I have been exploring the variations of the iconic dish ever since. My favourite restaurant in the world is Vietnamese-owned and operated, back in Canada. While visiting the Islands, I only recently had occasion to spontaneously stop and try "Pho Vientiane," a long-time frozen-in-place food truck--secreted along the Kamehameha Hwy, Hauula - on Oahu's North Shore. I was more than pleasantly surprised by the quality and selection of Vietnamese street food this wonderful eatery was offering. The proprietors of this humble food truck were quintessentially customer service-focused. The menu options are impressively diverse, especially considering the size of the space in which they are stored and prepared. The service was impressively expedient, and the quality and generous size of the offerings were extraordinary. I was sufficiently impressed by Pho Vientiane to offer up five stars for the authentic tastes they offer.
