Very good! This was my first visit and I had a classic jumbo and coffee. For a while, flour has had my favorite egg sandwich, but I think this might be my new favorite. I will definitely be back! Scientists at MIT have brought back from extinction the Bagelsaurus, which, along with all its other dinosaur pals and gal pals, perished at the Cretaceous-Paleogene extinction event - and let me tell you, the Bagelsaurus knows how to bake a mean bagel. You know you're doing something right when at open (7AM) you've already got a line out the door. A coworker of mine was raving about this place last week so I decided to make a trek up to grab a bagel sandwich before work. I woke up extra early, put on my running clothes, and ran 3 miles in the rain to get there at open only to find that there already was a line. The bagels are good. They're really really good. Beautiful crust, an incredibly complex flavor from the slow rise, and a great chew to the bagel (Did you know? The perfect bagels are a 0-calorie food because the amount of calories consumed is equal to the amount of calories burnt from all the chewing required) I got the Classic Jumbo sandwich on a garlic cheddar bagel (available only on Fri - Sun) and added ham. The bagel was perfectly toasted. The sandwich boasted a wonderful mustard-butter that added just enough zing to balance against the savory egg and ham (while complementing the sharp Cabot cheddar). The egg was cooked to over-medium, with the yolk just barely set. The garlic was in the foreground, which after the bagel was toasted, provided the most wonderful aroma. Be careful NYC, Boston's got a damn good bagel thanks to the formerly extinct Bagelsaurus and the miracle of science. It was so good, I actually bought an additional 4 more bagels (pretzel, cheddar garlic, everything pumpernickel, and sesame) to take home to Chicago. Outside of New York, I'll eat the crusty bread that locals call bagels, but I understand something that seems to be lost on so many others: that crusty donut-shaped bread is not a bagel. Do you ever eat somewhere and immediately start plotting how soon you can go back? That's how I feel about Bagelsaurus! I had the eggspañola ($6.85) on a black olive bagel with avocado added ($1.65). The sandwich consists of pimentón aioli, a runny egg, thick slices of local feta, and gremolata (chopped parsley, garlic, and lemon zest). I can't even describe how awesome this was! The brightness of the gremolata was the perfect contrast to the heavy, salty egg and feta. I've been craving BECs since cutting out meat but this was revolutionary! Also, the cold brew ($3) is AMAZING. We've all had plenty of mediocre cold brew, but this is the real thing. It doesn't even need milk; the taste is so smooth and almost like an iced mocha. I would seriously come back just for the cold brew. I wish they had larger sizes! Tables are kind of scarce so I wouldn't necessarily plan on sitting and eating, especially if you're in a larger group. That being said, it wasn't too crowded at an off time (afternoon on a weekday). I noticed lots of people ordering one bagel to eat now and one bagel to eat later. I will definitely be tempted to do that next time! We went at 11am on a Friday and there was only a 5-10 min wait, which I thought was really reasonable! As I make my way to Bagelsaurus, something is immediately presented to me: a line. Millennial. Many coupled up, with children. Thank god they are quiet. I take my place and stand, moving when a reasonable amount of space clears before me and never when the bitch behind me breathes down my neck. 8:20am. I try to order, but apparently it's confusing to the cashier to say "6 bagels" rather than "half dozen." Do not toast them. For the love of god, do not toast them. Throw in a tub of cheese. $18. 1 poppy, 2 plain. 2 cinnamon raisin, 1 everything. One would hope they're fresh, but they came out colder than room temperature. In fact, they were lukewarm. It's barely 8:30am, and it's Saturday so you should have been baking to please the masses. These are all beyond chewy. Some weird combination of wet and stale. Each bite required the effort one makes when eat a rare steak. That's not my kind of bagel. They are seasoned well enough to continue to gnaw, but the idea of ripping a tooth out from under my now sore gums lingers. In brief, don't go out of your way to find a parking spot and stand in a 20-minute line before opening. Don't go out of your way to even try chewing these bagels, toasted or otherwise. With a 4 star rating and over 500 reviews, I knew it had to be good. Per recommendations from others, we got there about ten mins after 8 on a Saturday. The line was already slightly out the door. I've frequented Bagelsaurus several times now (because I'm obsessed) and just logged in to write a review and couldn't believe the current 3.5 star rating and the number of low rating reviews. After reading a few, I think there are a few things that need to be remembered when patronizing this lovely little establishment: 1) Price - you have to remember how this business got started (as a pop-up hosted at a cafe in Brookline) and now this young entrepreneur has a storefront, equipment, appropriate certification, staff, and myriad other things that come with owning your own food business. $4 might be more than you're used to paying for a bagel and schmear, but for the cost of operating the business and the product offered, I think this is a reasonable price point. 2) Service - again, this business is getting up and running and working out the kinks. Also, it isn't Breugger's with an assembly-line style format. It's a boutique shop cranking out delicious bagels by hand, so yes it will take longer than it would to order a cheeseburger at McD's. 3) Product - I think these bagels are fantastic! The chew is spot on, great variety in flavors, and cooked to perfection. If you don't like chewing, don't go there. Ordered their Classic Jumbo sandwich on a a sea salt bagel (similar to a Bacon Egg & Cheese), and their Hot Smoked sandwich on a Pretzel bagel. Holy hot smoked! Absolutely amazing bagels! They are fresh, with a nice crisp exterior and chewy inside. I always go for the olive bagel, which is perfectly salty and has large pieces of olives baked into the dough. I also enjoyed the classic jumbo sandwich. Whoever came up with the combination of fried egg, cheese, and mustard butter is genius. The egg yolk is also perfectly runny. The bagel sandwiches come wrapped and cut in half, and as such