So much hope for this place. Such a disappointment. The ramen broth clearly has star anise, and it tastes more like a fatty Vietnamese phở than Japanese (or even Korean) ramen. I asked if the gyoza were made in house. They are not, and I suspect many of the other side dishes are not either. Sad. In addition to having an odd taste for ramen (it was okay, not bad but certainly not a great broth), the chashu was dry, overcooked, and tough. Not at all pleasant to eat. Hey, the jammy egg was good. And the space is inviting, comfortable, and clean. But this place overall falls far short. We will not be returning. read more

Botan Ramen n' Bar was a very nice Ramen experience for this novice in Ramen. In walking in, you're greeted by a stunning cherry blossom tree and flowers filling the interior. Adding to the outdoor ambiance inside, we were seated in a 'shaded porch' area, which still had plenty of room (such partitioning could reduce interior space). We were promptly greeted by the staff, who interestingly that day were not of Asian descent as typically found in Far East themed restaurants: more like your average Seattleite college-age server. I like that they bucked the stereotypes. As a ramen newbie, I was overwhelmed by the expert-level menu, the main reason I didn't give 5 stars. The menu starts with alcohol, leading me to look around for the food menu. There it is, tucked after several pages of booze and virgin drinks. The food section starts with the 'Botan Deluxe' (don't recall the actual name used) and lists the components using words that I as a newbie have either never seen before or maybe have seen but not understood, so my anxiety level spiked because I don't like being shamed into just ordering without understanding. Fortunately the waitress worked through this with me after my telling her my issue. The following page had a 'build your own ramen' blocked off into sections: noodles, broth, extras. With the extras, you get like 3 or 4 included (green onions, egg. garlic-something, seaweed, etc.) and more cost $1 extra (not printed on menu). I did the udon noodles, bone broth (insert fancy name but not with the fancy-name soy sauce added), and one extra ingredient over the included number. When asked 'tell me more about the green noodle?', the relatively new employee was unable to immediately describe, but went back and learned it was spinach blended. We also ordered a (fancy name) cucumber salad starter: yummy, sizable and recommended. The orders arrived promptly, with just a small break after the starter; the egg I ordered was replaced by bean sprouts: the served quickly and gracefully delivered the missing egg. Each ordered ingredient was placed as an individual island: it's up to the customer to blend or not (I enjoyed not mixing so to experience each flavor). The udon noodle was exactly as I had imagined and desired. My wife said she enjoyed her selection as well, although didn't pick out any unique flavor to the green noodle. The bill was right-priced if not even on the lower side for the neighborhood. We'll be back again to try more of the offerings now that we have a little bit of familiarity with the exotic descriptions. read more

Was looking forward to a nice bowl of ramen on a rainy day but unfortunately this place is not it. I ordered it to go and built my Own bowl with pork belly. It was just ok but the pork belly was horrible. It was hard and dry I couldn't even bite through it. All the pork belly I've ever had was always soft melt in your mouth so this was such a disappointment. I don't think I'll be trying Botan again. read more

