This is the highlight of Sunday farmer's market. There's always a line-up so without even trying the food, that alone is an indication about the quality of this food stand. There are different specials every week usually always including some variation of a biscuits and gravy and then a hearty biscuit sandwich option. Everything I've ever tried has been phenomenal. As far as the gravy goes, I've had a mushroom base as well as a smoked shrimp (both heavenly). And my all time favorite biscuit sammy included skirt steak cooked to perfection medium rare with a runny egg and some kind of amazingly addictive sauce. We stopped by this spot while visiting the Farmer's Market under i83. They had a small menu with 3 breakfast sandwiches, a couple biscuits and some drinks. We went with a breakfast sandwich that had bavette (flank steak) with egg and cheese on top of a biscuit. The steak and egg were cooked perfectly and the biscuit was delicious. Blacksauce Kitchen has been around since '10 and is owned by two friends, Damian Mosley and Vesnier Lugo. They're a mobile eatery, so you can generally find them at local farmers markets and festivals, or even hire them out for private catering services. They're known for their large oversized biscuits, biscuit sandwiches, as well as special features (such as limeades, lemonades, bread pudding, etc.). I was able to get to the Baltimore Farmers' Market & Bazaar early enough where I was able to catch them before they ran out (and, yes, they do run out of item QUICK!)! The hubs and I shared a Maple Sausage with Free Range Egg & Cheddar biscuit sandwich - the sandwich itself is pretty massive; the biscuit is of a steroid-sized and super generous - it had a slight crisp exterior and super moist within; while the biscuit was tasty, it was just way too much and an uneven ratio to the sausage and the egg (maybe double-up on the sausage and egg?!). Another idea is maybe to eat just half of the biscuit, and save the other slice for the next day for breakfast :P The maple sausage seemed local or housemade, with a subtle taste of spices (I just wished it was a bit more pronounced and spicier!); the egg was super tasty, and it was interesting to see the eggs being cooked on a grill! To wash it down, we tried the Blueberry Lemonade - this was slightly tart but not too sweet. Staff was super friendly and pretty efficient; just note that you do wait a few minutes for your order as everything is made-to-order and fresh. This review is based on their new location in Remington. We walked and were noticed immediately. We are regulars for their Sunday morning stand. It's February and the JFX Market isn't opened right now. So this was a real treat. The place is small. Definitely a carry out situation. There are two seats at the end of the place with a bit of standing room with a counter to eat, but I highly suggest getting it all to go. We got the beef brisket with tomato jam. Did not disappoint. The brisket was moist and tender. Cooked perfectly. We also got a shiitake melt. The bread was a bit dark for my taste, but it honestly didn't change much. However, I did feel like there was more bread than mushrooms. We decided to get a side of the cornbread with molasses butter. I'd eat that morning, noon, and night. The best part of the crew opening a place for Thursdays is that they are selling their jams now! Eek! Next week we might just be stocking up on some onion and tomato jam! read more

Blacksauce is the baawwssse. These guys focus on one thing, and they do it really well! Biscuits and biscuit sandwiches I absolutely love chefs who do one thing really well. In Asia you see a restaurant that only focuses on one noodle dish. They focus on every detail from the broth to the hand made noodles. In France you might have bakers who bake or make candy because it is what they love to do. It's their livelihood. They're not struggling actors trying to get by and auditioning on weekends. This is their life, they're perfecting their craft. While I can't speak about the depth of motivation that makes these guys get up every morning, I can say that Blacksauce Kitchen has been on their biscuit hustle for several years and I hope it continues to pay off. At the Saturday Waverly Market aka the 32nd street market, they set up a tent near the parked cars on the outskirts of the market. Just search, you'll find them ...make sure you do. The braised chicken is juicy, tender, and shredded like pulled chicken. Has decent flavor, good texture with a hint of pepper. Good balanced flavor. The biscuit: Pretty much everything you want in a biscuit. Great layers of buttery flavor, good crust in some bulging areas, great moist and THICK texture on the inside but not so much that you feel like your choking. All in all, the flavors work well together, the textures are great ...not too salty, not too buttery, not nasty feeling. An elegant balanced biscuit sandwich. Oh, the size is awesome. It's a little bigger than a softball. Being a big eater, I was pleased. Though their biscuit and biscuit sandwiches are their signature item, they have a very soulful, homestyle cooking influence ... Excellent! Everything is cooked to perfection with care. From the simplest to the more complex, vegan to meats, nothing is an after-thought or ordinary. The shrimp were the largest I've ever seen and delicious. The smoked chicken was flavorful. The breads were unique and tasty. The cabbage was caramelized and flavorful with fresh herbs. The mac and