Met with a friend I haven't seen in nine years! I was half hour late :( but this place being lively with its colorful inside and the parade of people in and out kept him entertained. He was happy when I walked up to him. He read the menu while waiting and was excited to be at Brider rather than his other choice. He went for the chicken salad and I went for the Lamb Sandwich. Both were great choices. The salad was loaded. My lamb sandwich was very good with crunchy bread and well seasoned lamb meat. With some greens. All that matters to me was the amount of meat. This isn't a big sandwich to share by any means but taste wise- let's just say I'll get this again. So no waiter service here. You order. Pay. You get a number. They bring the food to you. Outside seating is limited. Either way you will have fun here and come out satisfied. Metered two hour parking around. There's a three hour parking lot that I have to look into next time. read more

Fantastic place to eat! Very spacious with indoor and patio seating. There is a large enough menu to suit all tastes (even kids), but no so large that it's overwhelming. Everything sounded soooo good! The food was made fresh to order, which I love, and they also have coffee and beer available for purchase. The 2 most incredible things I did taste were the cookie (sounds silly but omg) and the dipping sauce that comes with the sweet potato fries- it's like a jalapeño pesto or something. Insane! This is an amazing spot just west of the South Platte River. Whether you are getting breakfast, lunch or dinner Brider delivers with fantastic flavors and sensational service. If you come for breakfast, definitely get the freshly squeezed orange juice. It taste like an orange freshly picked from an orange grove. It is not overly sweet which you optimally get with store bought juices. The house-made English Muffin with a farm fresh egg, cheese and bacon quickly has become my favorite go-to breakfast item. The English muffin is light and airy. The egg is always perfectly cooked, delivering a creamy yoke that fills the air pockets in the muffin. The huevos rancheros with either pork or chicken delivers an amazing meal and will keep you full until lunch. The sunny side egg with black beans with avocado and cilantro will satisfy any fan of a Mexican food fan. The only thing I didn't like was the latte. I was wandering around in Denver and hadn't eaten yet that day when i saw via yelp this place seemed good and it was happy hour! It was quiet inside because it was something like 4:30 on a Monday. I ordered 5 wings and 2 margaritas. both fantastic. for a pretty decent price happy hour or not. idk why it's hard to come across full wings in colorado? so was hype to see that right off the bat. and the sauce. i don't even know what it was it was sweet and tangy and has some peanuty goodness and i'm usually not a big savory peanut person! they sell it for pretty cheap too in bottles. i bought the hot sauce (so good) and i've been thinking about how i should've bought the sauce for a few weeks now. might just have to make it back to denver. the margaritas were nice too! not too sweet wasn't watered down or anything. Came here on a food tour and the food was amazing! We had the apple and kale salad which I could have eaten the whole family sized bowl by myself. I usually don't even like kale. Brider is great! I really like the ambiance and location. It is in the trendy LoHi neighborhood and is a fast casual type dining experience. I t has a cafeteria style feel similar to IKEA in addition to a front patio and side bar. The menu is pretty simple and offers a diverse fusion assortment of items. There were many options to choose from but I had to go for the Banh Mi Ordered - Banh Mi (5+/5). I am Vietnamese so whenever I can get my hands on this delicious sandwich, I usually go for it (even when it may not be as authentic). The pate was amazing and a nice spread on the toasty bread. I also tasted a hint of fish sauce (verify?) but that definitely made it all the better. A little pricey but it will for sure fill you up Love it. Used to come here fairly often pre-pandemic when we were still in the West Highlands, then came back yesterday for lunch with the family. Yep, still delicious. I didn't realize they only just started opening on Sundays. I got the kale and apple salad (large was too much but ate it anyway) and a kids meatball polenta (why not?). My wife got the sweet potato and avocado salad, and kids got the grilled cheese. Everything was very tasty (I got to eat their leftovers for lunch today). Staff were very friendly and quick to clean up spills. This is a great spot for lunch. We also have done their Thanksgiving meals in the past, which were spot on. Can't wait to come back! read more