We came by this spot after stopping by Salish (the pottery place a couple blocks away). The ramen noodles were quite tasty! and I enjoyed the cucumber salad flavor/taste. The other sides for their house ramen were nice too, and quite a number of them. The egg was also very nice and jammy. The downside was that the chashu was... maybe kind of bad? The meat was tough and maybe shouldn't have been seared as long (or maybe at all?). The service is consistent every time you go in, whether there's more than 5 tables seated or only two, you'll get subpar service. Takes around 20 minutes to even place an order. Once you get your food you're pretty much forgotten until it's time to pay. Glasses are never refilled, if you need anything make sure you order it the first and only time you'll get any interaction. I've never dined in when it's busy and honestly it's frustrating. It's decent food to get in downtown Everett but honestly I think I leave thinking about my frustration with the service over the meal I just enjoyed. If it looks busy, it's because they're all tables that have probably waited for 30 minutes to get their check. I took the time to type this as I've been waiting for my check (going on 24 minutes). My husband and I are visiting Everett for a business conference and initially drove to this little strip mall lined with a handful of cozy little cafes. We planned on going to Umami for something healthy, but were hoping to find a hot meal instead of poke. Luckily, Botan is just right next door offering the exact cozy hot meal we were looking for in this chilly and rainy evening. I ordered the chef's special that had traditional Tonkotsu ramen and gyoza. My husband ordered the spicy chicken teriyaki with rice and salad. The portions were hearty. My husband's salad was drenched in dressing but the lady at the counter was more than happy to remake it when we asked her. Flavor wise, it's good but nothing too special. You notice the pink tree right away and something to note is they keep this tree very clean. We got sat right away and the server was very quick to bring water to the table. The menu is not very large; however, you have a lot of build your own options with the different types of ramen and the beer list has many of the imports you know and love. When our food was brought to the table you could tell the broth had been made in house. The smell was very aromatic, and the taste of the food was fresh. Loved the filling but felt they were not warm enough. I got the traditional Tonkotsu and asked our server for the spice level (originally was going for the spicy miso). But he said if it was the spicy miso, it would be a 7/10 on the spice so settled for Tonkotsu with spice on the side. The spicy sauce was very good! I only put a little bit and it gave it a nice kick! My mom also got the traditional one and then my dad got the seafood one (looked pretty good!) I like that their menu has lunch combos, and a specific combo that has 3 options based on your hunger level lol. One is called "I'm starving!" Combo. Located in downtown Everett on Colby Ave, Botan Ramen n' Bar is one of two Botan restaurants in the immediate area. The menus are different (the other has teriyaki), so review the menus before deciding which to go. Being on Colby Ave, it is street parking only but plentiful. Entering Botan, a giant faux cherry blossom tree decorates the left front of the restaurant, blending into an area with trellis style coverings. I must say it's kind of cool. We knew what we wanted, so we placed our order soon after seating. It is 45 minutes before closing, so we want to make sure we finish in a timely manner. They mentioned to us that it is last call for kitchen orders, which is perfectly fair. Our service was mostly reasonable, except they made a grave omission - that they are running out of broth! Our two ramens arrived, and the broth is just covering the noodles. I thought that is how they serve them, but I asked later. The server told me they were very busy earlier and they are low on broth. I wish they told us. I would have ordered differently. I like my ramen very well covered in broth. The Food: Pork Belly Bun (2pcs), $8.95 - 3 Stars The meat is too thinly cut and small, and the buns are served unnecessarily covered in sauce sloppily. It does not look like the menu photo or the business photo that they posted on Yelp. The business photo looks way better. Haru Maki (4pcs), $6.95 - 3.5 Stars The vegetable spring rolls are well fried and crispy outside. The inside is very mushy. The ingredients need a change to give it some texture. Chicken Wings (6pcs), $9.95 - 3 Stars Glazed in an abundance of "traditional Japanese sauce", the no-longer-crunchy chicken wings are swimming in a sticky sauce. They could use a lesson in less-is-more. I honestly don't know what the traditional sauce is. It's too thin to be katsu sauce, too sweet for many of the typical entrée sauce. They tasted pretty good but too sweet for a genuine Japanese palette. Traditional Tonkotsu Ramen, $13.95 - 3.5 Stars The char siu is thinly cut with the typical fattiness. There are plenty of bamboo shoots. As previously mentioned, there is not quite enough broth. Very unfortunate as the broth is tasty. Seafood Lover with tonkotsu broth, $15.95 - 3.5 Stars The Seafood Lover normally comes with miso broth (he said). I asked if he can change it to tonkotsu broth. He said yes, no problem. Sigh. It's better to mention the lack of broth issue. This could have easily been a 4+ stars dish. I will say they serve their noodles softer than the average ramen place. If true ramen al dente is important to you, you may want to skip the ramens. read more