cheese was decadent without being too salty, oily, or rich. The chickpea dish was spicy and full of flavor with the chickpeas perfectly cooked. Boyfriend and I went to find this place at baltimore's farmer's market and bazaar this Sunday morning. Their stand was around the bazaar section as opposed to in the farmers market. We almost missed it since we only circled the farmers market. Boy were we glad when we found it. They have a new menu every day and you can find it on their website. Today they had biscuit and rabbit gravy, biscuit with short ribs, biscuit with caramelized apple and fresh greens. We got the biscuit with rabbit gravy and the biscuit with short ribs. (both for $7 each) Oh. My. God. Everything was delicious. Their biscuits were delicious, flakes and moist. THAT GRAVY...I COULD DRINK THAT STUFF. And there was an egg on top as well as rabbit meat in it! I wish they poured more gravy in it!! The biscuit and short rib... Wow that short rib was cooked to perfection. It was AMAZINGLY MOIST AND TENDER. It was probably the best bbq-ed meat I've had yet. So delicious. We also got some hot cinnamon apple cider and it just hit the spot! This place has been in my bookmarks for a while when I came across one of their biscuit sandwiches posted on Instagram. The sandwich option for that day was Cage Free Egg with Bavette steak. I have to say taste wise I'm completely enamored. The biscuit was fluffy and buttery, then it paired well with the steak and egg combination. Also the Farmer's Market has a lot of great vendors that fit a wide range of tastes and dietary restrictions. I did have a few issues, one being the way the steak was cooked. It wasn't fully cooked but I assumed that the type of steak was just served a bit rare. My stomach was a mess for the rest of the day and I knew it was from the steak. Also the menu offering was very limited. I think they can add a few more options plus when I asked if I could get sausage gravy on the side I was denied. I don't understand why but I went with it since it's their policy. Taste wise, even with the steak mishap, it was very good. Whooooa. These two guys make outstanding biscuits. I thought as a southerner I would not have a good biscuit again...I was simply wrong. They are big, fluffy but substantial enough to hold...get THIS...brisket and egg!!! Holy. I joked that it weighed 10 lbs...its not that big but it is BIG and delicious. They carved the brisket (or should I say briscuit?) like it was at a carving station in fine hotel (we were at the 32nd Street Market) and made eggs in these little metal biscuit cutters (great idea) on the grill in front of you. I wanted the pork biscuit too. It had home pickled jalapeno on it. And there is a biscuit made with jowls and jowl drippings. I can't wait to try this. It's a food truck at the Baltimore Farmer's Market, so catch them while you can. There's usually a line, but the food is worth the wait. The biscuits, by themselves, are rich and a little on the heavy side, but very good. The chef comes up with well thought-out creations each week, like brisket with tomato jam, roasted or fried chicken with spicy honey, bacon and smoked fig jam, roasted tomatoes with smoked cheddar...you get the picture. I'm getting hungry just typing this out. The last one I had, mushroom gravy with a free-range fried egg, was simple yet sublime. So its been a while since my last review, but that's because everywhere I have been lately has just been blahh, and just alright. I really only want to review great places, and Blacksauce Kitchen is one of them, so that people visiting the city of Baltimore can experience the real Baltimore, and not all those bullshit chain restaurants down in the harbor , the places you don't need to leave your town to eat there (you know who I the places I'm talking about). I had gottem some great intel on this place (thanks Susan!!) so for dinner it was a no brainer to check this spot out. Located in the heart of the Remington section of Baltimore, Blacksauce is located on a corner of a very tight city street and at first sight, the grey building looks almost uninhabited. But after further examination and the delicious aroma coming from the screened back door, I knew I had found it. So as I walk in, I get hit harder than a Mike Tyson right hook with delicious smells of smoked and grilled meats. I had already peeped the menu on their Instagram page (give them a follow if you love food porn, and if you're from Baltimore, @blacksaucekitchen) so I had kinda already knew what I was going to order. The play was to try a lot. And a lot it was. I ordered up the lamb patty melt, a succulent burger patty made from ground lamb, then griddled to melt the unknown style of cheese. On top of the patty melt came what seemed to be a caramelized onion jelly, which was so fucking good, I would eat that on plain toast! Second item ordered was the fried turkey sandwich. I didn't really know what to expect for this because there was no description. My initial thought was deep fried turkey like a thanksgiving turkey then carved and put into a sandwich. I was wrong. This sandwich was turkey breast, breaded in some of the best breading I have had to this day. Now what made this sandwich exceptional was the, possible cranberry jelly sauce and the arugula added to the Sammy. The sweet and tart cranberry sauce paired with the spicy bite of the arugula paired so well with the spice blend found in the deep fried breading. This sandwich was