I did indeed opt for that Cadillac of bagels, and while there was not $11 worth of salmon and parsley/caper salad on it, it was certainly very tasty. So, unless you were born with a working knowledge of supply chain management out of the womb or paid large sums of money to a small business consultant that specializes in food/bakery businesses then chances are opening weekend is going to have some kinks. When my dad and I donated to this kick starter it was to promote delicious food with an adorable name that needs to be around because there is so much garbage being sold as food that a woman who has a metal rod for one of her bones and then still stays the course of baking amazing bagels is pretty damn impressive. I really don't care that I waited in line or they took time to spread some cream cheese because in about a month it'll all be second nature and they'll get the supply and demand stuff down. All I care about is that the bagel is as flipping good as it was when I first had it, and you know what? It is. When I started dating my super Polish now-husband his grandma swore by the Jewish Polish bakeries in NYC for the best bagels. I tried them and the angels sang and I knew what good bagels were supposed to taste like. When I lived in Europe and made my way to Kraków I was determined to visit a bagel shop in the Old Jewish Quarter because this area is supposedly home to the best bagels in the world. When I tried them the angels sang and the clouds parted and I knew all other bagels afterward would be measured against these puffy clouds of deliciousness. Is it worth the hype? I'm not really sure :( Ordered a chicken salad sandwich on an onion bagel but somehow got a poppyseed one. The line was so ridiculous I didn't bother asking them to remake mine, but it was fine. I like poppyseed. The sandwich was good, but not amazing. I have been waiting for Bagelsaurus to open for weeks and weeks and it did not disappoint! The bagels are hard on the outside, chewy and sourdough-y on the inside. I had the sea salt bagel with a perfect amount of honey rosemary cream cheese (delicious!) and my husband had an egg sandwich on a whole wheat bagel (filling and so yummy). We had a cold brew coffee that rivals Stumptown, Counter Culture, etc. I highly recommend a visit! Be prepared for a line, but know that the majority of customers take their orders to go, meaning that it is surprisingly easy to snag one of the five or six small tables. P.s. Regarding the two-star review, I think waiting in line is more than worth it. This store opened less than a week ago. I'm not even a bagel person - the last time I remember eating a bagel was over 3 years ago, and yet after coming here my first time, I came back immediately the next day. I've tried both the Eggspanola and the T-Rex, and I have to say that Eggspanola wins me over any day. Perhaps I'm not used to sweet bagel sandwiches, but the T-Rex was a bit too unusual for me and because the bagel itself was so chewy, the almond butter squished out whenever I tried to bite into the sandwich. The Eggspanola, on the other hand, is the perfect savory bagel sandwich, and the avocado and sauces really bring it to the next level. I've also tried their Banana Coffee Cake, and while the cake was moist and sweet, the sugar topping was unexpectedly salty (is it supposed to be a slightly savory pastry?). I probably wouldn't order it again, especially since the bagels are the true standout at this place. Some tips: I came here on Thursday and Friday around 10am, and there were very few people in line. Turnover on the tables is pretty good too, so you can usually snatch a seat without waiting too long. If you're unsure what to order, I would definitely recommend the Eggspanola on a Sea Salt Bagel. And yes, the bagels are chewy, but in a good way! Also, if you come here with a friend, order two different sandwiches and trade (they cut the sandwiches in half)! The best bagels in Boston by far. Do not let the long line deter you from eating bagels sent from the gods. The bagel sandwiches are a little pricier than some other places, but for good reason. I got the Eggspañola sandwich on a cheddar garlic bagel (weekends only for the bagel). Overall, it was pretty tasty and I loved the sauces that combined with the sort of runny egg inside. Their bagels are usually toasted without asking, so it was warm during my first half and then got cold during the second half of eating the bagel. The bagels are pretty good! Not to the level of New York, but very tasty, and probably the best you can get in the Boston area. Here's the thing: this place has to be the most inefficient, needlessly, infuriatingly slow store on the planet. On a Saturday morning, there were no fewer than 13 employees on site. That's about one employee for every person in line. And yet, it still takes 30 minutes or more to get through the line (I was so bored I had to count everyone). The bagel store I worked in as a kid had one baker and 3-4 people on staff, and it could speed through Sunday lines in a quarter of the time these guys take. It's because there's one guy at the register taking orders, bottlenecking the whole system, one guy sitting around waiting to hand out orders when they're done, and a whole group of people sitting around waiting to make the bagels and sandwiches. Would it be so difficult for other people to jump in to take more orders to keep things moving? But the bagels (which are really VERY good) are soooo chewy that eating them as served (as a sandwhich) isnt really possible - one attempted bite and all the cream cheese and/or sandwhich contents squeeze out the other end and onto your lap. I suppose asking to toast it (which they discourage since the bagels are so fresh) might help... Hot smoked salmon tasted very fishy to me as well.