My son and I went here recently for a late lunch while in the area. He used Yelp and picked Botan. He loves ramen so this was a nice surprise to discover a nice ramen place in Everett. The first four pages of the menu were alcohol drinks such as Japanese beer, Sake, etc. I guess the word "Bar" is in the restaurant name so no big deal. It just seemed like a lot of options to put on the food menu. We shared the Chicken Karaage as an appetizer then each of us had a bowl of yummy ramen. He picked the build your own and I went with the Tonkotsu. The Karaage was perfectly browned and fried and was a good sized serving. The chicken seemed a bit dry and per my son, it is supposed to be juicer. It came with a ample amount of dipping sauce as well. The star of the place (after the aforementioned booze) is the ramen. Each of us loved what we had and consumed it all. I really loved the attention to detail in the interior decorations in this place as they had a lot of cherry blossom decorations tastefully displayed throughout and interesting framed prints on the walls and a village themed section with tile roofs that looked pretty authentic. Stopped by here before a Tips game, Ramen sounded especially good tonight. The restaurant itself had a weird but neat ambiance. The fake tree added some character to the inside, but the seating arrangements were a little weird. Nonetheless we sat and browsed over the menu. They had a pretty decent variety of imported beer, which is always nice to see. Not just the 2 main ones. Sake menu was great too. We both ordered a beer and sake to share. We also placed our food order at the same time. The server was friendly, but seemed to disappear after we ordered. We received our drinks and first round of food at the same time(otherwise this would have been 5 stars). The edamame was pretty basic, it could have used a little more salt, but not a big deal. The chicken karange was crunchy and juicy, however we asked for a different dipping sauce(spicy mayo is a good compliment to this). The cucumber salad was delicious and refreshing. Not long after that we received the I'm hungry ramen, which for the price would fill anyone up. We added bok choy and sprouts to ours. It came with the ramen, 4 pot stickers(which next time we'll order more of those DELICIOUS), a bowl of rice with pork and I'm not sure what else, but it was good. And a hard boiled egg, which I'm not normally a fan of, but even that was packed with flavor. We added a little bit of seasoning that was on the table to enhance the ramen a bit. Overall we were VERY happy with our choice to come here! There were many things that we looked at to order for the next time. My wife was in the mood for ramen, which is shocking because we've had terrible luck finding good ramen in the area and I was afraid that I'd never have a chance to redeem one of my favorite types of food. In a bizarre twist of fate, I was too full from previous feasts to really splurge, and was more of a passenger and clean-up crew on this adventure. Our visit was in mid October and the restaurant was decorated for Halloween, with spider webs across the ceiling and skeletons on the walls. That may be your thing, but dangling spider webs aren't on my list of appetizing décor. They also put up yellow "Do Not Enter" tape over the door that leads to the bathroom. That felt weird, because I needed to enter for biological reasons, but the rule follower in me took a moment to be convinced. We were seated quickly in a then-empty restaurant. Water was provided within moments. Maybe they were still setting up, because it was almost 15 minutes before our server came back to take our order. It was long enough to start feeling uncomfortable. I asked for the grapefruit Chu-hi, but was told that it shouldn't be on the menu anymore, and ended up with a green apple Chu-hi instead. It was tasty and the alcohol wasn't at all prevalent. It was like a sweet green apple soda. My meal was three of the four provided pieces of Kani Mama. The menu says crab meat, but I believe it was imitation crab based on taste and texture (not to mention price). Tasty and hit the spot, though I'd appreciate transparency if it really is imitation crab meat. The wife got a lunch combo of Tonkatsu ramen with a side salad. The cucumber salad was refreshing, with a sweet/sour sauce. It paired well with the heaviness of good ramen. I'm pleased to say that she loved her ramen, especially the richness of the broth. She doesn't normally eat the marinated eggs, but was willing to try it this time... only to discover that this combo doesn't have it. Shoot! Our server had told us before ordering that the combo was exactly the same as the one on the regular menu, which includes the egg. She didn't mention it again, but I was disappointed because the creaminess that it adds is a favorite of mine and I don't know if/when she'll be in the mood to be ramen-adventurous again. I would've gladly ordered a marinated egg on the side, except that our server never checked on us. The restaurant got about three-fourths full, which was enough to keep the two servers busy. Having served at restaurants for years when we were younger, both my wife and I were disappointed with the service. The food was good, but the service makes a five star review impossible. If service is the same on our next visit, it would be our last. Decor is a personal preference so I'm objectively choosing to not penalize the restaurant, especially since it's seasonal. read more

I'm not a tonkotsu broth fan, but on another whim, decided to order. the broth was a light, creamy broth unlike the gluey, fatty broth that seems to be de riguer nowadays. large portion of chasu, not the common paper-thin single slice. perfect egg slice. tons of bamboo shoots, and super thinly sliced green onions. i was pleased to see red pepper on the table I happily added to my ramen. no sriracha please! steamed buns with pork belly: as expected. buns were fluffy, they did not skimp on the pork belly. I did not care for the sauce, but that's a personal taste. karaage don: loaded with crispy seasoned karaage. a huge portion of lightly pickled very thinly sliced cucumber was a delightful surprise and a calming foil to the muscular karaage serving. too much mayo, imho, but again, my personal preference. my dining partner loved it. rice (in the donburi): outstanding! steaming hot, moist, and tender. not dried out. not microwave reheated. noodles: perfect! slightly al dented, not mushy. it's on the thinner side and curly: my favorite style of ramen noodles. good food and the price is right. The inside of this restaurant is intimate and adorable and the staff are super nice. However, the food didn't quite hit the spot. The pork belly bun was meager for the price, featuring a tiny strip of pork and almost no sauce. I got the traditional tonkatsu ramen and the ingredients were tasty but there was very light broth, both in amount and flavor. We had chu-hi to drink (shochu highballs) and they were very good. Yum yum yum! Met with some friends for a birthday this last Friday and it was definitely Ramen weather! I had the Kani Mama (I believe), it's their version of crab Rangoon but with like a lil' extra! It did not disappoint. The presentation was on point and that taste was just yum-yum good! I got the traditional tonkotsu Ramen and that broth was really creamy and filling. I felt so warm inside. The meat was cooked to perfection and had great flavoring in that broth. Our server was very nice and knowledgeable of the Sake. He recommended a great Sake to us that was easy to take shots of and quite scary because you could probably drink about 3 bottles and be done! This place is awesome! Went here for lunch on a date day and were very happy we did! I am not going into to all the dishes, I will just tell you all the food had deep and rich flavors and was very filling. The sweet potato sake was a bit alcohol forward at the beginning, but putting an ice cube in it opened it up and made it a sweet and tasty sipper.