my favorite thing I ordered, and believe me when I tell you, that patty melt banged soooo hard, that if you get the opportunity to get both, do so. You can't have sandwiches with out sides, so the order for sides was grilled zucchini bread, and mac and cheese. The grilled zucchini bread was a wild card. I didn't know what to expect, but when I opened it up to see it was a normal baked zuke bread only to be reheated the chef grilled it until there was charred grill marks on the bread. So unconventional but soooooo good! The mac and cheese was exceptional. The flavor of the dish was smoky, and creamy, and had a great crisp to it, it looked like it was placed under a broiler for a couple of minutes. Blacksauce Kitchen only opens the store front 1 day a week, on Thursdays. And quite frankly, it may become my new dinner spot every Thursday. As a regular at the 32nd Street Farmer's Market, I have had my eye on these guys for a long time. They usually have a long line for their biscuit sandwiches, so I figured they have to be good. Luckily for me, they opened up a curbside shop close by. These guys are only open 11-8pm on Thursdays, so they can still give their all at the local farmers markets. At their brick and mortar shop, they are doing less biscuits and more brisket and belly. According to the lovely ladies in the front, the menu will change weekly. In addition to this printed menu, they have a pegboard menu on the wall. The Barbecue Beef Belly sandwich with grilled leeks and cheddar was calling my name. Given, the reputation, I figured anything on a house-made brioche was worth it. Big things are coming to Remington, and on Thursdays, one is already here. read more

Bless Blacksauce. They are so sweet. They talked my picky friend through the menu on Facetime. As Divine West-Indians, we enjoyed the smoked shrimp and okra roti, oxtail roti and coconut milk braised greens. The pot liquor filled us with yummy. It was their empathy and graciousness for me. They gifted me a free and cooling Limeade (I rode a scooter there in 90 degree weather). When I got home we noticed they gifted us a free piece of cake that I am savoring for my birthday tomorrow. Full Disclosure: I adore breakfast foods, especially biscuits and sausage gravy, they are my kryptonite. So when I was told that Blacksauce Kitchen specialized in my favorite morning meal, I did the unthinkable...set my alarm clock for 8AM on Saturday in order not to miss my opportunity to indulge in a fluffy food fantasy full of buttermilk baked biscuits. Groggy but eager, I managed to find BK at the Waverly Market - 32nd Street Farmers Market (or Sunday at the farmers market under JFX), and it did not disappoint. In fact, it was an absolute food orgasm. After savoring and sopping my first biscuit/gravy combo, I immediately stood in line and went back for seconds. It was melt in my mouth perfection so heavenly that I know my Virginia born southern cookin' grandmother would throw down her rolling pin and scream "I'm not worthy." The biscuits are dense buttery behemoths that are both moist, fluffy, and heavy all at once. They are always golden brown, never a burnt bottom in the bunch. I was impressed by the portion size and the complexity of the flavors in the Bacon Maple Biscuit. Huge chunks of bacon and a hint of sweet syrupy loveliness makes each biscuit more than a meal...they are masterpieces. Now, some sorry suckers may say with regard to the breakfast sandwiches that there is too much biscuit and that the bread overwhelms the main ingredients of the meal. THOSE PEOPLE ARE WRONG AND SHOULD NOT BE ALLOWED TO YELP! Seriously. These sandwiches are perfect, and the biscuits only enhance what is already fantastic food. With that said, I am glad I got up early because despite the small number of reviews on Yelp, the word has spread and demand is significant considering the limited (but totally awesome) scope of this vendor. (6/8/2014) Blacksauce Kitchen sets up at the Waverly Farmers Market on Saturdays and the Baltimore Farmers Market under the JFX on Sundays, Thursday at Roadside Smoke in Sparks, and the occasional Friday event at Union Mills. They're also available for catering, have seen them at competitions, known friends who have hired them for weddings and for corporate events. Love the huge, dense, moist, buttery, buttermilk biscuits and the well-seasoned meats, and who doesn't love a nice fried farm-fresh egg on everything?! Had the Jerk Steak and Egg sandwich this Sunday, tender grilled meat, seasoning was light-handed but presents, slight kick of lingering heat towards the end of the bite. Blacksauce always has the longest line in the Mt Vernon farmers market, and for good reason. I appreciate how the biscuit types change every Sunday, but it's a good idea to get there earlier (before 11) otherwise the popular types run out. Mine came with pear and Manchego cheese, which was quite an interesting combo. The biscuits are crumbly and rich. I got the biscuits & gravy because I'm from the south, so I've gotta try this when I find it just to see how it compares. I was pleasantly surprised. The biscuit was fluffy and delicious. Gravy was good, but I felt like it could've used a bit more flavor (salt and maybe some black pepper?). I really wanted to try the strawberry limemade, but I didn't like the 3 dollar price tag... next time! I look forward to trying them again the next time I go to the farmer's market, but I really wish they had an actual restaurant. read more