are quite instagrammable if you are into that. The only downside is the extremely long line, especially on weekends! The line moves fast, but every time I've gone I've had to wait outside for around 15 minutes. It's worth it though, even in the Boston winter, and I guess others agree! We did, however, vary our choice of bagel--both of them got the pretzel, but I went with a recommendation from the staff to get the black olive. The pretzel was a little salty but definitely still chewy and delicious with great texture, and I really loved my black olive bagel, which I felt complimented the interior of the sandwich very well. DEFINITELY going to try to make it back to Bagelsaurus before I graduate. I don't know what it's like on weekends, but it was pretty packed on Friday at 10:15 AM. Waited in line for 30 minutes to get an onion bagel with rosemary cream cheese and a hot smoked on plain, and it was worth every minute of standing outside. My parents used to finally chop them up and mix them in with my Gerbers baby food. I therefore am well-positioned to judge the quality of any bagel-be not deterred by the fact that this is my first yelp review. Be assured, dear reader, that my airway is sufficiently well protected to chew and swallow bagels independently at this stage. The line was justifiably long and I waited in it and am glad for my patience. I waited and I ordered the hot smoked. Upon meeting the superficial bagel tissues, my teeth were greeted with momentary resistance that gave way to a delightful and delicate crunch as the bready viscera, more comfortable against the human body than a Temperpedic mattress, held the skin just firmly enough so as to render it vulnerable to the scissoring action of my jaw. The smoked salmon tasted of freshwater and fly rods and with no hint of mercury. The dill, red onion, and pickled cabbage were so perfectly complimentary as to bring the salmon forth from smoky death, alive as if swimming upriver on the tongue, spurred along its treacherous journey by the softest cream cheese cradling the fish and running countercurrent to it. A more selfish reviewer might advise against visiting this Jurassic wonderland that he might reach the register sooner. It pains me to give this review, because I LOVE bagels and had really really really high hopes for Bagelsaurus. If they could answer the bagel hole in my heart I would probably give them so much of my money, no questions asked. The line: Yea, there's a line, especially if you come on weekends. I don't think it's too bad though. If the line goes out the door, past the business next door, I think the wait's around 20-30 minutes. It's not terrible and they really move people through fast. The bagels: There's a big distinction between "chewy" and "hard" and I think Bagelsaurus falls seriously into the hard camp. The crust is seriously too hard. I've had a lot of bagels in my day (I'm basically bagel shaped with all the carbs I consume) and these are rock hard. The bready part is a little too fluffy and airy, and the crusty party is a little too hard, and the effect is that it feels like you are just are chewing through leather. Bagels come lightly toasted, but taste basically untoasted - we're talking very lightly toasted. I tend to like heavier toast to soften the bagel up and get a crunchier texture, but to each their own. The schmear: Bagelsaurus falls into the HEAVY schmear camp. Which I am usually a huge fan of. But the aforementioned issue of the rock hard bagel crust doesn't quite work with massive schmear. Every time you try to gnaw off a piece, you just end up pushing the schmear back so that it gushes out the other end and makes a huge mess. A quick survey around saw that I wasn't the only one - people were covered in cream cheese and napkins abounded. The sandwiches/toppings: Salmon is not worth it. I LOVE lox on my bagel, so I was sad to see that they only had hot smoked salmon. I think there's some confusion on the hot smoked salmon - the hot doesn't describe the sandwich (it's a cold sandwich) but the way the salmon was smoked (hot smoked). It's not the nova lox you usually think of with salmon - it is a fully cooked, flaky salmon. I don't think it adds much to the sandwich as a result - especially with cream cheese, the effect just tastes like slightly more "salmony" salmon salad (a la tuna salad) which is just meh and not really worth the extra 5$ Cream cheese flavors: Scallion didn't really have a strong flavor. Veggie was good, but nothing out of the park different. The rosemary honey seemed to be a favorite, reading the yelp reviews, but I honestly wasn't crazy about it. It wasn't as creamy as the other cream cheeses, and was overwhelmingly sweet with a slight rosemary aftertaste. Pricing: Thought pricing was reasonable, actually. A little on the pricey side for the individual bagels (4$ with the cream cheese), but most of the sandwiches were 6-8$ which I thought was a good deal. Now that I have.. their bagels are nothing short of delicious! The space is small, but you can take your bagel to go and find a nice park or open space to enjoy the food with some good company! I got the Hot Smoked bagel on cheddar garlic(weekend special) which came with fresh dill, red onion, slightly spicy salmon and lots of cream cheese! The salmon is not smoked but cooked and it adds a different texture to the chewy bagel and crunchy onion. Be careful .. the dill will get stuck in your teeth and you may end up with cream cheese on your face! Sadly, the bagel does not keep well, if you decide to save half for breakfast the next day :( The staff is awesome! Ask for suggestions if you are not sure.. but all of the options look great! This is, by far, one of my favorite places in Cambridge to eat. My order is plain and simple but the bagels here are SO GOOD they don't need much. All of the bagels have a unique flavor that is crispy and chewy that I have not found anywhere else. Almost everything is made in house (think; limeade, cookies, coffee cake, cream cheeses, etc...) The staff here is very knowledgable and delightful. Everyone is well trained and the owner is almost always in: she cares a lot about the quality of her bagels. The space is clean, albeit small. Don't expect to spend hours sitting here as people will be waiting for your seats. At peak hours (for bagels: like weekend mornings) expect long lines. They move though! Well worth the wait. I highly recommend the cucumber limeade in spring and summer to complement your bagel meal. read more
