Had lunch there yesterday for about the 12th time. I've never ordered anything I haven't liked. I really enjoy the tofu Bahn-mi. If you've never tried their tofu, it's cooked using a lemongrass seasoning and it's absolutely delicious. Overall their prices are very reasonable, with an exception being $7.50 for 4 small tofu Vietnamese-style "Tacos" which I ordered. Although absolutely delicious, I felt $7.50 was a bit pricey given their size and ingredients. One last comment: The only thing keeping me from giving them 5 stars is the wait. Every time I've been in there we've had to wait upwards of 30 minutes for the entree to come out. Several times there have been more employees than customers and the wait was still about 20 minutes. PHO - KING FINALLY!!! Denton finally has legit Pho in town! They actually put the uncooked meat into the soup and let the broth cook it. Mr. Chopsticks does serve a version of Pho, but it just doesn't cut it for me. They grill chunks of steak before putting it into the broth. What's even better is that if you order the Pho to go, they'll separate everything out for you and let you cook the meat when you're ready. Six years of me complaining that I couldn't get good Pho in Denton, and they finally opened up. The broth is made a little bit sweet for me, but it wasn't anything that Sirracha and soy sauce can't fix. I also got one of their Teas. It was delicious. Now everything else, they honestly wouldn't get great marks. Portion sizes could be better... The staff still seems like rush hour is throwing their system off... and they've got to do something about that ceiling. But don't care one bit. The last time I went here I got the vermicelli noodles. They were good but not exactly what I wanted. (A place in Lewisville has my favorite for this dish) so tonight I got the bahn mi with lemongrass beef and it was one of the best sandwiches I have ever had. The meat was so good and tender and the veggies were fresh and crisp. The bread was warm and the shrimp chips were super fresh as well. It was also only about 5 $ which was great. I also tried the hue beer. I'm not a big fan of beer but this drink was pretty good. Kind of a fruity fragrant taste that was excellent with the sandwich. Pros; Wife loves the pho bo hue. She just came from Vietnam last year. If you think the pho at other restaurants are more flavorful, its bc you havent had real pho. The food is hit or miss. I've had a few really good experiences and a few experiences that left a lot to be desired. If you love pho and you don't want to leave Denton it's a good place to get it but know that you're going to be waiting a really long time for your food. Viet Bites to me is a place with fantastic crab rangoons and really good vegetarian pho that warms you up on cold days. This was what my sister really needed after having a terrible week, but Viet Bites you let me down. We got there and were seated like normal, already I was wondering if this was a mistake because of how ratty the menus were and how cold it was inside the building. We ordered fairly quickly but the wait time was still at least 30 minutes (Which to be honest is fairly common and I do think they had some drive through people) but at the same time it took that long for just our crab rangoons. On the bright side, they were fantastic as usual and our food came shortly after. The big let down was the vegetarian Pho (or the "Pho get the meat"). The vegetables and tofu tasted like they had been cooked in old oil and the broth was just not as flavorful as normal (and under salted) Even the noodles seemed off, like they were too clumped and stuck together so I had a hard time pulling them apart to eat them. Over all I was really disappointed with the night because I know they can do better. And I hope they do shape up because we had originally planned to go to the Ramen shop that just opened up but opted to go here instead because of the wait. I'm Vietnamese, and I never go to Pho places that aren't surrounded by other Vietnamese places. I came here when I was desperate for pho. Bad mistake. The pho broth is so bland and doesn't have any distinct pho flavor. I also asked for raw beef on the side, because I like cooking the beef in the broth myself, and they gave me cooked beef in a separate bowl full of broth. Water refills here don't exist. I was in the mood for pho and looking for a place within easy distance for take out. It was the worst pho I have ever had. There was about 1/2 ounce of meat in it total, that was a joke. The side of bean sprouts similarly was minuscule. The noodles tasted old. Most importantly, the broth had no depth at all. It tasted like oily hot water. To be clear, This is not the best pho I've ever had. In fact, it isn't a place I would frequent all that often. The broth was flavorless and it was as if they just dumped really hot water over a bowl of vermicelli and meat. I really wish I could say otherwise but this was only my first time coming here and I plan to come back. Here's why: What it lacked in flavor, was more than made up for by the environment, the amazing loving staff and the awesome owner. This place has the look of a small ramen house. As soon as I walked in, I was greeted by the owner and the servers. They were so happy to be there. They all loved their job. This translates into the experience a customer experiences in a huge way. It set the tone of my entire encounter here. Also there is something to be said about eating vietnamese food with the black