We knew better, but we were desperate... it was a Wednesday and the Seaview Biscuit Co was closed. So we arrived for breakfast at 42nd Street. We waited 10 minutes for a table... then 12 more minutes for someone to take our order. We honestly had been looking at a menu while we waited to be seated; we knew what we wanted. Every item we ordered could be best described as 'bland'. Thankfully, they had salt on the table. $5 for a soft drink. No joke. They had one server running the room, which has about 10-12 tables. Same person taking orders, running food and processing payments. Two of our party members were in a hurry to get on the road to Sea-Tac, or else we would have left before ordering. I wish we had! One owner spent years as an executive chef at a casino, while the other built a career as a professional baker in Aberdeen. Boy, does that expertise show. I ordered the fried chicken and waffles. A little context: I mostly eat pescatarian these days, so when I do splurge on chicken, my expectations are sky high. I've built it up in my head as one of the foods I miss most (right alongside a good ribeye), and it's almost always disappointing. Not this time. This chicken is absolutely ridiculous. They debone a chicken thigh and fry it into the crispiest, juiciest piece of fried chicken I've had in a long time. It's made with a gluten-free batter, which means more people get to enjoy it. And before anyone assumes "gluten-free" means sacrificing flavor... think again. Plenty of great chefs will tell you the best fried coatings come from starches like potato or cornstarch anyway. What really made this meal special, though, was that my partner is vegan. If you've ever dined out with someone who's vegan while you aren't, you know how rare it is for both people to walk away feeling like they had an equally great meal. It almost never happens. Here, it did. She ordered the vegan Indian tacos with corn tortillas, and they looked incredible. If you're looking for food in five minutes, there are plenty of places where "cooking" means microwaving something that arrived frozen. This isn't one of those places. Everything tastes intentional, and that takes time. Our food still arrived in under 20 minutes, maybe even less. Slow down, talk to the people you're with, and enjoy the experience. Great food isn't supposed to feel rushed. We stumbled across this gem on our drive home from Ocean Shores, and I'm so glad we did.