Dammit, I hate meeting the owner of a great restaurant, truly loving my meal and still dinging the place one star because, well, it could've been better. But honesty is good policy and this place is leaning five star, so I'm going to keep it real. That was a solid bowl of ramen (a special), made way better with a ballsy spicy-ish broth and some damn fine kimchi. I say Go Get It, Brider, you're nearly stellar. I want to applaud the unique fast-casual model of this place and I will, in a minute, but the food deserves a short paragraph. The menu is a carnivore's dream come true, and I have no reason to doubt (judging by the plates my friends were devouring) that the meats, across the board, are magnifique. The sides certainly shine. Super ooey-gooey mac & cheese, sweet potatoes banged up with a solid aioli, smart Brussels. Okay, this is the moment, penning a review, where I simply admit I don't know enough about the rest, and I need to get back over here on my next visit to Denver. And I need to sample, like, every single other thing. But I want to point out one important note about the whole fast-casual concept. It's a big thing, it's how new-ish eateries, catering to us corporate automatons who need a quick bite, want to roll. After ordering at the counter, food came out pronto in regular plates and bowls, and when we left the feast our table was a train wreck. I'm not saying this is novel, but it matters that our meal was, across the board, virtually identical to a meal otherwise served by a server: waters refilled, we were asked if we wanted any extras (we did, more hot sauces, they have many), and they cleaned up after us, basically equating to an 18-20% tip, minimum. So add that to your fast-casual receipt. These guys are really good, and so's the food. read more

Even though I had ramen the day before, that was no reason to turn down the rotisserie chicken version they were serving up at Brider. Rotisserie seems to be their jam so I felt the need to go that route. While the broth might not have been as rich or viscose as an authentic ramen shop but the chicken added so much flavor! Plus we added some house made hot sauce the manager brought over for an extra zing. For sides, we all shared the mac and cheese, the brussel sprouts, and the sweet potato fries. Every one of them were over the top excellent. Generally I don't even like sweet potato fries but the green sauce on the side turned them from duds to delights. All three are must haves! My only experience with the fine folks at Brider came by way of delivery. I've peeped the pics online and it looks like a nice spot to pop in for food, but I'm really stoked they deliver and the food held up well. Will I tell you something you don't already know? Probably not. For me, it begins and ends with that sweet potato salad. There was so much stuff in it besides lettuce, that most other places usually skimp on, but they seemed to double down. For extra fun, I had some shrimp added on top and that was not a mistake. Acceptable answers also would have included chicken or beef or anything because once you pour Thai vinaigrette on it, it's all going to be delicious. I also did some strategic ordering and had half of a chicken banh mi. I couldn't resist the allure of a pate aioli and pickled veggies, and while it held its own, it still played second fiddle to the salad. It held up on its own taste-wise, but it seemed to have some structural problems. I'm not holding that against them because really, when you get it via delivery, it's just not the same and that's not their fault. It wasn't a mess and I was able to eat my half just fine. Tasty stuff. It's hard to describe the menu. Ya, it's a New American kind of spot, but really with world fusion. Banh mi borrows from Vietnam, the kimchi & porchetta sandwich from Korea and Italy, and a falafel smack dab in the Middle East. Pay attention to the fact that they call themselves a rotisserie and kitchen. That chicken banh mi is rotisserie chicken. All credit to The Boy for choosing Brider for our Restaurant Week experience. Because it's a quick serve concept, we didn't have to go through the hassle of making a reservation and while the place was busy, we were able to place an order and find a table without any trouble. We were both really impressed with the quality the food, the presentation and the SERVICE (how often can you say that about fast-casual?!). I ordered the shaved brussel sprout Caesar salad, rotisserie leg of lamb with couscous, and had a beer to drink which along with a butterscotch budino for dessert was all included in the $25 Restaurant Week menu price. The Boy ordered sweet potato tots, and the herb-roasted rotisserie chicken with Madras curry. The food was impeccable. My only complaint was that the lamb could have used a little more seasoning, but I just covered it in the delicious Harissa that came with the couscous and that worked perfectly. Service was mind-blowing! We were approached as we stood gawking at the menu and she handed us the Restaurant Week menu and explained the whole process. Each course was explained to us by the server who brought out the food (this is a team environment so we had different servers but each was equally great at their job) and our water glasses were never left empty. I