We arrived around 7:15 p.m.'ish only to be told they were out of 3 major items (brisket, pork shoulder etc.) but still had ribs and wings...ordered the ribs and they were SO DRY and OVER COOKED they were essentially INEDIBLE. I now understand they'd likely been "cooking" for over a day but they should not have been offered or served by the staff/restaurant. Wings were great. Sides were great. They were so juicy and tender, cooked absolutely perfectly! The greens I order were also amazing along with the cornbread! My husband ordered a pulled pork sandwich. The amount of meat that they put on it was impressive. They did not skimp out and he absolutely loved it! I drove out to Frederick around lunch time and decided to continue my quest. After all, Frederick used to be and still has remnants of a rural town. And rural towns, at least in my mind, is where barbecue should be done well. I ordered the brisket and the chopped pork. I'll give the brisket a B for effort and a B- for flavor, which is kind of related. The chopped pork gets a B- and a B-, respectively. The brisket was slow cooked and was moist and tender. It held together well on its own and fell apart at the hint of my fork. Although the restaurant smelled of smoke and meat, I didn't get a deep rich smoky flavor in the meat. Of course, that's what I wanted--the barbecue flavor. I'm not super surprised because I didn't see any smokers or smoke anywhere near the restaurant. Since I can't prove that the meat isn't actually smoked, I'm going with a B rather than something lower. I also felt like they were a bit timid with the seasoning. They get a B- because the flavor wasn't bad. There was a hint of seasonings at the "exterior" of the brisket but it didn't penetrate deep down into the meat. The pork was on the dry side and, as with the beef, the seasoning wasn't deep enough. The service was good--for carry out anyway. The guys were really friendly and I think the young man at the register gave me his honest opinion ("I'm not really into potato salad, but people seem to like it.") And they let me sample the brisket without any fuss. I'm going back to Frederick in a few weeks. Unless I find another place to try, I might give Black Hog BBQ another chance. They had three sauce options which was great. Honestly the meat was so good that I didn't even need to add much sauce to it (pork shoulder, pulled pork). Drinks: I ordered a Bloody Mary, which they make differently. They add some type of BBQ sauce to it and do a sugary dry rub for the rim - which by the way was absolutely delicious. Came here during Memorial day after hiking. I followed the road signs to get here. There is a parking lot in the back of the restaurant and a few street spots in the front. When I arrived, it was just about lunch time. There were a few people enjoying good BBQ. It is a family friendly restaurant. I was quickly seated when I arrived. The server was really welcoming. I got the pork brisket and my friend ordered the full rack ribs. There are about 3-4 home made sauces here. All of them are really good. The meat was really tender and had a nice smoky flavor to it. Went here on Wednesday as a recommendation from a friend. The special of the day was 1/2 price ribs when you order a full rack. I like the fact they offer various styles of bbq; mop, dry rub, or sauced. I wanted to try the pulled pork and brisket because those are my favorites. The best part of my visit was finding the spicy vinegar sauce that I used to enjoy while living in North Carolina. My recommendation is the Kansas City (sweet) for brisket, and Carolina Vinegar for the pulled pork. I hope the opportunity arises in the future for a return. This time I ordered the Triple Mofo with ham, pork, and brisket and it was one of the best things I've ever tried! If you love meat and you love flavor, don't shy away! It tough ends of brisket chopped up and resmoked with more seasoning and more bbq sauce - could be alright for some but I'm more of a Texas style tender brisket gal myself! As far as the sides go, the baked beans were a standout -- a perfect bland of sweet, spicy, and salty. The mac & cheese wasn't anything special, and neither were the sweet potatoes. I was in Frederick for nine days and ate here twice during my stay. This is some good bbq. I even bought two Black Hog BBQ shirts at $15.00 each. Good bbq The first time we went in, we were directed to this small table in a corner for two, The way it is seated, it really should be for one person. We declined and were moved to a front window seat, which of course is much better for a tourist. Our witness was a pure treat. She explained the menu and the selections with easy understanding and even offered us a sample of something we were waving between ordering. The portion sizes were plentiful also. I had the collard greens both times I was here. I wish Id known how good their wings were the first time I went in and I would have ordered them then also. The baked beans were nothing special, but they have a bbq vinaigrette dressing when your order a salad and I took one of those to go so I could put it on a salad at home in the next few days of my trip. My second visit was a take out. I placed my order and walked down the street a block or two to Carroll park and by the time I walked back everything was packaged correctly and ready to go. Oh, dont let me forget to mention the cornbread. Im from the south, and therefore an expert on corn break. I also order a togo order of the corn bread. $1 for a tiny