The inside of this restaurant is intimate and adorable and the staff are super nice. However, the food didn't quite hit the spot. The pork belly bun was meager for the price, featuring a tiny strip of pork and almost no sauce. I got the traditional tonkatsu ramen and the ingredients were tasty but there was very light broth, both in amount and flavor. We had chu-hi to drink (shochu highballs) and they were very good. I'm not sure we'll be back, and our search for an exceptional local ramen spot continues. read more

Everybody has their very favorite ramen spot(s), and we're to the point now where we have a bunch of other spots that always do the trick for us, too. We have ramen in every neighborhood now, even up here. Botan is definitely a tiny empire or Everett ramen (Everett ramen empires rarely exceed the tiny scale, but here we are). This location is in the bustling-est part of downtown, within a couple blocks of the arena. Longish blocks, low buildings, angle-in parking. Oldish construction, lots of businesses of all different kinds and tenures, shoulder to shoulder down the block under a common roof. They're right next door to a spot that gets packed, including on the sidewalk. Botan feels quietly removed from that once you're inside. It's a narrow space, and might feel a bit dim in daylight. Long narrow dining room, some decor, comfortable, with a long bar down one side. They have a full bar, including a couple of very nice JP whiskey selections. The menu itself is literally very pretty--nice folding chipboard cover with some glossy threading; bright color photos on big clearly-printed pages. Ramen, salads, some really interesting appetizers, and several pages of sake, cocktails, and other drinks. We checked out a spicy tonkotsu ramen (you and build your own from a list of options for each part of the bowl), and a House Special, along with softshell crab tempura. Everything came out within about 15 minutes. Piping hot. The crab was fantastic, tons of sweet crabbiness, nice chew to it. Both ramens rocked hard. Dense, filling umami broth, very homey and satisfying. Chewy noodles, great proteins and crunchy veg. I'm probably still pretty easily pleased by good ramen, and I definitely cleaned up every drop. In the end, this is an awesome choice for a bowl of hot ramen in town. Great food, great bar program, super friendly and cheerful service, great prices. I came back here to check if they have improved their technique in serving the ramen and they have. Though the soup and toppings were not as hot as I would expect, it didn't come directly from the fridge. Much more enjoyable experience. Absolutely delicious ramen. The restaurant is very attractive and service was great. I was waiting for a friend who didn't show and they held my meal until I decided to go ahead and eat. I love seeing and smelling some of the food prep. Parking can be a little issue at some times of the evening but I've found parking within a block usually. Recommended Japanese fusion. read more

This is our favorite ramen place north of Seattle. There are a lot of options but this one is the best for quality and service. Food is always delicious and everyone always provides great customers service. Whenever we're in the area, this is always our go to place for lunch. The overall vibe is also great. They have you order and pay first before taking you to your table, so you kind of have to make a decision fast. I like that they have lunch specials as well as combo meals that you can choose from, depending on how hungry you are. We got the Pork Belly Buns, I'm Starving Combo, and the I'm Hungry Combo. The buns were pretty good although nothing special, gyoza was probably the best out of everything we got even though they might be store-bought, and the pork rice wasn't bad either. I don't remember what type of ramen came with the combos but they were lackluster and did not satisfy my craving. My friend isn't a picky eater and will be happy with anything, so she thought the ramen was good. I honestly would come back and give them another chance, but I definitely haven't been craving this ramen ever since eating here. With that said, this is a cute date spot and maybe their other items are better. Maybe the other ramen options are better? The tonkatsu broth, while it had a good mouth-feel, was candidly a bit too mild. That might be what was intended, but it was too mild for my taste. I had both the pork belly and the pork chashu. Both were good. The really surprising standout was the aged bamboo shoots. Those were really good. When I go again, I'll probably try the spicy miso broth or the seafood one. Though I love pork, I am a little perplexed that they don't have chicken or beef protein options. That limits me bringing some of my friends to enjoy an otherwise pleasant gem in Everett. read more