love the idea of high end food without the high end attitude. Brider is a total WIN! Edit: Forgot to mention earlier. Brider??? I barely even know her! But now I do and it is glorious!! After work sessions all morning, we followed our fearless, newly local leader to a place of meat filled bliss. Some of our crew opted to go the ramen route. But I am a sucker for a good French dip. And if this place was as good as my friend who led us here said, I gots to get that dip. All of the sides sounded really good. So we decided to split all three of them. And even though I'm not a dessert person, I snagged a brownie for the road. All of this massive amount of food we got came in at a pretty reasonable price. And the fill your own water station is clutch for a guy who likes his beverages while eating... especially at this altitude. The brussels were amazing. But the real shocker was the sweet potato fries. I like them ok usually. But these were very crispy with an amazing sauce that complimented them very well. The best side however was the mac and cheese. Very bomb. The French dip was different than most that I have had. But it was fantastic. If it were just a regular sandwich, I might have thought the bread to be too hard. But since it was drenched in beef juices, it was the perfect consistency to dip and not fall apart. I've been hearing about this spot for awhile and my only regret is that I didn't come check it out sooner. The main item that had caught my eye was the wagyu french dip sandwich and wow... what a good sandwich. The sandwich alone definitely made it worth the trip. I had also gotten the mac and cheese & a chocolate chip cookie, both of which were delicious as well. 4.5 stars. What a fantastic find! I'm obviously scarred from too many Sunday brunches in San Francisco, because I was paranoid that Brider would be insanely busy when they opened in the morning. It seemed to be popular on Yelp, so that train of thought made sense. We were actually the first ones there... by far. That also meant there was plenty of street parking. I'm excited at the thought of coming back here again (since we were just there for the weekend) because Brider seems like a great place for all meals of the day and everything in between. It looks like a cafeteria with all its communal tables but still has the hipster vibe of downtown Denver that you know and love. Since we brought our dog, we sat on the outdoor patio and tied him to one of the benches while we dined on coffee and breakfast sandwiches. Mine had egg, cheese, and bacon inside an English muffin. Stopped by for lunch here while on a work trip in Denver. Open concept seating with bar seating and regular tables available. You order at the counter and they bring the food and drinks out to you. You can help yourself to water from their self serve pitcher in the corner. Our table ordered sharing plates of charred Brussel Sprouts, Mac & Cheese and Sweet Potato Fries. My favourite was the jalapeno and cilantro aioli that was served as a dip with the fries. My main dish was bowl of Chicken Ramen which was served with kimchi, fried egg and jalapenos. The bowl itself was spicy, but as a heat lover, I highly recommend their house hot sauce which made the meal. Their house ginger beer was on the sweeter side and helped counter the spiciness of the hot sauce. Amazing casual atmosphere was great to have a conversation with my colleagues while we ate our lunch. The manager knew one of my peers and came and chatted with us for a while and gave us great recommendations for things to do while in Colorado. Happened to walk by the restaurant about a week ago and saw that it was a rotisserie chicken place so I knew I had to give it a try, and I'm glad I finally did. The staff was friendly and helpful and the ordering process was straight forward and easy. I ordered a 2 piece rotisserie chicken entree plate with Brussels on the side. The chicken was moist, flavorful and the skin was crispy. The Brussels were cooked perfectly and glazed in a delicious sauce. I came during happy hour so the mule was only $5 and was made well. OMGYG, how have I not reviewed Brider??? I've dined in numerous times and done delivery at least twice, too. For shame... (to myself, not to Brider). Sometimes the most simple menus are the best. Brider offers salads, rotisserie meats, soup, baked goods as well as adult beverages. Since they opened a few years ago, the menu hasn't really changed too much. And there's really no reason, IMHO, because their options are just enough but not overwhelmingly so. And frankly, there's a handful of items that I really, really like so why mess with a good thing? Oh, and did I mention they have WINE? And a PATIO? Those two things make for a perfect afternoon by themselves. Add free wifi and I can work, snack, drink and get some sun all in one fells swoop. Even though I don't live near downtown anymore, there's plenty of reasons to go downtown and enjoy a meal at Brider. Denver holiday flea in Union Station? Go to Brider after!