sliver of happiness. Stopped by for BBQ and beer and it was a beautiful afternoon so we sat outside at one of the four sidewalk tables. We were there for the food, which was excellent, but the show on the street was unexpected and very engaging. More on that later. As mentioned, we sat at one of the outdoor tables. We were out of the sun, had enough room between the tables, and were comfortable. At one point dogs that people had brought with them at two separate tables began barking at each other, but that's on the owners not the restaurant. Same with the dog at a neighboring table whose tail was hitting me and the gal standing at our table trying to unwind the leashes from two dogs. Some people enjoy having dogs at their tables when they eat, but I don't. When I told the other table about the tail hitting me they dealt with it right away. It wasn't a big deal, but if you're not into dogs then it could be. Inside looked nice. There were tables at the front and a small bar back left. Kitchen serving counter is back right where trays of food were delivered to servers. The tables had a role of paper towels and sauces in squirt bottles. (Is it ok for the sauces to sit on the tables all day like mustard and ketchup? Are there preservatives in them?) I ordered the Texas brisket sandwich with fries and my buddy ordered a duo meat (brisket and pork) with two sides (Mac 'n cheese and sweet potatoes). We both thought the brisket was excellent! Tender, juicy, and flavorful. The shoestring fries were good for dipping in the barbecue sauce that came with my sandwich. My buddy said the pork was very good, but he said the the mac 'n cheese was just "ok" and the sweet potatoes were so-so. We both ordered a beer, which I thought were overpriced. Our server was friendly and attentive and there is a parking lot behind the restaurant, which was really convenient. So about the show on the street. The restaurant is not in the best neighborhood. There's a convenience store across the street and up one storefront, which had a bunch of people milling around out front. There was some rough language and some tense talk among the gathered crowd. Three police officers showed up and stood around for a half hour until everyone wandered off. We were told that's a common occurrence . Occasionally there are fights, but mostly a lot of rough language and some shouting and heated discussions. I don't enjoy that kind of show. I wish we had sat inside so we weren't a part of it. With covid I have been making an effort to sit outside as often as possible, but at Black Hog, I recommend you sit indoors. read more

Very good barbecue here at Black Hog. Not a huge menu but they have everything that barbecue places should have. Beer in bottles and cans. And meat. Lots and lots of meat. I opted for the ribs (wet) and one meat, selecting the Carolina chopped pork. The ribs were very tasty and they were definitely wet. A lot of sauce on these, maybe too much? But I scooped off some and that went with the pork, which was maybe a little dry but the sauce perked it up. Good portions of both. For my side, I had the mac & cheese. This was a good portion and it was excellent. I think I got a corner piece from the tray, which I liked. Lots of baked ends and crusty top bits here. Yum! Moist and hot and very cheesy. One advantage of being retired is spontaneity, so we made a lunch visit to Frederick to meet up with a friend. We suggested BBQ, and she instantly picked Black Hog. Took advantage of the beautiful day to sit outside. Service was quick and attentive, asking us and other guests if we preferred they wear masks when tableside. We're fully vaxed as was our server, and said no mask was fine. The pulled pork, greens, and coleslaw were first rate, as was the authentic NC vinegar-based sauce. We were so impressed we ordered a pound each of Texas brisket and chopped pork to go. We knew the pork was great, but the brisket was perfect. Flavorful seasoning throughout the bark and pull-apart tender, a sign of hours in the smoker. The Southern Greens were also excellent, well seasoned and garnished with salt pork. We now have another reason to visit Frederick more often! read more

If you find yourself visiting Historic Frederick, MD, be sure to stop by Black Hog BBQ in the downtown area. Frederick, MD is not one of the traditional BBQ hot spots such as Tennessee, North Carolina, or Texas, but surprisingly the 'cue at Black Hog is spot on. I sampled the ribs, regular brisket, and the Arkansas Style brisket. The ribs were good with a nice spice rub, but probably needed a bit more time in the smoker; but they were moist and came off the bone easily. The regular brisket was okay, but IMHO, a bit on the dry side. Nothing a bit of the house BBQ sauce couldn't fix. As a side note, I'm not a big fan of the NC style sauce, because of the heavy vinegar base, but the house BBQ sauce was excellent - a good balance between sweet/salty and good thickness for dipping. The Arkansas style brisket was fantastic. The burnt ends of the brisket were crisped up and then slathered with the house BBQ sauce. All the meaty goodness of brisket with a bit of char and then combined with the sauce made for heavenly bite. The sides did not offend, but complemented the meat, as they should. I suggest trying the beans and rice and the collard greens. Seating is very limited in the dining room, but it's worth waiting for for a table, since you will want to eat the food while it's hot, and not reheat it upon returning home.
