As for the back of the house, I was informed that the kitchen had been overwhelmed by two large parties. But good cooks navigate through the rush. Additionally, tables remained full of dirty dishes for far too long, impacting seating opportunities for new patrons. Although, I suppose that was to deter further impact on a kichen that was overwhelmed. Often, the problem begins and ends with lack of good or simply sufficient staff. But with 20% gratuity included, perhaps there isn't any need to elevate their game. I'll leave it there. Now onto my personal saga, upon our arrival, the large parties that apparently wore out the kitchen were well into their entrees or desserts. We arrived at 7:10, for 7:15 reservation (making a reservation is stongly suggested, BTW). We had heard about the food and were happy to try it. But after waiting ten minutes to be given water and an additional five minutes to have our order taken, I am giving the side-eye to everything moving.
