flat iron. It was seriously one of the best steaks I've ever had, I was sad when I was finished! It was a great portion. It would be awesome if they offered mashed potatoes as a side with it! My waitress was wonderful and I met the manager at the end of my meal to pay my compliments to the chefs. This place is great! As a heavy steak eater (4-5 times a week) I can say this is a GREAT place to get steak. The NY Strip was the best I've had. The selection of salts (why don't more restaurants do this?) the compound butter and even their house steak sauce is unparalleled! This was the worst experience I've ever had in terms of service at any restaurant I've ever been to. I came in for a cocktail with my girlfriend about 20-30 minutes before close--as a cook in a restaurant, I recognize the annoyances with customers right at closing time, so I made it clear that I only wanted to get easy-to-make cocktails so that we'd be gone far before closing time. While enjoying our drinks, this bartender made a scene to the kitchen about how much she absolutely hates when people come in and order drinks while she's trying to "Just go home and get baked". I tipped 50% on a $14 drink bill right *before* hearing her complaining to the kitchen about my presence. I wish I picked that receipt back up from the other side of the counter and took the tip away. In fact, I'm upset I had to pay at all. I am never, ever coming back to Carlisle and would strongly discourage **anyone** from giving this place your patronage. Terrible service, ambiance, and a tacky, gilded interior make this the worst food experience I've had across Europe, Asia, or America. read more

Came in for the first time tonight as they have only been open for a few days, I can already tell this will be a Bozeman classic. ordered the Crab Cakes, Loaded Hummus platter, and Elk Strip loin. Crab cakes were perfectly seared and FILLED with chunks of crab meat. Hummus app was amazing as well, light and flavorful, a veggie lovers dream. Elk Strip loin was to die for, Chef prepared the perfect medium rare, the kale and local mushroom set up was the perfect compliment to this cut of elk. (Not even slightly gamey if that's something you worry about when trying elk). The portions are generous and fair to pricing! Service was great as well, bartender was knowledgeable about the menu and gave great suggestions! LOCALS: Make a reservation before the word gets out! perfect date night location. Took my in-laws to dinner and even dressed up for what was supposed to be an amazing dinner. We saw a write up about the food and how it was something special to Bozeman. So we ordered appetizers, hummas platter and roasted veggie fries. Sounds great right. The hummas was like hummas slop with cut up squash. Broccoli. Roasted Veggie fried and cold bread. This is not anything like a Hummas plate I have ever seen. Next soup and salad. The salad dressing was so tart it made your lips smack. The soup Butternut Squash tasted like baby food. Warm but cold and like jello and stuck to your spoon. I Sent it back it was terrible. Dinner we order flat iron steak x2, chicken, and New York strip. The chicken served in a Delta long distance flight is way better, the flat iron was stringy and very very thick and the New York was covered by mushrooms for a reason. The reason was the amount of a fat made it non consumable. By the way all the side dishes you get with your main meal are repurposed into appetizers. So basically you are paying for it as an appetizer and it will also come on every plate you order. Fries, Brussel sprouts, chopped squash, kale, broccoli all these items make up the appetizer menu. I think it's kind of cheap for a resturant to not have a very distinctive appetizer menu from the main course. Also who ever makes the food should taste the food. Hummas has garlic, lemon juice, olive oil and is thick and holds together. It's not a runny mess on a plate with 7 items that do not go with a hummas plate around the edges to cover up the fact you do not know how to make hummas. Over all our server was a saint and the ambiance is very nice. The managers is kind. The kitchen is terrible and for $260 for 4 people we could have had an amazing meal in 100 different places. Absolutely exceptional. We decided to dine here after having reservations at two other steakhouses in the area. Carlisle did not disappoint. General manager, Munya, made sure everything was perfect since we decided to pick his establishment. Chef Daniele brought out a delicious hummus appetizer (yes I said delicious)--perfectly complimenting the fall with added squash. The wagyu rib eye and the two New York's were all cooked perfectly. You can tell he pays attention to all the details. But the service topped it all off. Isabelle was amazing. She made the experience especially special for us and is an amazing bartender. I don't give glowing reviews usually, but I couldn't pass up the opportunity to write one. For a hotel restaurant, this exceeded my expectations. Definitely now at the top of our list as a go to. If you are new in town, which many people are, it might be easy to think that this place which bills itself as new is among Bozeman's best. Unfortunately, for those of us have been around for a while. There was a much loved place in the same space before this one, but a very warm owner and a great reputation for service and a hard earned level of menu excellence. The new version called the Carlisle comes up so short in every department has witnessed by myself my wife and a couple of couple friends last week.
