Farm to table is honestly not my go to but we chose this place for date night because we had credit card rewards towards it. The establishment was easy to locate, parking was limited and they offered indoor and patio seating. The inside was very loud but modern and cute. My partner and I heard about this place and wanted to give it a shot especially since I had some rewards leftover that would front most of the bill. Finding this place wasn't too difficult but did feel secluded. Parking was a bit of a nightmare since their dedicated parking lot is one way with only 7 spots. I did have a reservation coming in but there were already a few tables readily available for seating on a Thursday evening. My partner and I shared the New York strip steak, cured albacore crudo, and tots especially since they do family style where you can easily grab from. The steak was cooked perfectly medium rare and was decently portioned. Not heavily seasoned but some parts were definitely hard to chew than the others. Other than that, nothing mind blowing. The cured albacore crudo came shredded and even though it was cured, it still smelled fishy. The sweet soy sauce surround the appetizer helps with the overall taste. This was an interesting dish but can't justify the cost per portion ratio. The tots were probably one of the better things I had. Solid crispy and moist texture. The pickled onions and mole made it even better. I would rather choose 2 of these over the cured albacore crudo. We ordered the Cured albacore crudo which was a little fishy but you can taste the yuzu with a kick. This was nothing special and not worth. The Tots was the best thing on the menu. Crispy on the outside and fluffy inside. They were not greasy and the Mole has a ton of flavor that added complexity to the dish. I loved the pickled onions cause it adds acidity but I would not come back to this restaurant for it but I would recommend if you wanted to come eat here. I love how accessible this Michelin Star restaurant is, while ingredients are fresh and dishes are innovative, theres a mix of dishes and price points that people can enjoy, for lunch, the bar, etc. We went in February for a birthday dinner so the dishes were still centered around winter ingredients like squash, cabbage, truffle, citrus, etc. We ordered the bread, scallop crudo, chicken for the main dish, miso cabbage and potatoes for sides. Then the 50/50 chocolate mousse with salted caramel for dessert. We also got their version of old fashioned, and the bartender made a hibiscus mocktail for me. The best thing was the miso cabbage & dessert in my opinion. The chicken was fantastic, the crispy skin was divine, wish it had more of the jus and squash shavings! There were five of us so we ordered three small plates and two entrees to share. We were indecisive about dessert, so we ordered all four of them! No regrets! Everything was delicious. Canon is tucked away on 34th street and it's easy to miss either walking or driving by, but once you step inside the high ceilings and beautiful decor will grab your attention. Our waiter explained to us that Canon is family style and guided us through the menu. Service was impeccable. Everything from the menu, to the speed of dishes, to the care shown by the service team was top notch. I'd go back for the service alone, but the food matches their quality of service. I found myself addicted to the garlic miso butter. I tasted a smoky garlicky flavor and the crunch from the toppings really started off the night right. The peppers were gorgeous. Nothing super spicy, but just rich, charred like flavor and there was some type of sauce that just added the right touch of saltiness for me. The smoked chicken was juicy. If you like your smoked meats then this chicken will be the highlight for you. The night ended with one of the best tasting pavlovas i have ever eaten. I'd say this dessert is the best of any restaurant in the Sacramento region right now. Count yourself lucky if you have the opportunity to experience it. I've been here so many times, just now getting around to leaving a review. Tonight, I came here by myself (wife had book club). Sat at the bar and received terrific service. Ordered a bourbon cocktail, crispy skin pork belly, hamachi tiradito, and the chicken drumsticks (an old standby). The leche de tigre that came with the hamachi was crazy good. (The internet says leche de tigre is Peruvian marinade and aperitif made from fish trimmings, citrus juices, and other ingredients. It's the green stuff in the picture. ) Oh, and I ordered an Austrian red wine, also delicious. And OMG, I've had the drumsticks so many times, but they've never been this good. The yogurt takes it over the top. So just another amazing meal from Canon. Come here and you won't be disappointed. I do recommend coming with friends because then you can order more of the menu. At a "fine" dining place I would've expected not just profuse acknowledgment but also something to compensate for the wait... Onto the food - several things were better than others - the crispy brussel sprouts (though a tad oily), pave lamb, and beet salad were tasty. The rest - scallop crudo, chicken wings, something else we ordered - were not memorable. I had a cocktail that was also just OK. Absolutely a top notch, memorable experience from start to finish. Katie was spot-on with her recommendations for cocktails, dishes, and pairings, and was an absolute delight throughout the evening. This place was packed on a Saturday night, but we didn't wait a second longer than needed for our reserved time a mere 45 minutes before closing. There is a variety of seating in the small inside area, although outside seating was there, but taken by an event when we showed up. We ended up leaving almost 2 hours later because we were having such a good time. The cocktails here are hands down some do the most creative and interesting I've had in Sacramento, on par with the likes of Kru or Localis. The One More Gin was reminiscent of a classic Pisco Sour, but with a gin twist that made it stand out as a fantastic opening beverage. After ordering a couple more cocktails off the main menu, we discovered there were several takes on classic cocktails in the wine menu. We were able to quickly replace our previous orders without issue, and really enjoyed the martini and old fashioned. The food was exquisite. Nothing we ordered failed to impress, but the two standouts were the carrots and the lamb. Both of these dishes were respectively hands-down the best i've ever had. I could eat a plate of those carrots with a side of that lamb weekly for the rest of my life and I could die happy. Just exceptional in every way. The BBQ squash is a close runner up, as it's the most interesting squash dish Ive had in recent memory. It's rare that squash is paired with some spicy heat, and I think this needs to happen more. It was easily the most surprising dish of the night. The two desserts both hit the spot at the end, both the pie and the cake. Big shoutout to the papaya pineapple upside-down cake though. The tart, slide of papaya on too absolutely carried the dish to a higher level than expected. The pie was buttery and perfectly balanced with sweetness. We've been to Canon several times and enjoyed the food. It has been a while though and we wanted to check out the new dishes they had. The restaurant wasn't too busy when we came in early on a Sunday for dinner. We decided to sit inside, but the outside covered area is even nicer in my opinion. The menu isn't too extensive. It consists of small plates, vegetables, and platters. There was a quick bites paper clipped to the main menu as well. We usually skip the platters and order the other items on the menu to share. Off the quick bites menu, we had the grilled apricot and porchetta di testa. We liked the apricot with the cheese. The porchetta was good too, but the toast was overly crunchy. The hamachi tiradito small plate was my favorite. We also got the California asparagus and grilled broccoli. I preferred the broccoli, which came with cubes of beef tongue. I would've preferred if both vegetables came with thinner stalks though. As for drinks, I got the Valley Girl because it has foam. My bf's Sassenach was preferable since it was refreshing.
