The heat is subtle and comes in at the end of the bite. Nice umami from the cheese and the pasta is cooked perfectly al dente. Sauce to pasta ratio is exactly right with the sauce perfectly coating the pasta. Seems simple, but to get it this level of "right" takes attention to detail Red bliss potatoes: they even did justice to their sides! Crispy on the outside, fluffy on the inside, perfect amount of truffle so That it isn't overpowering. Get the gelato for dessert you absolutely won't regret it. They brought us some complimentary popcorn to snack on and then we started ordering drinks. I had the last glass of a Pet Nat (everyone was jealous I got the last glass after they tried it). Everyone else had a glass or two of wine plus a cocktail (their espresso martini isn't on the menu but people love it, including my friend). The service was friendly. The bar is beautiful (a very cool, modern space that feels comfortable and open for such a small space), with bar seating and a few tables in the back. Their wine list is incredible. The list of wine bars in Baltimore is very short, but there's no doubt about it - Sisu is right up at the top. I can't wait to return. I'm sure I'll try to fit in a visit anytime I'm anywhere near the area.