However, they only had 2 servers on the floor so it took almost 10 minutes for the server to get to our table. No worries, we were not in a rush, and they were clearly doing their best. Our server was friendly and welcoming. We started with Ocean Balls and the Pork Belly Buns. Ocean Balls are tasty fish balls, a popular street food in Asia. Pork Belly Buns came two per serving and was really good with a nice sear to them for that added crunch. I could have eaten 4 of these! I ordered the Tonkotsu Ramen (traditional pork bone milky broth). The ramen was okay, but I have had much better. I felt it lacked that super milky-white, extra rich pork bone flavor in the broth. I met my bestie and daughter here for dinner and drinks on a Friday night. Free parking can be found on the street. Parking can be hard to find during peak hours. Happy Hour is offered Monday-Friday from 3pm-6pm. Lunch is offered Monday-Friday from 11am-3pm. Discover is an accepted form of payment. Indoors in long and narrow with a few cubbyhole tables for those who do not wish to sit in the open area. Large parties could easily be accommodated. The restaurant name is bit misleading since there is no bar/lounge area to sit in/at. In the case of Botan, bar means spirits, wine and beer. While looking over the menu, my daughter ordered a fruit Chu-Hi for $5 (hh). I ordered a glass of Chardonnay for $5 (hh). My bestie ordered a glass of Cab for $7. It's a bit odd that only white wine is listed on the Happy Hour menu. We each ordered a Sunomono for $2.95 (hh): sweet & sour crunchy cucumber salad. This salad was refreshing at first then became boring. It would have been nice to have soy sauce or Sriracha on the table to liven this salad up. We shared an order of Haru Maki for $3.95 (hh): five fried vegetable spring rolls served with a sweet chili sauce. The rolls were served hot and weren't greasy. We all enjoyed this appetizer. We also shared a Kani Mama for $4.95 (hh): crunchy crab (imitation) sticks filled with cream cheese and drizzled with a special sauce. This appetizer was rich and not at all spicy like the menu suggested. My daughter ordered a bowl of BYO (Build Your Own) Ramen for $12.95 + $1 up-charge for spicy miso broth. My daughter stated that she liked Botan's ramen noodles better than others that she's had in the past. She was disappointed that the broth wasn't spicy as the menu suggested. Again, it would be nice to have condiments on the table for instances like this. Our server was friendly and efficient. A set gratuity amount was included in our tab (only 3 of us) on top of asking for additional gratuity. I find this practice to be deceptive. Overall, I'm glad I tried Botan. With the difficulty of parking, lack of condiments and deceptive gratuity practices I do not foresee returning in the future. read more

Pretty good ramen! We tried this spot since we wanted ramen that wasn't in Seattle and closer to us in Everett. There's not many ramen spots in the area so we decided to give Botan a try. I got the special and my wife got the build your own. Overall it was good and not as salty as other locations in the area. The service was great although they seemed to be understaffed as there was only one server for the whole restaurant. The ambiance inside was really cute though and our experience was great. However, my friend ordered the chicken wings and it came out raw. We asked the waitress if we could substitute it for anything else because it's not edible and there's raw blood on it. She was helpful, and went back to the kitchen to let the workers know. She came back to us and let us know that this is a common thing and it shouldn't create a problem for us. Ramen was good, but wish there was a bit more quantity. Gyoza has a nice different unique taste to it with the sauce. It's not plain soy sauce but of mixture other ingredients. Very nice. The egg is seasoned and can be eaten plain or with the soup. Overall grade 7.5/10 due to the interior decor, customer service, and gyoza sauce. The main ramen itself was okay, not the best. So, they make you pay and tip before you get any food or service because of the pandemic. The hostess was ok, the food was bland and just not good. I tried the spicy ramen, gyoza, and chicken nuggets. My gyoza were literally soggy, undercooked and soaking in oil. I asked if they could be made any crispier and the lady looked me straight in the face and said this was the crispiest they could get. This is my second time trying this restaurant and second time being disappointed. The first was togo a couple months ago and the second was dine in. If you want authentic tasting ramen and to support local businesses check out J Ramen, they put this place to shame. Visiting a Everett from Vancouver looking for dinner on a brisk Saturday evening we stumbled upon this restaurant. There was a grand opening sign on their window. So we decided we try it out. We have lots of ramen restaurants in Vancouver so how will this fare with our taste buds? The broth was quite flavourful! It was good. I tend to eat slower and I was dining with 3 men who eat faster than I do. This is a really nice place for some daytime ramen and cocktails during their Happy Hour. We left full and satisfied. They had some really cool Japanese inspired cocktails that really hit the spot. My fiancée started off with a lychee dreamy nigori and I had the kuro kirishima raisin. The lychee was perfectly balanced between sweetness, alcohol and lychee flavor. For my drink, I can't put my finger on why, but it just wasn't for me, which is okay because I just wanted to try something new. I ended up ordering a yuzu dreamy nigori after that, which was phenomenal. For food, my fiancée ordered a pork bun and the spicy miso ramen and I got some edamame and the vegetarian ramen with spicy paste added. My fiancée absolutely loved her ramen and pork bun. The bun was meaty, sweet and delicious. Her ramen was bursting with different flavors. My edamame was alright. It was unsalted so it wasn't as great as it could have been, unfortunately. My ramen was also just alright. It seemed like both the vegetables and tofu were just thrown on top of the ramen without any seasoning or anything. They could have at least stewed in the soup a bit because they just tasted raw and flavorless, which really stood out in a bad way in the broth. The broth was also a bit strange because it seemed like they threw the spicy paste at the bottom and didn't try to mix it into the broth. My fiancée's ramen was noticeably spicier than mine, until I got to the bottom of the bowl, then all I could taste was the spice.