keys, bob Dylan and arcade fire playing in the background. The owner stopped by a few times and made small talk (a talent I find less and less frequently these days). The servers who were handling my table were very friendly and extremely helpful. After I had ordered my pho, if I saw something on the menu that I've never tried before, they'd bring over a sample for me to try (the civiche here is absolutely amazing btw). Overall, I'd have to say that this was a very positive experience for me (pho aside). I think I may have gotten a bad batch. I know it takes a while to develop a complex and clean flavor of the broth so I will give them the benefit of the doubt. The service and general experience alone warrants further investigation. This was a good experience. It would have been better if I had someone to share it with in person, but lucky you, I get to share it with you now. I came in and was greeted right away, the door I came in faces the street side and the register is right there. They handed me a menu and told me I can sit anywhere and they would come take my order. This was my first time to this location and I liked that. I sat and got to take my time going through the menu, even though I had a taste for some chicken curry before I came. The waitress was really friendly and helpful. She said they had daily specials and asked if I wanted to hear them. This was different, usually they tell you without the choice. But yes I wanted to hear them. And surprisingly Curry Stew was one of my options. I knew I like this place. I ordered two of the traditional spring rolls and my stew was brought to me at a hot temperature so it did not cool off quickly, makes eating slower but I enjoy it longer. I love getting my hot food hot. They let me substitute the bread for some Pho noodles (no extra charge), and the spring rolls were made fresh upon ordering, not sitting around. YUM I ordered a Shiner Bock to drink and was informed they were out, but the waitress knew what alternative options to suggest and I tried the Ziegen Bock Amber Beer, it was good too. The waitress was great, making my experience a 4 1/2. The reason I did not give a 5 is because this was my first time, and I need to make sure I get the great food and service each time before I upgrade my stars. read more

This place was a huge let down.. Me and my family were super excited to finally have a pho place in Denton instead of having to drive all the way to Carrolton. We knew not to expect the exact same quality of food, but man.. My family ordered the chicken rice plate and the beef rice plate (a dollar extra), while I ordered the rare steak pho. The chicken and beef tasted good, but the plates were entirely too small! There was barely any meat on the plate at all, maybe just a few bites. It was even more ridiculous that the beef rice plate had less meat than the chicken plate, despite costing a dollar more.. The plate was the size of an appetizer plate, not a meal. The pho was decent sized, but still smaller than a regular pho restaurant. The pho was missing something, and half way through I realized what it was.. The pho tasted watered down. The tea also tasted watered down.. When it comes to the service, I kind of felt bad for the people working the front. There was one girl going around to all of the tables, and she was too busy for her own good. She was friendly, but was too busy. They forgot the sauces with our rice plates and I saw they forgot a bunch of stuff for the table next to us too. When it came to checking out, they didn't know what we ordered and then tried to charge us for the dessert our neighboring table had. They seemed very unorganized. Also commenting on what a previous reviewer stated, don't sit next to the brown curtains. It really does smell like waste products and was very off-putting.. I finally made it to Denton's first pho restaurant yesterday and was a little disappointed. Pho is my favorite soup and I've eaten it all over the world. My first experience with Pho was in Toronto's China Town and I was immediately hooked. I think if Viet Bites had been my first experience with Pho, I would not have been hooked. The broth in the Pho Go with rare beef ($7.95 Large) was not as flavorful as the broth I've had in the past and the rare steak was downright scarce and not rare. The noodles were stuck together in a clump on the bottom of my bowl, similar to how they are when I make ramen at home, except at home I fluff up the noodles. The Pho was served with the normal accompanied fresh vegetables including basil, cilantro, bean sprouts and jalapenos. All the vegetables were fresh and delicious. My wife had the Banh Mi with lemon grass chicken. The sandwich didn't have a very good bread to meat ratio and they could definitely be a little more generous with the meat. My friend met us for lunch and when our server asked how everything was; my friend mentioned the sandwich needed more meat and vegetables. The highlight of the meal was our appetizer, the VB Super Roll which is an egg roll wrapped in a spring roll, and it was delicious and very original. The service was friendly and attentive and the owners have done an amazing job remodeling and decorating a building I thought was beyond hope. They do have their beer license now so they have a small selection of non-craft beers. If Viet Bites is going to survive the competition in Denton, they are probably going to have to step it up a notch. My advice to the owners would be to try a Banh Mi sandwich at