And even though it was fully cooked, guidelines say it should be a minimum of 140 degrees when served, so I put it in a 250 degree oven to rewarm and didn't serve till it got up to almost 160 degrees. Only took 30 or 45 minutes. Everyone enjoyed watching me carve it up (which i only knew how to do from watching you tube videos) the meat was delicious, tender and moist, with crisp skin, in spite of the reheating process.
