Dessert was supposed to be comped. Also charged for "veggie fries" which we were not told about until the bill came.

Bummed. Wanted to like this place and they have all the tools to making a nice restaurant. Every dish we had was not good. Pork Belly- hard as a rock with a funky flavor that made me want to vomit at first. On my 2nd bite, it wasn't as bad, tasted like cumin or something like that. Had to spit it out because it was so hard, I couldn't chew it enough to swallow it. They kindly removed it from our check. The Caesar salad- How do you mess up a Caesar salad!? It was bland and fishy. So fishy that I burped a few minutes later and a fishy taste came with it. I have had 1,760 Caesar salad salads in my time and I've never experienced one like this one. The $90 Wagyu entree. Flavor was good but completely under cooked. We order med-rare and got rare. My friend also ordered a burger to go. Then the server forgot about it so my friend said never mind (we really didn't want to eat any more of their food). 20 mins later, server said "your burger should be right out". Weird because we canceled it. When she got home and gave it to her boyfriend, it was RAW!! She ordered it medium. Also, while I was in the bathroom, my friend and the server discussed it was my birthday and she offered a dessert on the house. ...it was on the bill Our server was new, and VERY YOUNG- bless her heart but it just wasn't great service. And we know they're new but still.... The chef did come to speak to us and was very nice. But we also didn't have the heart to look him in the eye and tell him we hated everything. And the manager was bouncing around checking on everything but our server was new and overwhelmed and we just didn't feel right complaining anymore. So with all that said, apologize for the novel, I won't be returning or recommending this place.

This restaurant is attached to the Element hotel but you can also access it via the street. I was pleasantly surprised when we walked in. The ambiance is classic with a modern vibe. The music playing was just the thing for me. I love listening to Sinatra and the blues. The star of our meal was the Bison tartare with salt and vinegar chips. The meat was absolutely flavorful and perfectly seasoned. We finished it and I wished there was more. There was no filler in the tartare which is rare. I also got a beef coulotte and it was perfectly cooked. Our server Diana was an absolute delight. She was polite and friendly. She provided menu recommendations and answered all of our questions. I would definitely recommend Carlisle.

Let me tell you, the Carlisle steakhouse in Bozeman is what dreams are made of--if your dreams involve perfectly cooked steaks and friendly hospitable service. From the moment I walked in, I knew I was in for a treat--literally. The steak? Oh honey, it was like the cow had lived its best life and then decided to become part of my best life. Carlisle sources their beef from Marbled in Billings, MT, and the quality care they put into the entire process really shows. Perfectly seasoned, tender, and cooked to an almost disrespectful level of perfection. The staff? Top-tier charm. I was greeted like an old friend, and Chef Daniel even came out of the kitchen to explain what makes their beef so special. And the wine pairing was basically a psychic reading for my taste buds. If you haven't been to Carlisle yet, what are you waiting for? Go, get a steak, and thank me later. But seriously, do yourself a favor and get it with the salt tray - it adds an explosion of flavor. And save room for dessert! I'm still dreaming about the Genuine ice cream and homemade s'mores cookie.

The food and drinks here are amazing! I've been here three times this past week for dinner. Every night delicious. Caesar salad - amazing. Add the steak. Wow. Get the cookie!! People friendly too.

PLEASE ... do yourself a favor and visit this new four month old restaurant in Downtown Bozeman!!!!!!! You will not be disappointed. I am in Bozeman for business and wanted to find the best place to eat dinner since I am here for less than 24 hours. I suspected I could find a great steak somewhere, after all, I am in Montana (sorry to all of the cute cows I saw ). I was a party of 1 so I sat at the bar, ordered a glass of the house red and the 10 oz blue creek marbled flat iron. It was seriously one of the best steaks I've ever had, I was sad when I was finished! It was a great portion. It would be awesome if they offered mashed potatoes as a side with it! My waitress was wonderful and I met the manager at the end of my meal to pay my compliments to the chefs. Located in just off of Main Street in downtown Bozeman, it is alongside Element, a Marriott Bonvoy Hotel, the ambiance and vibe is wonderful, it is beautiful, clean and quiet. They serve a rotating Genuine ice cream flavor as one of the desert options, alongside some yummy cookies.

I took some friends here for the first time--friends from LA, so naturally their expectations…read morearrived before they did. Luckily, Est. 1864 delivered. The atmosphere was beautiful, the music was perfect, and the overall experience was amazing. We decided we had to try the buffalo wings, only to discover they're normally served only on the late-night menu. Tragic. Heartbreaking. We nearly had to call our therapists. But then Sheyne came to the rescue. He went out of his way, convinced the chef to make the wings for us, and basically saved the evening--and possibly our friendship with the LA people. If that is not top-tier customer service, I don't know what is. Sheyne deserves a raise, a trophy, and perhaps his own holiday. From now on, I will be bringing every visitor I have to EST 1864--and I sincerely hope Sheyne lives forever. Amazing food, great vibe, excellent music, and unforgettable service. LA approved... which is honestly the highest compliment possible.

Unfortunately, the service didn't improve from there. I ordered the meatballs, and they had to be sent back twice. The first time they came out cold. The second time they came back mushy that they were inedible. After the second attempt, I asked to have the meatballs removed from the bill since I never received an acceptable dish. Instead of trying to make it right, the bartender told me they would not remove them from the check. Everyone can have an off night, but what really left a bad impression was the lack of customer service and unwillingness to correct the problem. For the amount we spent, I expected much better food, service, and a willingness to stand behind what was served.

The wait is not that long.. we came here as walk in's 2x on our 1week stay that started in Bozeman, went down to Yellowstone, then to Idaho for UTV riding and then to Jackson Hole WY to go see the Teton National Park. It was nice to walk around the local shops while we waited and then afterwards to work off those delicious carbs. Thin crust pizzas clean, fresh, not heavy and seasonal ingredients. The crust is soooo good. Chewy and some char. We had: Montana Burger Royale My teen son dreams about this. Yes its 27.00 and he said its the BEST burger he's ever had. I would have to agree (and we live in Austin TX where there's great cow) -the burger meat melted in your mouth -the egg dripping as you break the yolk was perfection. The bacon so juicy, the brioche bun (that was the winning touch) We shared: Hot Honey Pizza- so good 9/10 Spicy Burrata- also great. 8/10 Mac n cheese- that was the only miss. Way under seasoned and the white sauce seemed to get sucked up by the pasta so the dish was super dry. 3/10 Frites and Fondue- fries were great. Thick cut with finely shaved pecorino. Could have used a heaping more of the shaved cheese. -the fondue was ok, seemed still under seasoned or just not creamy enough? I'd swap that for some roasted garlic with the truffle oil. 6/10 Local brews and ciders were great! 9/10 Huckleberry Cheesecake 9/10 save room for this bad boy. We split it between 4 people. Not too sweet. Tart and delightful! The world cup was on the TV so it was a hopping place even as it rained during a late June evening. Parking garage nearby is free for 2hrs so thats cool! The whole place reminded me of downtown San Luis Obispo, CA. The Carne Frite was AMAZING. It's basically a piece of steak served with fries, but the steak was so flavorful I completely forgot about the fries. As a pizza connoisseur and meat lover, I also had to try the Carne Pizza. It wasn't the best pizza I've ever had, but definitely wasn't the worst either. The Montana Burger was really good, and the bacon was amazing. My only personal complaint: they serve Pepsi products and I'm a Coke girl through and through. Overall, great atmosphere, great food, and absolutely worth the wait. Highly recommend checking it out