the Nammi Food Truck and order some Pho at one of the top rated Addison Pho restaurants and use their dishes as a model. Just tried their soft opening today. Overall I like the place. The restaurant is definitely first generation American and not hardcore Vietnamese, and it reflects in the menu, atmosphere, and food. This would be a great place for people who have never tried Vietnamese food to start. I ordered the combination pho bo. The broth didn't have any grease to it, tasted good, but the flavor in it was a little subtle for my liking. Unfortunately my bowl only came with 3, maybe 4 pieces of meat, and definitely was not the combo beef. I'm attributing this to the fact it's their soft open and they were pretty busy. My friend got the bun bowl, and it had a lot of beef (what I'm guessing the pho was supposed to have). He liked it. His gf got the lemon grass chicken banh mi,and she loved hers. The banh mi came with shrimp chips that taste better than store bought ones. We all split a sampler platter that had pork shrimp spring rolls, egg rolls, shrimp chimps, and crab rangoon with three sauces. It all tasted great. In the end, I recommend it. Vermicelli bowl is decent, consistently. My main gripe is with their pho. I love pho soup in general, and I was really excited when VB opened in Denton. I really wanted to like their pho, but I am disappointed everytime I order it at VB. it is consistently mediocre, and with a meager amount of meat. The only vietnamese restaurant in Denton. This is the most Americanized place that i've been to. The only thing that i would get from here is the Banh Mi. Their pho was pretty much beef broth-like pho. It lacked flavor and ALL of my friends agreed. Their coffee and deserts were good. This place had very friendly staff, and good service, but I can't say the same about the food. I came here with my friend, I ordered the beef pho, and she ordered the spicy pho. We are both Vietnamese, so we have had pho from many different places and grew up eating pho, so we know what pho should taste like. Our friend warned us and told us the place was horrible, so I didn't have high expectations coming here. I'm not picky when it comes to pho, so we decided to give it a try since we saw it had so many good reviews. I was extremely disappointed. Both of our broths were super bland, almost waterlike. I had to basically season the broth completely myself. To give you an idea, I had to put about 4-5 soup spoons of pure fish sauce into my soup. Unfortunately, if you don't know, pure fish sauce comes with its own special taste so it changed the taste of the pho, but it was still better than before. My friend had to do the same. The quality of the meat, noodles, and portions were average. I would have liked to come back and try the banh mi or vermicelli dishes, but the pho was so bad that I'm not coming back. I had the banh mi with grilled lemongrass pork and it was pretty delicious. Also tried their egg roll which could have been a little less greasy, and with some thicker sauce. As far as cleanliness I was a little disappointed but I realize they're still pulling it together. I definitely stand behind the other reviewer's who say to stay away from the tables near the brown curtains. The smell is undoubtedly waste, which was almost enough to turn me away from dining in. The pho here is... Different. It is geared more towards eating healthy rather than traditional so beware, the taste isn't the same.

Denton's only Pho restaurant is very mediocre. Unless you're desperate for some Pho or vietnamese food, you would need to drive to Carrollton, Arlington, or Garland. This place is good for folks not savvy in good Pho or generally predisposed to liking Pho. When I talk myself into going here for Pho to save time or too hungry to drive to a good Pho joint, I regret it. The broth is bland and must have been made with inferior beef, no or not enough traditional anise spice used, and does not come with enough meat on the serving. The only reason I giving it a 2 stars is because of some of the specials they have. I have tried it twice after ordering Pho in the same sitting and putting it aside for the specials instead. The clientele is primarily students and caucasians - probably new or fairly new to Pho. The servers are not vietnamese either, athough the owner is and does work there. I have grown up with Pho all my life (home cooked as well as restaurant prepared). And I am very disappointed with VB. Do yourself a favor and venture elsewhere if you want good Pho. My room mates and I decided to check this place out tonight, and I was very happy I did. All 4 of us ordered the Pho as recommended by the friendly waiter. When the food came out it was delivered in very decorative plates and silverware. The building was well renovated and had a vibrant environment. By the end of the night as our table was finishing up our dinner, the owner of the restaurant came to check on us! She was soooo nice and friendly! She made us feel like home after talking to us for a minute. I will diffidently be coming back to order the other items on the menu. For being a new kid on the block, VB exceeded our expectations of a genuine VN restaurant. It's a great family own business that shows through with the friendly atmosphere. Love the modern decor. I was so excited to try Viet Bites because I had heard so many great things about it. Decided to try Pho for the first time and couldn't stand the smell ... It literally made me sick to my stomach.
