My nice tri tip

I dont eat much red meat, but when i do i make the drive here to buy it. Most of their beef is dry aged and prime and while the prices are creeping up they are still very reasonable. Last visit i scored an exceptionally marbled tri-tip. They have hanger steaks if you ask. Their 'texas' sausages are my favorite flavor. Main thing: the meat here doesnt make me feel sick like the stuff from costco or the grocery store.

This place is a great butcher with a lot of variety. I've been there for skin on pork belly, dry aged bone in and boneless ribeye. It was all delicious and the marbeling on the steak was so good! We'll definitely be back to try more things. The owner is very nice and always patient and helpful.

It's a decent butcher shop with a big variety, including some more exotic meats. The meat looks great, but I have to question the Prime designation on some of the beef. Especially since we bought three NY strips and sous vide cooked them, but they weren't super tender as Prime should be (especially cooked this way). I've had juicier and more tender steaks buying Fred Meyer's Choice Angus steaks. We also bought quail for Thanksgiving. Like most of the exotics here, they were frozen. They were good, but they showed signs of repeated partial thawing and re-freezing. There was a TON of ice in the package and around the quails--the type that forms when things melt and re-freeze. Also had a good bit of frost in the package. The staff is friendly and helpful, but a little slow. That's okay in normal times but a little unsettling in the COVID-19 era when you're in the store waiting with two other customers. To their credit, they do follow COVID-19 public health guidelines for masks, gloves, sanitizer, and capacity limits. Overall, I'd probably only return here if I was in search of some exotic meat for something special.

This is a very limited review. I live a bit farther away and am unlikely buy raw meat from them. The selection looks amazing with a price to match, not too surprising. Quality meats cost money! The thing I often buy from butchers when I happen to be out and about is their beef jerky. Occasionally, there are rare game jerky that is awesome too. I bought two packs from Bob's - peppered and Hawaiian. They were $6.99 each for (I think) 6 oz. Cost is on par for butcher meat jerky. The peppered one was on the salty side. The flavor of the Hawaiian was more on point with discernable pineapple juice taste. Alas, the meat was super stringy. I really want to like it more, but it was super difficult to chew. I think the cut of the meat did not cut through the grain making the pieces chewy. The ones I buy from Don & Joe's at Pike Place are much better. Ah well, at least I tried it.

Chicken thigh, better price and quality than 'super market'. Grilling is higher praise. They bring quality cuts of meat.

Their brats are as good as anything from eastern Wisconsin. For my part, that says a lot. I'd encourage others to express their praise in rhetoric beyond my own. I say there isn't a better butcher for 50 miles in any direction. I eat meat. I shop at Bob's. Their attention to quality comes out in the selection of eggs, butter, and in the specials they hold behind the counter. I shit on reviewers giving less than 4 stars.

We go to Bob's whenever we have a big night planned or just need some great cuts. It seems odd to mention but their chicken breakfast sausage is stupid good - possibly one of the best breakfast sausages I've ever had. They have great sausages for grilling, delicious game meats, and options for special orders and package deals. Can't recommend this small business enough!!

Seattle moment…read more Walking around downtown, I spotted this old corned beef spot that's been there since 1948 and decided to go in. First guy I talked to either came from Dallas or knows Dallas inside and out. He has family there, has lived in Seattle a long time, and told me his grandfather used to bring him here as a kid. He's been eating here basically his whole life. Second guy had lived here for 40 years and said this was somehow his first time ever trying it, even though he'd walked past it forever and always meant to stop in. We stood there talking for a while. Really good guy. The woman behind the counter did not speak English, so I got to tell her in my very limited Spanish, "Thank you very much for your work. It looks beautiful. I really appreciate it." She answered me in Spanish, and then I had to admit, also in Spanish, that I was very sorry but I did not understand Spanish, I only barely know how to speak it. She laughed. I laughed. It was great. Then I got back home, opened the box they split for me and my mom, and this was half of it: best Reuben I have ever had in my life. Just one of those unexpectedly great little trip moments. Good food, good people, good conversation, and one of those places that feels like it's been holding onto a piece of the city for a long time.

We also didn't realize this area was shared with the butcher shop because 1. we didn't see it 2. we are not Seattle locals and only came for Eggslut. My boyfriend's little brother briefly leaned back against the meat shop's display case, and the owner immediately snapped: "Do me a favor and get your butt off my case." His brother got off the case right away, but the owner continued to mutter "fucking rude". He stared us down and started shooing us away with his hands, literally saying "Get." like we were animals. We stepped aside, but he kept staring us down. I asked him, "What are you looking at? What do you want us to do?" He escalated things further and said: "Do you want me to come find your house?" Absolutely inexcusable to say to anyone, let alone a young woman. When my boyfriend said, "You could have been nice about it." He said, "I don't have to." This wasn't just a reminder about his equipment, it was the tone, the hostility, and the lack of basic respect. No one came into the building after us, so we were not obstructing anyone from going to his business. We were simply waiting for our food and were met with aggression from this man. He does not deserve any business after such a lack of basic decency.

Maybe he is salty that people are only coming inside for Eggslut, not to buy his meat...unfortunate.

We recently started going to one of their locations outside of Seattle whenever we were in the area. The service remains flawless. It's one of the few butcher shops that consistently deserves a tip but they are always a bit extra! This week, we did a perfect surf & turf : wagyu steak and Chilean sea bass - complete with accompaniments. The fish was flaky and the steak was perfectly seasoned, seared and medium rare. As I was setting up drinks, I was the last one at the table. The steaks were sitting there and everyone had stopped eating. When I asked how it was, I was told "Try it, tell us what you think". I sliced into the steak. It looked amazing. I bit in. BUT afte a chew, I stopped eating it. The beef was definitely 'off' andd spoiled - which explained why no one was eating it. Fortunately, it was surf & turf night so we still had enough to eat. But after paying wagyu prices and lovingly cooking the steak, the disappointment was beyond words. Obviously I will call the store as I want to make sure they pull the remaining inventory from theirr display. At this point, my husband is worried as he had three bites as he presumed the aftertaste was from the truffle sauce I had drizzled. Now, he's worried that he will get sick. I guess time will tell. So FYI --- make sure you check the original dates of the meat before they cut/vaccum seal. Long story short - I hope they read this and review their QA processs to ensure all meats are dated/rotated/stored.
